Our lead faculty Sani Fernandes has been a trainer with us, a bartender a wife and a mother of a 3 year old. Not only is she a badass bartender, she also brings her warmth to the table. She has worked extensively in the Middle East as a bartender, bar supervisor, and finally bar manager, from 2009 to 2015 at various bars and night clubs including Liquid Lounge at the Mercure, 2liv at the Sofitel- Palm Jumeirah, Riva Beach Club - Palm Jumeirah and Trilogy Night Club at the Madinat Jumeirah.

Alert! Meet Tobias Carvalho. Toby has been bartending for 9 years and today is the Bar Manager at Home, Delhi where he leads a team of highly skilled mixologists. He believes that bartending is an art form where you never stop learning, and where there's never a dull moment! He loves to experiment with different spirits and be an active member of the global mixologist's community.
Stirring a drink can look pretty easy to someone at the bar. When you're behind it you'll find that it's not as simple as what meets the eye.
The technique is straightforward and can be mastered in as little as 2 hours. The trick is to keep your hand about 2/3 of the way up the spoon, and position your hand above the center of the glass. To grip keep two of your fingers above, and two below the spoon. With your top two fingers pull the spoon towards yourself, and push it away with the bottom two. Move the spoon in a circular motion along the inside edge of your glass. Remember, start slow, and keep practicing.
Guest shifts and bar takeovers are not only a great way to learn drink philosophies and interact with supremely talented bartenders from all over the world but is also a superb way to expose yourself to new ideas, techniques and spirits!
