Home food is something we all crave for and so here's my attempt to serve you with freshly cooked, hygienic & delicious home food straight from my kitchen. Here's the menu for residents of Gurgaon, which includes a weekly thali menu curated to serve familes affected by Covid.

Mushroom Chickpea Kebab

Ingredients:
Mushroom – 5 pieces
Chickpeas – 2 tbsp boiled
Paneer – 50 gm
Garlic – 4-5 cloves
Green Chilli – 1
Salt – according to taste
Peas – 1 tsp
Corn – 1 tsp
Chilli Powder – 1 tsp
Olive Oil – 1 tbsp
Subway bun – 1
Mustard Sauce
Olives – 1 tbsp
Cucumber – 1
Tomato – 1

Method:
Heat a pan. Add half tsp of olive oil. Add garlic cloves and sauté for a min. Add mushrooms, chickpea and paneer(cut into small cubes). Sauté for 5 minutes. Keep aside and let it cool for 10 minutes.
Transfer the mixture into a grinder and add peas, corn and green chilli. Grind it into smooth paste. Transfer into a bowl. Keep it in in the fridge for half an hour.
Heat a pan, make round shape kebabs and cook them from both sides.
Take a subway bun, apply mustard sauce, lay the lettuce leaves, place the kebabs, cover it with cucumber and tomato and add olives. Healthy sub is ready to be served.

Falafel with Quinoa Platter 🧆

Ingredients: 🥒
Chickpeas – 2 bowl
Garlic – 5-6 cloves
Coriander Leaves – Handful
Onion – 1 (small)
Quinoa – 1 small bowl
Cucumber – ½
Corn – 1 tbsp
Peas – 1 tbsp
Oil – 1 tsp
Eggs – 2 (boiled)
Salt, Pepper and chilli powder – according to taste

Method: 🎛️
Soak the chickpeas overnight.
Next morning, wash them with fresh water, drain and keep aside.
Soak the quinoa for half an hour. Then, boil the quinoa.
Once boiled, strain the water and let it cool.
Add 1 bowl of chickpeas, garlic, onions and coriander leaves with one drop of olive oil into the mixer grinder and grind it to a smooth paste. Transfer it to a bowl and refrigerate for about half an hour.
Add salt and chilli powder at the time of making kebabs.
The second bowl of chickpea, boil them and keep aside.
Heat a pan, make round shape kebabs and cook them from both the sides.
Boil the eggs, once done cut them in round shape and remove the yellow part
Take a bowl, lay the salad leaves. In the centre, place the boiled eggs followed by cucumber salad, quinoa, boiled chickpeas and falafel on the sides. The good thing about this meal is that there is no use of oil( only for falafel). So totally healthy🤸🏼‍♀️ For cucumber salad 🥒
Chop the cucumber and onion in small pieces. Add boiled corn. Squeeze little lemon and add a pinch of pepper. Mix well.

Zucchini and capsicum stuffed boats with Tomato Rice🍚

For Zucchini and Capsicum Boats

Ingredients: 🛶🥣
Zucchini – 1
Capsicum – 1
Nutrela Granules – 1 bowl
Onion – 1 small (Finely chopped)
Tomatoes – 3 (finely chopped)
Garlic – 4 cloves
Ginger – 1 small piece
Cumin seeds (Jeera) – 1 tsp
Paneer – 50 gm
Peas – ¼ bowl
Olives – 10-12 for garnishing
Olive oil – 2 tsp

Method: 🎛️🧆
Boil water and add nutrela granules and boil them for 5 minutes. Turn off the gas and let them remain in water for 30 minutes. Drain the water an keep the granules aside.
Take a pan, add 1tsp of olive oil, add cumin seeds. After 1 minute, add onions finely chopped, garlic and ginger finely chopped. Stir them till the onions turn golden brown. Now add chopped tomatoes. Stir and add the masalas. Cook well till the oil separates. Now add peas and little water and cook it on low flame. Once its ready, keep aside.
Now on a chopping board, cut the zucchini length wise into half. With the help of spoon or scrapper empty the inside portion of zucchini and similarly, do the same to the capsicum.
Fill the zucchini and capsicum with nutrela granules and then layer it with paneer and keep them in fridge for 15 minutes. Now take a pan. Add 1 tsp of oil and place them in the pan on low flame. Cover the lid. It will take approx. 20 minutes to cook them.
Once cooked lay them on the plate and garnish with olives. The boats are ready.
For the tomato rice: 🍚🍅
Rice (basmati) – 1 cup ( Boil and strain them)
Onions – 1
Tomatoes – 3
Mustard Seeds – 1 tsp
Curry Leaves – handful
Dry lal Mirch – 1
Oil – tsp
Red Chilli Powder – 1 tsp
Salt – according to taste

