Tawa pulao for dinner tonight.. well, in reality should be called "skillet pulao"! 😃

I do not have a pan that's large enough to really make the tawa pulao, and hence was a little apprehensive about using anything else. But my skillet did not let me down at all! Infact it was even easier with the way I could control the food within my skillet while cooking. And needless to say, cooking was even easier with my skillet for it being quick and efficient!

Little millet dosa! 🤩

Recipe:

To make batter:

2 cups little millet
1 cup dosa rice
1 cup urad dal
1 cup poha
1 teaspoon fenugreek
2 tablespoons channa dal

Soaked overnight and then grinded to make batter, followed by fermenting for 10-12 hours.

I stored a little bit of this batter in my Tin vessel, as it is believed to reduce the excess sourness in food. I typically use wood pressed sesame oil for any fermented and sour food because of its balancing nature. Thanks to for this wonderful oil.

Tomato kaara chutney was the perfect side for this dosa!

And as always, my cast iron dosa tawa has been the best in making yummy crispy dosas! 🤩

I just can't stress how important a role our spices play in our food/life giving us the right amount of protection and boosting our immunity naturally!

When we say "preseasoned and ready to use", we mean it!

All our products are put through a rigorous seasoning process over 2 to 3 days of getting soaked in starch overnight, frying onions or other vegetables, and testing with batter wherever necessary.

All you need to do is just a mild wash, and you're ready to use it!

It was my brass kadai 's turn today!

Made this tasty brown cowpea (lobia) stir fry. Cowpeas are rich in antioxidants required for good health. Additionally, they have soluble fiber which is a key nutrient when it comes to digestive health!

Using brass kadai helps preserve these rich nutrients more than 90%, in addition to the multiple health benefits of the copper content in brass itself.

Ghee rice in my cast iron kadai.. simple and quick lunch idea for Sunday!

Start making tadka with 2 table spoons of ghee and add spices like clove, cinnamon, bayleaf, cardamom and cumin seeds. After a few minutes, add salt, ginger garlic paste, green chilies and onions (if you like). Once onions turn golden brown or soft, add mint leaves followed by boiled rice and toss well to get that thorough mixing.

I used my 10 inch cast iron kadai, which was good for my family of 4 and one kid. You can also see how the kadai is as good as, or even better than a non stick kadai (in the 3rd pic).

All this while not causing any harm to my health from teflon!

This process is carried out over a period of 2-3 days!

Made this spicy moong dal poori for breakfast today, with my cast iron kadai. Very easy to make with following ingredients:

Moong dal: 1/2 cup
Wheat flour: 1 cup
Ginger: 2 inch
Green chillies: 3 nos
Red chilli flakes and coriander leaves

Recipe:

Half cup moong dal soaked in hot water for 40-45 min, grind to smooth paste along with ginger and the green chillies.

Mix this smooth paste with one cup wheat flour along with salt, one spoon of chilli flakes and chopped coriander leaves.

This dough needs to rest for 15 min and then you're to make these yummy poories in your heavy bottom cast iron kadai - that helps gets the old heated quick and helps evenly cook the poori!
