Love this fiery, tangy, shrimply delicious Goan delicacy😋
I incorporated Goa's other passion, feni, a potent alcoholic brew made from cashew nuts or palm fruit. Also omnipresent in Goan dishes is the highly acidic feni vinegar, which reduces the potency of dried red chilies as does tart tamarind, another key element in this layered, complex and fiery hot paste that peppers its way into many Goan dishes🔥

Malvani Crab Curry 🦀
Malvani cuisine originated in Malvan, a town in the Sindhudurg district on the west coast of Maharashtra. It is the standard cuisine of the South Konkan region of Maharashtra & Goa. Although it is an independent cuisine, it overlaps Maharashtrian & Goan cuisine.
Coconut is used in abundance in various forms and many of the masalas have dried red chilies, other spices like coriander seeds, peppercorns, cumin, cardamom, ginger & garlic. Some dishes also use kokum, tamarind or raw mango as a souring agent.
The famous Malvani masala, is a combination of 15 to 16 dry spices ground to a fine powder😋
Char Siu Pork Rice Bowl 🍚🥢
Char Siu is a popular Cantonese style barbecued pork classified as a type of Siu Mei, a Cantonese roasted meat.
It literally means "fork roasted" (siu being burn/roast and cha being fork) after it's traditional cooking method where boneless cuts of pork are skewered with long forks and placed in an oven or over an open fire.
Traditionally, wild boar and other available meats were used to make it, however nowadays the meat is typically a shoulder cut of domestic pork seasoned with a mixture of honey, brown sugar or molasses, five spice powder, red fermented bean curd, dark soy, hoisin & a Chinese rice wine (Shaoxing wine).
It goes great stuffed in a bun, served with noodles or rice, or on it's own as a main dish😋

King Fish Recheado😋
Recheado masala is a fiery & tangy Goan condiment. It is traditionally used for marinating seafood & most famously as a stuffing for mackerels, which is one of my favourites. I used Surmai (King fish) as I managed to get some huge delectable slices.
Recheado is so versatile you can use it for prawns, chicken wings, a beef roast or even for some succulent pork ribs💥
It is made by grinding Kashmiri chilis with other whole spices but the three most important ingredients that give this paste it's justified hype are good quality Kashmiri chilis, Goan palm vinegar & Feni😋
Rawa Fried Green Recheado Bombil💚
All us Goan's love our classic ruby red recheado masala, but I thought why not do a lil experimenting & go green!! And the results were absolutely phenomenal🤤
The Hulk would definitely be proud, "SMASHED" it!!😋🤭

Mango & Sticky Rice infused with Butterfly Pea Flowers served with a side of Alphonso Mango Ice Cream topped with sesame seeds, homegrown microgreens, butterfly pea flowers & drizzled with a Cabo flavoured coconut crème😋
Mango & Sticky Rice is a traditional Thai dessert made with glutinous rice, coconut milk & mango🥭
I upped it's game by adding Butterfly Pea Flowers to the rice giving it it's distinctive blue tinge & a bit of Cabo, a Goan brand of coconut liqueur giving it a flavourful kick. I also added some of the Cabo to the coconut crème, obviously!!🤣 I am Goan afterall😜
Bacon & Jalapeno Prawn Rissóis 🦐
Rissoles or Rissóis as they are known in Portugal, basically mean reddish or to redden. It's a half moon shaped beaded pastry usually stuffed with minced prawns in béchamel sauce & are either baked or deep fried. The Portuguese shared these lil beauties at the shores of Goa & has been a hit here ever since.
Now, I just had to elevate these to the next level. And since I love BJ's 🥓🌶️(pun intended), Bacon & Jalapenos were added in abundance to give it a smokey lil fiery kick🤤 Also, I used prawn tails at the edge of each Rissole giving it an aesthetic look & a lil bit of a textural crunch at the end🍻
Pork Solantulem🐽
This is a Goan dish where it's primary flavour is that of kokum to which a few whole spices, chilis, tamarind, ginger, garlic & onions are added. The balance of flavours is just out of this world, works great as a pork roast🍻
