Natural cheese making is a process where art meets science. While meticulous hygiene protocols and measurements that are part of the initial make process have to be precise to a clinical proportion, the inoculation, infusion and final affinage is more of an intuitive process, that renders the cheesemaker/ affineur a broader scope of creative freedom.

Pictured here is our cloth bound cheddar that has been aged for almost a year. The buttery, nutty flavour profile with a slightly piquant aftertaste is exactly what we were aspiring to create. And we could not be happier with the resultant depth of flavour!

Our charcoal coated lactic style cheese inspired by the French Valençay cheese is one of our best selling cheeses.

Unlike the orginal Valençay, which is made with goat milk, we make ours with cow milk, rendering it a smoother and creamier taste.

The season that this cheese best represents is Spring... with is fresh & citrusy after taste. The paste is mildly sour with a creamy mouth feel and the rind earthy.

Did you know that the original Valençay cheese has a very interesting anecdote, that involves the French Emperor Napolean Bonaparte?.. more on that later. 😊

Best paired with a fresh plum/apple/peaches, honey/ jam and some sparkling wine, it's a great addition on cheese boards/ platters.

Luscious is the word that aptly describes this cheese. A washed curd gouda style cheese with a golden hue imparted by annatto, it's a melt in the mouth as well as the oven/ pan. 😊🧀
