Introducing Sofia who is a big part of our ODB team. She came to us from Argentina which we now claim her as one of our own. Giving her an education in limerick slang, while she teaches us a thing or two about pastry. 🥐🥐
Her patience is a virtue, a work ethic greater than 10 men and a smile that lights up the bakery even at 4am. 🤗🤗

All in a bank holiday weekend 🏃🐶🥳
Ran the full 22k with some mates,
Baked a few 100 mini cakes,
Watered some thirsty dogs,
Eat a foot long Polish hotdog,
Nothing going to stop us,
Only the hand break.
Riverfest kicks off today and we are excited to be back taking part in the best event in the country. 🙌🙌
When we attended back in 2019, it was not our people's loaf, spicy affair, cinny buns or pastry’s that were on display, but our signature hand rolled wood fired bagels. It was an experience that I will never forget 🤯
Mixing, cutting, rolling, & baking out of the wood fired oven, it was a great idea.🤔😅 Managing to pull off 4 days, endless burn marks, mixers breaking down, not having electricity, running out of ingredients, absolute manic chaos 😩
But it’s all part of the journey and another chapter to the ODB bible.
Street Trading - It’s a lifestyle
Being the oldest type of commercial distribution in the world, with origins dating back to Egypt 5000 years ago, & with the first farmers markets being recorded in the 1600’s.
Can we say much has changed ? 🤔
What we can say for sure is that the social atmosphere generated by farmers markets is like no other shopping experience, with local producers coming together to deliver quality foods, goods & wares.
The diversity and integration in our community makes for great conversations, and interactions.
We are honoured to play a small role in this deeply rooted industry, always respecting tradition but with our eyes firmly on the horizon 🤫

Using Irish Organic Milled Flour mixed with a strong German Flour, Purified Kangen Water & Atlantic sea salt, Fermented & proofed for 24 Hours 🌱

We have struggled to get our bread to rise over the past week. Using a different blend of new flour, freshly milled from . This impacted our process while trying to better understand the fermentation process of our starter, (over riping) to our dough. Along with a fridge that is older then myself and a mind of its own adding to cause. 😅
It is the constant challenge that we love about our art of bread making. After all we are in pursuit of the perfect loaf while striving for excellence. 👊
Any way I hear there is some bunny 🐰 handing out free chocolate eggs.
What’s the best season of the year? It’s a toss up between Easter & Christmas??
