1.Take sliced onion in a large bowl.
2.Add gram flour, rice flour, ginger, curry leaves, red chilli powder, baking soda, coriander leaves and salt.
3.Mix well using a spoonAdd water little by little (approx. 1/4 cup) and mix all the ingredients such that sliced onion is coated well with flour batter. Do not add more water unless required – if the batter becomes too watery or thin then pakoras will not turn crispy and keep aside for 10 minutes.
4.Heat oil in a deep pan over medium flame. Take small portion of mixture in the hand and gently drop 3-4 small fritters into the oil and deep-fry until they turn golden brown in color.
5.Take them out using a slotted spoon and drain excess oil. Place them on a paper towel on a plate to absorb excess oil. Do not over crowd the oil with onion fritters, this will help them cook evenly.
Tips : –
1.keep stirring occasionally in between so that they cook evenly and keep heat/flame to medium.
2.Do not fry them over low flame, it will make them soggy and absorb too much oil.
3.If you want to prepare pakoda once and enjoy it over 1-2 days then do not add any water in step-4 while preparing the batter.
4.Serve them hot as a delectable snack with chutney or with a cup of tea or coffee in the evening.
Kachori is one of the favorite snacks in India loved by millions.
Kachori requires 10 Min of preparation time and cooking time of 35 Mins.
Follow the below recipe to make the india's one of the favorite snack
1. Crush gathiya or sev to medium coarse powder or roast the gram flour until light golden brown.
2. Heat 1 tablespoon of oil in a pan or kadai over low flame. Add all stuffing ingredients except crushed gathiya, date tamarind chutney, sugar and salt; sauté over low flame for 30 seconds.
3. Add crushed gathiya, date tamarind chutney, sugar and salt. Mix properly and roast for a minute. Turn off the flame and let it cool for 4-5 minutes. Dry and spicy stuffing for kachori is ready.
4. Take maida, salt and 3½ tablespoons oil in a large bowl and mix well. Add warm water as needed and knead a smooth dough (like paratha dough).
5. Divide dough into small lemon size portions and give them the shape of a ball. Roll out each ball into thick circular puri.
6. Put 1-2 teaspoons of stuffing mixture in the center of the puri. Wrap stuffing with puri and seal and again give it the shape of a ball.
7. Heat oil over medium flame to deep fry kachoris. When oil is medium hot, carefully slide raw balls into the oil and deep fry over low flame until they turn light brown.
8. Crispy and spicy dry kachori is ready. Enjoy it on its own or serve it with green chutney.
