Ingredients:-
• 500 g Fleshy Cutz chicken
• 1 onion
• 2 garlic cloves
• Chunk of ginger
• ½ red chili
• 1 tbsp vegetable oil
• ½ tsp turmeric
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1-2 tsp hot chili powder
• 400g tomatoes
• coriander
Method:-
• Make a coarse paste out of the onion, garlic cloves, ginger and red chili.
• Heat oil in a pan and add the paste, then fry for 5 mins until it softens. Add water if required.
• Add turmeric, ground cumin, coriander, hot chilli powder and stir well.
• Cook for a couple of mins to toast them and finally add the chicken.
• Keep stirring till the chicken begins to turn pale and add little water.
• Pour in the tomatoes and add salt. Cover and cook on low heat for 30 mins.
• Add chopped coriander and serve hot with rice.

• Mutton – 500 gms
• Cloves – 6, Star anise – 1
• Green Cardamom – 6
• Cinnamon stick – 1inch
• Black stone flower – 1tbsp
• Mace – 1 flower
• Nutmeg –1/4th tsp
• Coriander seeds – 2tbsp
• Cumin seeds – 1tsp
• Black pepper seeds – 2tsp
• Fennel seeds – 2tsp
• Fresh coconut – 4tbsp
• Onion – 1, Tomato – 2, Curry leaves
• Ginger and garlic paste – 4tsp
• Fennel seeds – 1/2tsp
• Shallots – 100gms
• Green chili – 4(slit)
Method:-
• Heat a kadai and dry roast all the spices given till they are golden, making them into a fine powder.
• Heat oil, add the whole spices and let them sizzle for a min.
• Add shallots, green chilies, tomatoes, curry leaves along with ginger garlic paste. Saute till light golden.
• Add the mutton and cover it with a pressure cooker, letting it simmer for 15-20 mins.
• Open the cooker and add coconut masala, coriander leaves & mix well.
• Serve hot with rice or roti.

• Green Chilli - 1 Nos
• Tomato - 1 sliced
• Gambooge (Kudampuli) - 3 Nos
• Grated coconut - 2 cups
• Shallots - 10 Nos
• Ginger - 1 piece
• Pepper Corns - 6-10 Nos
• Kashmiri Chilli powder - 1 tbsp
• Coriander Powder - 1 tbsp
• Turmeric Powder - ¼ tbsp
• Curry leaves - 1 sprig
• Coconut oil - 2 tbsp
• Salt to taste
Method:-
• Heat oil in a pan, adding grated coconut, ginger, shallots, peppercorns, curry leaves, and fry till the coconut turns to golden brown.
• Add chili powder, coriander powder, turmeric powder & mix well.
• Grind the roasted mix along with water to make a fine paste.
• Put the fish in an earthen pot adding the roasted masala paste.
• Add green chili, gambooge, tomato, curry leaves, water & salt.
• Cook the fish over medium flame till the gravy becomes thick.
• Remove from heat & serve after 15 minutes.
