Yesterday I was invited to Bal Bharati Public School as a judge for a Flameless Cooking Competion. I found it very well organized by the school authorities. There were 29 participants from pre-nursery to Std IX. All the kids came with one of their parents and all of them performed very well. I was pleasantly surprised to see their knowledge about what they prepared , their skills, their eyes for minute details and their teamwork . I had a wonderful time yesterday interacting with the enthusiastic participants. It was indeed a wonderful experience. At the end we met the lovely teachers , the principal madam and the vice principal madam as well. All of them were so cordial and welcoming.
Overall a lovely and very pleasant experience.

Luchi and white potato curry - a quintessential Bengali breakfast dish! Luchi is the Bengali version of puri, which is Indian deep fried bread, made out of all purpose flour instead of Atta. The light and puffy luchis are found almost in every Bengali household especially as a Sunday morning breakfast. Luchi is an emotion for every Bengali !♥️Luchi is also served during festivals and many special ceremonies like wedding etc , at the beginning of the course.
A soft and pliable dough is made out of all purpose flour or refined flour(maida) along with some ghee or oil. Then small roundels of the dough are rolled out thin and deep fried in either vegetable oil or pure ghee(in special cases) till they puff up beautifully. The luchis are generally served with variety of sides like simple potato curry, or chana dal( curried bengal gram lentils) or even with mutton curry (kawsha mungsho- in Bengali).
Had this breakfast after a long timeon the auspicious day of Rakhi Purnima just to make the day extra special. 😁

A baby shower cake done using ND whipped cream frosting and some fondant accents.
I am, for the first time, used IOD mould to make the plaque for the cake. And I am so happy that I’ve got a few of their moulds time from my last USA trip. In fact my daughter has gifted me a box full of IOD products! So sweet of her , na! 😍🥰
The last I made using the Frames mould for my cake. It works like dream! Used very little cornflour to dust it. The mould has beautiful intricate details and it gives perfect result. I am so happy that I found you and your beautiful products! ❤️😍
Recently I took part in a month long online Christmas fruit cake bake off by ‘Kitchen Kemistry by Cheryl’. This is the second bake off organized by her which I have attended.
The selection process was very simple and clear. The entire bake off was absolutely free of cost.
We learnt the various aspects of baking a traditional Christmas fruit cake right from the history of the cake to the science of baking. We learnt about every ingredient and their roles. We learnt about various liquors and liqueurs to be used. Learnt about pan sizes and how to line them. Ended with the basting and finally the aging process. It was a roller coaster ride of emotions - the fear of eliminations, yes, one can get eliminated in the middle of the challenge too if the rules are not followed correctly, the anxiety of proper temperature setting in the oven and the happiness when the bake was successful!
Thoroughly enjoyed every moment of it.

A simple sourdough loaf- very happy with the overall result. The result achieved with a shorter bulk fermentation and longer cold fermentation.
Specs are as below -
Bread flour 240g
Whole meal flour 40g
Wholewheat flour 20g
Water 255g
Very active starter (at peak) 80g
Salt 6g.
Autolyse 1&1/2hrs then starter. Rest 1hr, add salt. Rest 30min.
1 S&F and 4 CF 40min apart. Final shape and rest. Total bulk fermentation 5&1/2hr, cold re**rd for 16hr.
Beautiful overall taste and texture.

This dark beauty stole my heart. It’s simple plain SD loaf but the flour composition is a bit different. Specs are given below. I went quite far for a dark crust and the ear got too dark I guess.
Mixed a slightly low protein flour along with bread flour and whole meal flour. This low protein flour is Tin Loaves, Series C 8615 from . According to the manufacturer this is a multidimensional flour includes wheat, soy, Bengal gram and flax seeds.
The bread turned out absolutely beautiful, soft creamy crumb and crispy crust. The dough had good stretchy feel and held the hydration well.
170g C 8615 flour
100 bread flour
30g whole meal flour
225g water
75g very active starter
6gm salt
1&1/2hrs autolyse
Mix starter
After 30min add salt
1 S&F , lamination , 3 C&F 30 mins apart. Pre shape, and then final shaping. Total BF 6hrs , cold re**rd 14hrs.
Open bake at 250c with steam and 20 mins at 220c without steam. Happy with the oven spring and crumb structure has improved too.
The deep dark crust has imparted excellent flavour.
