Kaju curry or cashew curry is rich Indian curry for party menu or special occasions. Vegan and and vegetarian recipe. Tastes best with Paratha or Naan.
Kaju curry is rich spicy Indian curry that is quick and easy to cook but still taste like one of the best curries. There are 2-3 versions of Kaju curry. I am sharing our version of Kaju Curry. konkan style (Maharashtra style).
Coming back to this konkan style Kaju curry, I have used soaked cashew nuts which are soaked in salted water for few hours. It is strongly recommended to soak the cashews in salted water so that cashew are not bland when you cook them with gravy.
I have tried this curry using lot of dry coconut and indian spices.
This is authentic Konkan style Kaju curry recipe except I added lesser oil and skipped butter.

GATTE KI SABZI
India, being a land of diverse culture and traditions, we are a home to different cuisines also. Each state has its own kind of food depending on the availability of the cereals and pulses. People dwelling since some time, tend to follow their own method of cooking and thus there have been a significant change in the ingredients used and the process involved. The food can be broadly classified into five kinds as Northern, Southern, Eastern, Western and North Eastern. Rajasthani cuisine, is one such kind which is very famous and delicious.
Rajasthan ,being a desert, one cannot find much vegetables. Hence, pulses are extensively used. Gram flour is used in many of their dishes. Rajasthani cuisine does not use much of onion and garlic either. Gatte Ki sabzi is a popular accompaniment and I was tempted to try it.
Thanks to my wife for such delicious dinner today.
Gatte are small elongated dumplings made of gram flour mixed with a few spices. They are at first boiled in hot water and later fried. These dumplings are immersed in a gravy of yoghurt.

Sizzling brownie at home... ๐Ÿซ๐Ÿซ๐Ÿง๐Ÿจ
It is a chocolate brownie with a scoop of ice-cream on top served with a generous pouring of melted chocolate on the ice-cream. It is served on hot sizzler plates to be eaten directly in its sizzling hot form. But we used normal pan ๐Ÿคซ๐Ÿคญ

Meri maggi aur humara rishta rishta bahot purana hain... Bachpan main toh maggi bahot khayi hain but uske kisse bhi utane hi majedar hain.. But aaj hum aapko hamare rishtey ka Maggi ke sath jo anokha rishta hain uski kahani apko sunate hain...
Main aur meri wife, hum dono ek dusare se bahot pyaar karte hain.. Hamara love marriage hain.. Apko toh pata hi hain love marriage main bahot kuch karna padta hain... But meri baat alag hain kyu ki mere sath thi Meri Maggi.. tan ta na...๐Ÿ˜
Ek raat meri aur mere wife ki ladai hui and then woh apne room main chali g*i... pata nahi usne kuch khaya tha ya nahi... mene kitchen main jake dekha toh woh bina khaye so g*i thi.. meko pata tha usko bhuk lagane wali hain... Ratke 1.30 baje the... Main usko convince kar raha tha but woh maan hi nahi rahi thi.. kuch khaya bhi nahi tha... Mere wife ko Maggi bahot pasand hain.. Toh mene socha kyu na main Maggi banau and usko khila do.. Shayad uska gussa kaam ho jaye...
Main ne mast vegetable Maggi banai aur usko kaha.. Lo ye Maggi kha lo...pehele toh nahi nahi kar rahi thi 10 minute ke liye but badme usne kha liya... Maggi ne mood banaya aur hamara jhagda khatam ho gaya..
Thanks to Meri Maggi aur usne jo sath diya hain bachpan se.. uske liye bahot sara pyaar... Maggi tumne hamare life main itki khushiyaan layi hain ki hum log usko shabdo main bata nahi shakte...
Maggi tum alag alag roop dharan karke hamare samne aa jati ho.. jaise Masala Maggi, Shejwaan Maggi, Egg Maggi, Cheese Maggi, Vegetable Maggi, Chicken Maggi... aur aise bahot sare roop main aap hamare dil ko choo jati ho..

Chole Bhature is a food dish originating from northern India. It is a combination of chana masala (spicy white chickpeas) and bhatura, a fried bread made from maida. There is a distinct Punjabi variant of the dish.
Chhole bhature is often eaten as a breakfast dish, sometimes accompanied with lassi.

