Guacamole is quick and easy to make that you will surely enjoy😋
Recipe👇
Classic Guacamole:
3 large ripe avocados
Juice from 1 lime, 2 tbsp
½ cup grape tomatoes, diced
½ cup red onion, chopped
1 jalapeño, minced
¼ cup fresh cilantro, chopped
2 cloves garlic, minced
½ tsp sea salt, plus more to taste
Slice your avocados in half, remove the pits and scoop the flesh of the avocados into a large mixing bowl.
Add the rest of your ingredients to the bowl.
Stir together with a fork, until combined, but still chunky, mashing the avocado as you stir.
Taste and adjust seasoning as needed. Serve with an assortment of raw vegetables and tortilla chips.
Corn and Black Bean Guacamole:
3 ripe avocados
1 cup black beans, cooked
2/3 cup sweet corn, cooked
1 cup grape tomatoes
1/3 cup red onion
1/3 cup fresh cilantro
2 Tbsp. fresh lime juice
1/4 tsp. salt
1 jalapeño (finely diced)
Place avocado (peeled and pitted) in a bowl and mash with fork.
Finely dice tomatoes and onion. Chop cilantro, large stems removed. Add to bowl.
Add black beans (rinsed and drained), corn, 2 Tbsp. lime juice (more/less as desired), and salt to bowl. Gently stir to combine.
Taste and season more lime juice, cilantro, or extra salt to bring out the flavors.

Pizza Dough
Spicy Thai Basil Chicken (Pad Krapow G*i) 🌶️🍚
Ingredients:
⅓ cup chicken broth
1 tablespoon oyster sauce
1 tablespoon soy sauce, or as needed
2 teaspoons fish sauce
1 teaspoon white sugar
1 teaspoon brown sugar
2 tablespoons vegetable oil
1 pound skinless, boneless chicken thighs, coarsely chopped
¼ cup sliced shallots
4 cloves garlic, minced
2 tablespoons minced Thai chilies, Serrano, or other hot pepper
1 cup very thinly sliced fresh basil leaves
2 cups hot cooked rice
Directions:
Gather Ingredients:
Make sure you have all the ingredients ready.
Prepare Sauce:
Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
Cook Chicken:
Heat a large skillet over high heat.
Drizzle in vegetable oil.
Add chicken and stir-fry until it loses its raw color, about 2 to 3 minutes.
Add Aromatics:
Stir in shallots, garlic, and sliced chilies.
Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes.
Caramelize Sauce:
Add about a tablespoon of the sauce mixture to the skillet; cook and stir until the sauce begins to caramelize, about 1 minute.
Deglaze Pan:
Pour in the rest of the sauce.
Cook and stir until the sauce has deglazed the bottom of the pan.
Continue to cook until the sauce glazes onto the meat, 1 or 2 more minutes.
Remove from heat.
Add Basil:
Stir in basil.
Cook and stir until basil is wilted, about 20 seconds.
Serve:
Serve hot with hot cooked rice.

🍛 Butter Chicken Recipe 🍛
Ingredients:
3/4 cup butter or ghee
1 Tbsp. curry powder
2 Tbsp. garam masala
2 lb. boneless skinless chicken thighs, cut into 1-inch pieces
1 cup diced yellow onion
3 Tbsp. minced garlic
3 Tbsp. minced ginger
1/4 cup tomato paste
1 28-oz. can crushed tomatoes
1 1/2 cups heavy cream or coconut milk
1/2 tsp salt
2 Tbsp. lime juice
Rice
Chopped roasted cashews
Coconut flakes
Lime wedges
Instructions:
Prepare Ingredients:
Cut chicken thighs into 1-inch pieces.
Dice yellow onion.
Mince garlic and ginger.
Cook Chicken:
Heat butter in a Dutch oven over medium heat.
Stir in curry powder and garam masala; cook until fragrant, about 2 minutes.
Add chicken pieces; coat in spices and butter.
Cook until slightly browned, about 5 minutes.
Add Aromatics:
Stir in diced onion, minced garlic, and minced ginger.
Cook until onions are translucent and fragrant, about 5 minutes.
Incorporate Sauces:
Stir in tomato paste until combined.
Add crushed tomatoes and heavy cream (or coconut milk); stir until combined.
Simmer and Season:
Reduce heat to medium-low; simmer mixture, stirring occasionally, for 10 minutes.
Season with salt to taste.
Final Touches:
Remove from heat; stir in lime juice.
Serve over rice.
Top with chopped roasted cashews and coconut flakes, if desired.
Serve with lime wedges for squeezing over the dish.

