I have been a lover of Red chicken thai curry since I have got introduced to thai food & have tried preparing it at home but gave up after a few failed attempts.🙈 Since I received this set of variety of ready thai curry pastes with all the aromatic leaves & coconut milk from , I got super excited to try preparing it using their recipe. All the ingredients were sent by . I was just supposed to add fresh vegetables and chicken and delicious thai curry was ready in just 20 mins. Coming to the taste and the flavour, it was beyond perfect. It tasted delicious & scrumptious. The flavour was exactly like the thai curry we get in restaurants. I had prepared burnt chilli fried rice with the thai curry & the combination turned out to be extraordinary. Thai curry made with One box of paste serves around 5-6 people.
I would definitely recommend this product & will be trying their other variants too.

We are going to be sharing pictures of some of the most fantastic meals we ate in over the next few days.
Fantastic meal 1 was this whole roasted taboon with sesame cream and , and Lebanese Khirda: rice with vegetables and chickpeas baked in the oven, at . The place is a small joint in 's food market and the food was outstanding! That creamy luscious eggplant with the crispy falafels and tahini has my heart 💗

I had been reading up on Shonali Sabherwal's a while back which got me hooked on . This is basically water. It helps incorporate friendly bacteria into your system and combat bloating, cramps, indigestion and a host of other problems. Make it once for 2 weeks and drink a glass each day!

Coarsely grind some saunf, jeera, ajwain, rai, kalanamk and hing. Add this powder to clean water. Add some chopped pieces of carrots/turnip/beetroot. Fill the container to the brim. Cover and let it be in a warm place for a few days till sour. Then refrigerate and drink as needed!

All set to make Thai style fried rice using everything available in my kitchen already.

I get asked how to make fried rice so often that I decided to jot down some of the most important pointers I have learnt for you guys:

1. Use at least a day OLD RICE. Never freshly cooked or over cooked rice. If in a hurry, use lesser water when making the rice, fan it out to dry and put it in the fridge. The key is to have DRY rice.

2. We want to keep the rice dry so be careful while adding wet ingredients. Soy sauce or any kind of seasoning sauce should be added a little at a time. I like to glaze the hot pan/wok with the sauce and then mix the rice in instead of pouring the sauce directly on the rice.

3. Keep the wok/pan HOT at all times and use the biggest one to cook the fried rice. We want plenty of space for the rice to move around.

4. Use adequate oil and let the rice stay undisturbed for sometime so that the exterior of the rice crunches up a bit and this adds some texture.

A bowl of fluffy fried rice is honestly my most favorite food. Still learning each day but these tips will definitely help! :)
