Sourcing the freshest fish is the first step of our work. We also make sure they remain in their prime until Show time… Like those amazing Gill netted WILD TURBOT, straight in from the boats, in huge 50 kg fish boxes… A quick shower🚿 to begin with, followed by an inspection 🔍 of the belly cavity to make sure no bacteria loaded, bits of guts remain within. Grading by size & placed in smaller colour coded boxes to minimise disturbances when rooting for a determined size. Before being carefully packed with plenty ice top & bottom. 👉 NEVER 👈 against the darker side, every fish professionals know that direct contact with ice, will bleach away the darker colour. 🤓 Enjoy the freshest Wild Irish Turbot this weekend instore @ HQ & Markets. Feisty little pink things… Live creel caught Langoustines Prawns are just in from Mayo… Exceptional export product, Amazing & so sweet. Last thing we want is looking at casualties and picking up cut off limbs in the morning… so we put some rubbers on… Sustainability is not just the talk, it also comes at a premium price.
