On Saturday, I inspire my followers to enjoy a wholesome and delicious dinner with roasted vegetables. I emphasize the importance of enjoying food mindfully, savoring the flavors, and nurturing both the body and soul through a balanced meal.
Recipe: Roasted Vegetable Platter with Quinoa and Yogurt Sauce
Ingredients:
For Roasted Vegetables:
* 2 cups mixed vegetables of your choice (such as cauliflower florets, bell peppers, zucchini, carrots, and broccoli), cut into bite-sized pieces
* 2 tablespoons olive oil
* 1 teaspoon cumin powder
* 1 teaspoon paprika
* 1/2 teaspoon turmeric powder
* Salt and pepper to taste
For Quinoa:
* 1 cup quinoa
* 2 cups water or vegetable broth
* Salt to taste
For Yogurt Sauce:
* 1 cup plain Greek yogurt
* 2 tablespoons chopped fresh cilantro
* 1 tablespoon lemon juice
* 1 garlic clove, minced
* Salt and pepper to taste
Instructions:
1. Preheat the oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine the mixed vegetables, olive oil, cumin powder, paprika, turmeric powder, salt, and pepper. Toss well to coat the vegetables evenly with the spices and oil.
3. Spread the vegetables in a single layer on the prepared baking sheet.
4. Roast the vegetables in the preheated oven for about 25-30 minutes or until they are tender and slightly caramelized, stirring once or twice during cooking.
5. While the vegetables are roasting, rinse the quinoa thoroughly under cold water to remove any bitterness.

Recipe: Indian Protein-Packed Lunch Plate - Tandoori Chicken with Quinoa and Roasted Vegetables
Ingredients:
For Tandoori Chicken:
* 2 chicken breasts, boneless and skinless
* 1/2 cup plain Greek yogurt
* 2 tablespoons tandoori masala powder
* 1 tablespoon lemon juice
* 1 teaspoon ginger-garlic paste
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon cumin powder
* Salt to taste
For Quinoa:
* 1 cup quinoa
* 2 cups water or vegetable broth
* Salt to taste
For Roasted Vegetables:
* Assorted vegetables of your choice (such as bell peppers, zucchini, carrots, and broccoli), cut into bite-sized pieces
* 2 tablespoons olive oil
* 1 teaspoon mixed dried herbs (such as thyme, rosemary, or oregano)
* Salt and pepper to taste
Instructions:
1. Tandoori Chicken:
* In a bowl, combine Greek yogurt, tandoori masala powder, lemon juice, ginger-garlic paste, turmeric powder, cumin powder, and salt. Mix well to make a marinade.
