The day is celebrated in honor of the election of Gustav Vasa as King of Sweden in 1523 and of the adoption of the constitutions of 1809 and 1974. 
 
In FIKA we celebrate with a moist and rich almond cake topped with creme pattisiere and fresh berries.

The Swedish cheesecake, “Ostkaka”, has roots that can be traced back to 1538. It’s usually associated with the county of Småland in south Sweden. The hint of almond and bitter almond is a characteristic flavor of the cake.  
At FIKA we bake it on a bottom of digestive biscuit, and decorate it with a rhubarb compote.  
It can also come with Raspberry jam or plain.

Today (13.2) we celebrate Fat Tuesday or in its Swedish name - Fettisdagen
In Sweden this day is associated with the symbolic pastry - SEMLA.

For those who don't know, This is the SEMLA!
A bun made of wheat flour, milk, butter, sugar, yeast and cardamom.
The bun is divided into two halves - in the lower half is marzipan and around it there's whipped cream.
We place the top of the bun on the cream with a sprinkling of powdered sugar on top.

Some says that the Swedish king, Adolf Frederik, died from an overdose of SEMLAS!

עוגיות Jitterbug הן קלאסיקה שוודית ישנה. אני זוכר שהיה לי אותם פעם בתור ילד. Jitterbug היא עוגיה שבירה עשויה מבצק ומרנג.

NEW PRODUCT - "JITTERBUG"
Most people would probably think of dancing when they hear the word “Jitterbug”. I, on the other hand, think of cookies. Says Michael - the owner of "Fika".
Jitterbug cookies are an old Swedish classic. I remember having them once as a kid. Jitterbug is a brittle cake made from shortcrust pastry and meringue. The cake is said to have gotten its name from the dance that was so popular in the 30s and 40s. The irregular turns are found in the appearance of the cake. Was dipped in the coffee cup on the dance floors around Sweden in the 1940s

Jitterbugs are Swedish cookies that marry two of my favorite things – shortbread and meringue. And we also add raspberries.
These are a wonderful tea cookie. Buttery and crisp, they are perfect with a cup of something. The meringue swirl adds a little chewiness to the texture
