Siobhan Hubbard and Ross Newcombe rear their heritage pigs near Melleray, Co.Waterford, ensuring the highest standards of animal welfare and sustainability. The farm is transitioning to organic farming, with all animals raised free to roam, hormone and antibiotic-free, and with the utmost care.

The O' Farrell family have been making cheese in Co Cork since the late 1980โs. Their cheeses includes a plain semi- firm pressed Friesian cowโs milk cheeses along with cheeses with added natural flavours. Their cheeses have a lovely smooth paste and a sweet milkyness, matured without a natural rind and wax wrapped. Pat developed his cheese recipes while studying cheesemaking at UCC, with careful recipe refinement and sampling to locals he created his current range.
Light and buttery with hints of cream, earth, and a slight ale finish. Carrig Bru has a semi-firm texture and natural rind developed in Sheridans Cheesemongers maturing room.
Carrigaline Garlic and Herb starts off subtle and leaves you with a delicious and definitive taste.

Mother and daughter duo, Jeffa Gill and Sarah Hennessy, craft award-winning Durrus Cheese on their family farm in West Cork ,using milk from their small herd and traditional methods. Durrus is a semi-soft, washed-rind Irish Farmhouse cheese with a delicately pungent flavour. The aroma is one of hay, undergrowth and wet soil, in short it smells of the hillside in Coomkeen. The flavour is long, round and earthy.
Durrus Og is a semi-soft, washed-rind Irish Farmhouse cheese with a mild and creamy flavour. The orangey pink washed rind gives the cheese mild earthy flavour which pairs

When Jane Murphyโs son Luke had eczema, an insurance salesman suggested goat's milk as the cure.
She didnโt buy the insurance, but he brought her a goat, and Lukeโs eczema cleared up!
That moment sparked the creation of Ardsallagh Goats Cheese, now a favourite in fine dining restaurants across Ireland.
Coming full circle, today, Ardsallagh is a true family business, with Luke and his sisters all involved.

St. Tola Goat Cheese was made originally by Meg and Derrick Gordon in Inagh,
just south of the Burren in County Clare.
Their neighbour and long-time friend Siobhรกn Nรญ Ghรกirbhith, took over the business in 1999.
Siobhรกn has grown the business and the range of cheeses in an incredible way
from a cottage industry to being internationally renowned.
Their cheeses are totally traceable from farm to fork. Half of the goatโs milk is from their family farm and the other half from trusted Irish goat milk producers and the only additive or preservative used is sea salt.

Barry and Lorraine Cahalan started milking Friesland ewes in 2013.
They originally outsourced the manufacturing of the cheese to award winning cheesemaker Marion Roeleveld from Killeen Farmhouse cheese.
The cheese was then returned to the Cahalan's farm where it was aged and distributed. The cheese production has grown every year and Barry and Lorraine have now taken over the process themselves.
Cรกis Na Tรญre flavour has a little earthiness and sweet notes of caramel and orchard fruits.
Itโs hard texture makes it great for a cheese board but also for shaving onto pastas, or salads. Sheridans Cheesemongers

Wicklow Farmhouse Cheese is a small family business in the South East of Co. Wicklow. The Hempenstall family have been milking cows on a small dairy farm at Curranstown, Arklow, Co. Wicklow for the past 50 years.
Wicklow Bรกn takes its name from the Irish word bรกn, meaning white. All the milk used comes from the Hempenstallโs own herd of pedigree Friesians.
A rich double cream Irish artisan brie, delectably smooth with a lingering richness.
It has won many awards on national and international levels including Best Soft White Cheese 2015 in the British Cheese Awards, Gold at the Global Cheese Awards and Silver at World Cheese Awards.

Absolutely one of our ๐๐๐๐ ๐๐ ๐๐๐๐๐ Cratloe Hills Sheep's Cheese is an Irish cheese produced by Sean and Deirdre Fitzgerald at their farm in Brickhill, Co. Clare since 1988. Many of our customers will recognise Sean as a regular [travelling all the way from Clare!] instore and a pure gentle man too, lovely to converse with and so knowledgeable. Cratloe Hills was the first sheep's cheese to be produced in Ireland.
Their hard cheese us made using vegetarian rennet and pasteurised sheep's milk sourced from their own flock of Friesland ewes, which graze, on pastureland on the Cratloe Hills. It is has a semi-firm texture with small holes throughout. The mature cheeses display a more harder, granular texture. Flavour varies from mild, sweet and appley flavours when young that develop more robust and complex notes as it ages. This gouda style cheese is a cheese lovers dream - beautiful alone but do try with a roll of Prosciutto di Parma topped with fresh or compote figs, divine! And of course come and meet Sean!

Giana Ferguson, who started making cheese in Spain as a child, and her husband, Tom, have crafted Gubbeen cheese on their Irish farm since 1980. Gubbeen, a semi-soft washed rind cheese from their mixed herd of cows, is now one of Ireland's best-known farmhouse cheeses, winning numerous awards, including gold at the 2002 British Cheese Awards. The cheese's distinct flavour comes from the interplay between its mushroom-scented rind and buttery, semi-soft interior. Giana describes it as having notes of mushrooms, forests, nuts, and a buttery, milky taste. Their son, Fingal Ferguson, now oversees cheesemaking while also producing cured meats on the farm.

David, Ivan, and Tom Kiersey, from Ballyhussa Farm near Kilmacthomas in County Waterford, are the founders of Freezin' Friesian. Their cows graze on grass pastures year-round, producing rich, creamy milk ideal for making ice cream. Embracing the farm-to-table concept, the brothers embarked on creating a luxurious ice cream range using the finest ingredients.
Their business, founded in 2018 and inspired by their mother Grace's recipe, prioritises quality over quantity and the well-being of their Friesian cows.