It’s Hibachi Noodles Night!
I updated the recipe using coconut aminos and soy sauce. I also added maple syrup as sweetener. It turns out amazing!
Here’s the complete recipe:
1 pound spaghetti (cooked)
4 tbsp butter
3 cloves garlic (grated)
6 tbsp coconut aminos or soy sauce
3 maple syrup
2 tbsp oyster sauce
2 tbsp sesame oil
2 tbsp sesame seeds
Salt and pepper to taste
Steps:
Cook noodles according to package. Once cooked, drizzle with 1 tablespoon of sesame so it will not stick together. Set a aside.
In a bowl, mix all the ingredients for the sauce. Set aside.
In a pan, melt the butter, add minced or grated garlic. Sauté till fragrant. Add the prepared sauce. Simmer till it bubbles. Add the noodles. Mix until everything blended. Garnish sesame seeds. Ready to serve. Enjoy!
Creamy COLESLAW recipe
This taste like KFC coleslaw to me. It’s creamy and tangy. Just the way I love it.
For the Coleslaw:
4 cups finely chopped (half cabbage)
1/4 cup shredded carrot
For the Dressing:
1/2 cup mayonnaise
2 tbsp honey/sugar
2 tbsp buttermilk
1 tbsp vinegar/lemon juice
Salt and pepper to taste
Steps:
Shred the cabbage and carrots. Or chop in food processor. Set a side.
In a large bowl, combine all the ingredients for the dressing. Whisk until smooth.
Add in cabbage and carrots. Mix well until everything is thoroughly combined. Add salt and pepper to taste.
Cover and refrigerate overnight. Or eat it right away. Enjoy!

2 cups white sugar
1 cup apple cider vinegar

Directions:
In a large pot, combine sugar, apple cider vinegar, garlic powder, turmeric, celery seed, and cayenne pepper. Stir well and bring to a boil over medium-high heat.
Once boiling, reduce the heat to low and simmer for 5 minutes.
Add the sliced jalapeños to the pot, ensuring they are fully submerged in the syrup.
Simmer the jalapeños for 4 minutes for a crunchy texture, or longer for softer jalapeños.
With a slotted spoon, transfer the jalapeños into sterile jars. Then, pour the cooking syrup over the jalapeños, leaving about 1/2 inch of headspace.
Seal the jars while hot and let them cool to room temperature before refrigerating.

Homemade Pizza Dough
Recipe:
• 1 teaspoon yeast
• 1 teaspoon sugar
• 3/4 cup warm water
• 2 cups all-purpose flour
• 2 tablespoons oil
• 1/2 teaspoon salt
Steps:
In a small bowl, combine the active dry yeast, sugar, and warm water. I stir gently and let it sit for about 5 minutes until the mixture becomes frothy.
In a mixing bowl, combine the all-purpose flour and salt, making a well in the center.
Add the yeast mixture and olive oil into the well and stir together with a spoon until the dough starts to come together.
Transfer dough to a lightly floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place for about 1-2 hours or until it doubles in size.
Once the dough has risen, punch it down to release any air bubbles. I divide the dough in half if I prefer a thin crust or use the entire dough for a thicker crust.
Roll out the dough on a floured surface into my desired thickness and shape.

Preheat the oven to 475°F (245°C) and let the dough rest for about 10 minutes.

Chicken Pasta Recipe 🍝🥘
Ingredients:
🐔 1 lb (450 g) chicken breasts, thinly sliced
🧂 Salt and pepper to taste
🫒 2 tablespoons (30 ml) olive oil
🧄 3 cloves garlic, minced
🌶️ 1 teaspoon red pepper flakes
🍗 1 cup (240 ml) chicken broth
🥛 1 cup (240 ml) heavy cream
🍅 1/2 cup (75 g) sun-dried tomatoes, chopped
🧀 1/4 cup (25 g) grated Parmesan cheese
🍝 8 ounces (225 g) penne pasta, cooked and drained
🌿 1/4 cup fresh basil, chopped
Directions:
Season and Cook Chicken:
Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through. Remove chicken from the skillet and set aside.
Prepare Sauce:
In the same skillet, add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Add the heavy cream, sun-dried tomatoes, and Parmesan cheese. Bring the mixture to a simmer and cook until the sauce thickens, about 5 minutes.
Combine Chicken and Sauce:
Return the chicken to the skillet and simmer for an additional 3 minutes to reheat the chicken.
Toss with Pasta:
Toss the cooked pasta with the chicken and sauce, ensuring the pasta is well coated.
Garnish and Serve:
Garnish with fresh basil before serving.

Easy Homemade Lemon Sauce
Add butter to the pan and melt. Add lemon juice, sugar, broth and cornstarch. Whisk everything well together and simmer until the sauce has thickened.
You can add extra grated ginger, garlic and pepper flakes, which is optional.
Pour over fried chicken or shrimps. Garnish with green onions. Enjoy!