Moong Dosa... ๐Ÿ˜‹๐Ÿ˜‹
A dosa is a rice pancake, originating from South India, made from a fermented batter. It is somewhat similar to a crepe in appearance. Its main ingredients are rice and black gram, ground together in a fine, smooth batter with a dash of salt. Dosas are a typical part of diets throughout South India, but the dish is now popular all over the Indian subcontinent. Traditionally, dosas are served hot along with sambar and chutney. They can be consumed with idli podi as well.
In popular tradition, the origin of the dosa is linked to Udupi, probably because of the dish's association with the Udupi restaurants. Also, the original Tamil dosa was softer and thicker. The thinner and crispier version of dosa was first made in present-day Karnataka. A recipe for dosa (as dosaka) can be found in Manasollasa, a 12th-century Sanskrit encyclopedia compiled by Someshvara III, who ruled from present-day Karnataka.
After the Independence of India, South Indian cuisine became gradually popular in the North. In Delhi the Madras Hotel in Connaught Place became a landmark that was one of the first restaurants to serve South Indian cuisine. It arrived in Mumbai with the Udupi restaurants in the 1930s.

In summers, all we need is cold drink.. So I came up with these healthy diet cold coffee which keeps your tummy full and healthy.
Here is the procedure:
In a blender add 1 glass of cold skim milk + 2-3 dates + 1 tablespoon coffee powder

VEG EGG CURRY - Confused? I am sure you might thinking what is veg egg curry, hain na? Let me tell you.
Some people use paneer to make the eggs, some people use potatoes. But here I have used boiled potato to make the white part and the egg yolk is made by using the cheese (just add a little turmeric powder to make it look yellow)
Cut the boiled potato into half and make the cavity to fill the egg yolk(cheese) in the boiled potato. Before filling the cheese in the cavity I have fried (not golden brown) the boiled potatoes with cavity in the butter.

Mangonada - Yes, sounds exciting right?
Today, I tried this Mexican Dessert recipe and it turned out really well and delicious too.
When the summer sun screams across Mexicoโ€™s city streets and sandy beaches, mangonadas come to the rescue. Also called chamangos, they can be made with any combination of mango sorbet, chopped fresh mango or mango purรฉe, and may or may not be spiked, but theyโ€™ll always contain the salty, spicy and tangy flavors of Tajรญn and chamoy. Tajรญn, a chile-lime salt, is a delicious addition to sweet and savory foods alike. Its sister condiment, chamoy, is traditionally made from fermented fruit, salt, sugar and chiles. Depending on your location, you can find Tajรญn, chamoy and tamarind straws.
You can make Chamoy at home. This authentic Mexican chamoy sauce is easy to make at home and is so much more flavorful than store-bought.
Chamoy Sauce: You need any fruit jam, Lime juice, chile powder and salt.
Combine fruit jam, lime juice, ancho chile powder, and salt in a blender; blend until completely smooth. Transfer to a covered jar and refrigerate.
Tajin: It's basically Mexican Seasoning. It is very easy to make at home. This is my version of Tajin. You just need Chile powder, Coriander Powder, Salt, Cumin powder, Lemon Zest and Powder sugar. Mix it well and your Tajin is ready.

Mango Phirni. ๐Ÿ˜ณ Yes, you heard it right!
Phirni is an Indian rice pudding made by cooking ground rice with milk. Itโ€™s usually flavored with saffron, but I love this Mango variation a lot. Unlike Chawal Ki Kheer which uses whole rice, phirni uses ground rice and therefore, it is quick to make. You can even use rice flour to make it but it will too pasty when made with flour. So I suggest soaking the rice and grounding it to a coarse paste for the best texture.
Phirni is later on flavored with spices and cardamom to add some authentic Indian flavors to this dessert and served in small clay pots for a traditional feel. I used glas. ๐Ÿ˜‚
This dish blends the niceness of mangoes along with the creaminess of phirni and presents us with a flavorful dessert for the Summer.
You donโ€™t have to use basmati rice to make phirni. (I used basmati for this)
