Sweet Chilli, Chorizo & Tomato Pasta Recipe
Ingredients:
Olive Oil
Onions
Garlic
Chorizo
The Hungry Goat Sweet Chilli Sauce
Can of Chopped Tomatoes
Tomato Puree
Cherry Tomatoes
Fresh Herbs such as Oregano or else dried Italian Mixed Herbs
Pasta
Fresh Basil (to serve)

Add the olive oil to the pan and sweat the onions and garlic gently over a medium heat. Add the chopped chorizo and cook for 2-3 minutes until all the lovely chorizo juices have been released. Add the can of chopped tomatoes, a dollop of the tomato puree, the herbs and a handful of chopped cherry tomatoes. Simmer gently for 25-30 minutes on a low heat – the longer you can leave the sauce the more flavoursome it will be.

Meanwhile boil the pasta. Just before serving stir 2-3 tablespoons of The Hungry Goat Sweet Chilli Sauce through the tomato sauce. Add more according to your taste. Season with salt & pepper. Plate the pasta, add the sauce and top with the fresh basil! Large glass of red wine optional!!

The Hungry Goat Turkey & Chorizo Burgers
(Makes 4 generous portions!)

Ingredients:

180g Chorizo, chopped very finely
450g Turkey Mince
1.5 tbsp of The Hungry Goat Red Onion Marmalade
Fresh herbs - Oregano or Marjoram work really well. If you don’t have fresh herbs you can use mixed Italian dried herbs

Mix all ingredients together in a large mixing bowl.
Shape into your desired size. Make an indent in the middle of the burgers with your thumb, this will help the burgers keep their shape while cooking. If you have time, chill the burgers for at least an hour in the fridge before cooking.

If possible use a griddle pan for frying. Get the pan very hot. You don’t need to add much olive oil to the pan as the chorizo contains lovely, flavoursome oils which are released as it cooks. A teaspoon of oil is more than enough. Remember to let the burgers settle for a while on the pan - the meat sticks initially but it will unstick as it cooks – don’t panic! It will be perfect!

Meanwhile mix an avocado with some natural yoghurt and a dash of lemon juice. Once the burgers are cooked thoroughly, serve in a floury blaa topped with the avocado mix, a dollop of red onion marmalade and sweet potato fries on the side!

1. Steak topped with Red Onion Marmalade. Or better still Steak Sandwich, Red Onion Marmalade and homemade wedges....Mmmnnn...
2. Bangers & Mash with Red Onion Gravy..
3. Homemade burgers with a spoon or two of Red Onion Marmalade added to the mix. Topped with more Red Onion Marmalade and served on a Blaa by Walsh’s Bakehouse obviously...
4. As a perfect accompaniment to meats and cheeses...lifts any cheeseboard and brightens up any sandwich...
5. With a spoon. Straight from the jar....It's that good....