Method:
Boil the rice and drain the water and keep aside.
Take a frying pan, add oil. Once hot, add mustard seeds and dry lal mirch. Once mustard seeds begin to crackle, add onions and curry leaves. Stir till they are translucent.
Now add tomatoes and masalas. Cook well. Once the mixture is ready, add boiled rice and mix gently and slowly.
The rice is ready. Enjoy🌈

Corn Peas Kebab 🍢🌽

Ingredients: 🥙
Corn Kennels – 1 bowl (fresh or frozen)
Peas – ½ bowl
Garlic – 5-6 cloves
Coriander leaves – Handful
Ginger – 1 small piece
Green Chilli – 1 (if you want it to be spicy, take 2)
Paneer – 250 gm
Salt and chilli powder – according to taste

Method: 🎛️
Wash the corn and peas and soak them in boiling water for about 20-25 minutes and then strain. Keep it aside so that all the water drains out.
Take the mixture grinder, transfer all the ingredients except paneer ( corn, peas, coriander leaves, ginger, garlic and green chilli) and grind it to a smooth paste.
Transfer them to a bowl and add the grated paneer. Mix well.
Add red chilli powder, according to taste and keep the mixture in the fridge for half an hour. At the time of preparing the kebabs, add salt according to taste. Mix well.
Take the mixture in your hand and shape them in long kebab shape and insert a stick ( oil the stick). Now place the kebabs on a pan. Pour very little oil. ( I used olive oil). Turn them once cooked from one side. Do it very slowly and gently.
The kebabs are ready to be served 🌈

For Dal salad : 🥗

Ingredients: 🍅🌿
Moong Dhuli Dal – 1 cup
Pomegranate – 1
Capsicum – ½ (finely chopped)
Carrot – 1 (grated)
Onions – 1 small (finely chopped)
Tomato – 1 small (finely chopped)
Coriander Leaves – for garnishing
Salt and Pepper – according to taste
Black salt – 1 tsp
Lemon – ½
Aamchur Powder (Dry mango Powder) – 1 tsp

Method: 👩‍🍳
Soak the dal for 1.5 hrs. Take a pan, add dal and water ( the quantity of water should be enough to dip the dal completely into the water) .
Cook on a low flame. Once the dal is 75% cooked, strain the water. Transfer the dal in a plate and let it cool completely.
Once done, transfer the dal in a bowl, add onion, carrot, capsicum, pomegranate and tomatoes. Add the masalas and lemon juice. Mix gently. Garnish with coriander leaves.

Pan Noodles 🍜

Ingredients: 🥦🍄

Veg Noodles – 1 Packet
Broccoli – 1 (cut into florets)
Mushroom – 1 Packet (cut into half)
Zucchini – ½ (cut into half)
Onion – 1 (chopped)
Garlic – 8-10 cloves
Tomato – 2 (puree)
Green Chilli – 1 (finely chopped)
Bell Pepper (Red, Yellow) – cut into small pieces
Salt and Pepper – according to taste
Vegetable stock – 1 litre
Chilli Flakes – 1tsp
Soya Sauce – 1 tsp
Chilli Sauce – 1 tsp
Green Sauce – 1 tsp
Olive Oil – 1 tsp

Method: 🥘⏰
Boil the noodles (add little oil while boiling). Strain and keep aside.
Take a pan. Add oil, add chilli flakes.
Put onion and garlic and stir till translucent. Add green chilli, stir. Add tomato puree.
Cook for 5 minutes. Add Mushroom, Broccoli and Zucchini. Stir for 5-10 minutes on low flame.
Once sautéed, add salt and pepper and then pour in the vegetable stock. Stir. Cover the lid and cook on low flame.
Add Bell Peppers when the vegetables are almost cooked. Cook for 2 minutes and turn off the gas.

For plating: 🍲
Place the noodles in a bowl and pour the gravy over the noodles. Garnish with sesame seeds.
Pan noodles are ready to be served.🍽️
