The joy and pride in his eyes! It has always been about discovering the new for him; exploring, creating & challenging his own abilities to design and master new techniques. That's what keeps him going and that's what gives him true happiness! Not to mention the invaluable satisfaction when he sees people relish what he so passionately creates.

Quoting Chef Sunil Chauhan - Executive Chef & MD Fabcafe, when we ask him what are his most prized dishes from the menu he mentions - "Mastering the skin for the jackfruit flour momos is one of the dishes I'm most proud of. The real challenge was to get more elasticity & stability in a flour that lacks it! This was a big one! Similarly, to bake with alternate ingredients like cow desi ghee, almond flour, banana flour, palm sugar, jaggery and the likes and still design a stable, appetizing, presentable & truly delectable dessert. Even making a granola with the Indian age old super food - the makhana as against the likes of the western influences, something that people will relish being served in a restaurant, something that does not happen so commonly still was a journey full of hurdles but the ferver kept me moving on to create this amazing menu! And I'm so happy the results are so very rewarding."
