Ingredients:
3/4 cup warm water, about 110Β° F
2 1/4 tsp active dry yeast
1 1/2 cups millet flour
1 cup tapioca starch
2 tbsp granulated sugar
2 tsp xanthan gum
1 tsp table salt
1/2 tsp baking powder
3 large eggs
2 tbsp oil
1 tsp apple cider vinegar
Recipe:
Proof your yeast with warm water and sugar
Mix all the dry ingredients together. Make a well and add all the wet ingredients. Knead well for about 10 minutes. The dough will be batter-like. Pour in an oiled pan and leave it in a warm place until double in volume. Sprinkle some sesame seeds ans bake at 175Β°C for 45 minutes.
If you could only eat one dessert for the rest of your life, what would it be? I'm taking cheesecake to my grave.
Tips and tricks:
1. Always bake your cheesecake in a water bath. It's crucial for even baking & prevents your top from cracking
2. Fold in the whipped cream gently - don't whisk
3. Make sure your cream cheese is at room temperature. That way it creams into the most luscious texture & prevents lumps
4. You can use Oreos for your crust to switch it up a bit
5. This eggless cheesecake is your basic go-to recipe. You can pair it with different flavours to create your favorite
6. For the Blueberry compote - heat blueberries (frozen or fresh) along with some water and sugar. The berries will start popping & release their juices. Once you're happy with the consistency, remove from heat and add a squeeze of lemon & you're done!
7. I'm making these in little cupcake liners because... Look how cute! But you can totally make this in a spring-form pan or any pan with a removable bottom. Just grease the base & use parchment paper for easy removal

Garlic Parmesan Breadsticks with leftover pizza dough
All you need to do is cut your pizza dough into thin strips about 1 inch wide
Brush it with some garlic oil and sprinkle freshly grated parmesan
Bake for 10-15 minutes at 220Β°C or until golden brown and crispy
They will be crispy on the outside and fluffy on the inside!
Garlic oil recipe:
π§ Olive oil
π§ Freshly minced garlic or garlic paste
π§ Pinch of salt
π§ Herbs of choice. I use mixed here

Go and make your pizza dough (recipe in my last post) so that you can make this stuffed crust cheesy beauty!
Pizza tips :
π Always prick your crust with a fork to avoid it from puffing up
π Prepare your pan by brushing some olive oil to avoid sticking
π I always roast my veggies first with a little bit of olive and salt and pepper before adding it to my pizza. I believe it tastes way better
π Bake the pizza at 250Β°C. That's the highest temperature in most Indian ovens
π If you're pre-baking your crust, then just bake it for 10 minutes with both top and bottom heating at 250Β°C. You're looking for a light golden brown colour
π You can stuff your crust with other toppings as well. Just add a little bit of cheese to help keep the crust stuck together
Countering your lockdown blues with a basic foolproof pizza dough!
It's so easy to make and comes together in no time.
This recipe involves a few basic ingredients and it gives you such a versatile dough for not just pizza, but garlic bread, pizza pockets, pizza bites, garlic knots, pizza muffins, stuffed pizza loaves and whatnot! The options are endless.
Recipe:
Makes two 10 inch pan pizzas
π 2 cups all purpose flour
π 3/4 cup warm water
π 1 1/2 tsp sugar
π 2 1/2 tsp active dry yeast
π 1 1/2 tsp gluten
π Garlic powder to taste
π 2 tbsp olive oil
Proof the yeast and add it to your dry ingredients. Knead it into a soft tacky dough. Cover in olive oil and let it rest for an hour or until double on size. Deflate your dough before forming your pizza base.
I got inspired by and had to make some hummus! It's such a convenient thing to have in your fridge and there are a million things you can pair with a classic hummus. With that being said, there are so many ways to give the basic recipe a spin!
