🥗Heat 1 Tbsp ghee
🥗Add 5 finely chopped garlic cloves
🥗Add an inch chopped ginger
🥗Add 1 chopped green chilli
🥗Sauté for 2-3 min on low flame
🥗Sauté 1 Med chopped onion for 6-7 min
🥗Sauté 1/2 cup cashew nuts
🥗Sauté for another 6-7 min, let it cool and grind into paste
🥗Heat 1 Tbsp ghee
🥗2 Bayleaf
🥗2 Black Pepper Corns
🥗2 Cloves
🥗1 Green Elaichi
🥗An inch Dalchini stick
🥗1 Tsp Cumin Seeds
🥗1/4 Tsp Asafoetida
🥗Sauté till cumin seeds crackle
🥗Add 2 quarter plates/ 2 cups washed and chopped methi leaves
🥗Sauté on low flame for 4-5 min
🥗1.5 cup boiled green peas
🥗Mix and Sauté for 4-5 min
🥗Add the cashew-onion paste
🥗Mix and Cook on low flame for 4-5 min
🥗1/2 Tsp garam masala
🥗1 Tsp roasted cumin powder
🥗Add 1 cup fresh Malai/Cream
🥗Mix and cook till malai boils
🥗1/2 cup water or grinder whey
🥗Cook on low flame till it is mixed and boiled with gravy
🥗Add salt according to taste
🥗Mix 2 Tsp kasoori methi.

Easy Vegetarian Nutritious Palak Fried Rice
Recipe below:
🥗Boil 1 big bowl of palak/spinach
🥗Strain the spinach and save the boiled water
🥗Soak 1 bowl rice for 20-25 min
🥗Add left over spinach water to rice
🥗Add and Mix 1 Tsp Ghee, 2 Bayleaf/Tezpatta, 2 Cloves/Laung, 1/2 Tsp salt
🥗Cook rice aside
🥗In a pan heat 1.5 Tbsp Ghee
🥗Sauté 1 medium finely chopped onion
🥗Add 5-6 finely chopped garlic cloves, an inch finely chopped ginger
🥗Sauté till onions are caramelized
🥗Add 1 Tezpatta + 1 elaichi + 2 cloves altogether
🥗Pour 1 Tsp cumin seed + 1/3 Tsp heeng
🥗Sauté on low flame for 2-3 minutes
🥗Add 10-12 broken cashews and sauté for 2-3 min on low flame
🥗Sauté 1 bowl boiled peas for 3-4 min on low flame
🥗Sauté chopped spinach for 6 min on low flame
Now add masalas
🥗1/2 Tsp cumin powder
🥗1/2 Tsp salt
🥗1/2 Tsp black pepper powder
🥗1/2 Tsp red chilli powder
🥗1 Tsp veg biryani masala
🥗Sauté on low flame for 2-3 min
🥗Add boiled rice and mix thoroughly
🥗Squeeze half lemon
🥗Garnish with coriander

🥗Stir till carrots are partially cooked

🥗Add chopped dry fruits - pistachios, almonds and cashews

🥗Add 1/2 Tsp Roasted Cumin Powder
🥗1/2 Tsp chaat masala
🥗1/2 Tsp rock salt/kaala namak
🥗Adjust salt according to other spices
🥗Mix and sauté for 4-5 min on medium flame
🥗Add 3 Tbsp coriander chutney
🥗Squeeze 1/2 lemon juice
🥗Mix thoroughly
🥗Garnish with coriander leaves and serve

🥗Cut pizza base horizontally into half and remove upper half
🥗Spread liquid cheese generously
🥗Stick the upper half
🥗Spread pizza sauce
🥗Spread mozzarella cheese on top
🥗Add vegetables - capsicum, tomatoes and onions
🥗Top with 3 cheese slices
🥗Cook in OTG at 200 degree for 15 min
🥗Cut into slices
🥗Sprinkle oregano, mixed herbs and other seasoning.

Here's a plate of tricolor pasta🤩

Red sauce pasta, White sauce pasta, Pesto pasta (All penne)
1. Boil two cups of penne pasta, add 1 tbsp oil and salt according to taste.
2. For red sauce pasta: Add 1 tbsp butter to a pan, add 1 tsp olive oil, heat it, add 1 tbsp red pasta sauce, 1 tbsp tomato ketchup, stir it and add oregano, black pepper, salt to taste and chilli flakes, mix everything together, now add 1/3rd of the boiled pasta and give it a good mix for around 2-3 min on low flame.
3. For white sauce pasta: Heat 1 tbsp butter in a pan, pour 3-4 grated garlic and little ginger, add 1 tsp flour, mix it together to form a creamy texture, now add 1/3 cup milk and keep on stirring till it becomes creamy, add grated cheese (or 1 cheese slice and mix), now add oregano, black pepper, salt and chilli flakes, pour 1/3rd of bolied pasta and mix well for 2-3 min (consistency can be altered by adding milk).
3. For pesto pasta : Heat 1 tbsp butter to a pan, add 2-3 grated garlic cloves, add 1 tbsp pesto sauce, black pepper, oregano and salt and stir it well for around 2 min, add grated parmesan cheese and mix well, now add the remaining pasta and give it a good mix.
Top all the pasta with grated cheese and you now have a plate ready with tricolor pasta.❤️

Crispy corn sunday 😋
Recipe 👇🏻👇🏻
1. Boil frozen sweet corn with a little salt (I took 1 cup).
2. Chop one medium size onion, two green chillies, 3-4 garlic cloves, grate little ginger, one medium size capsicum, one small tomato, spring onion for garnish.
3. In a bowl take one tbsp corn/rice flour, add little water, salt according to taste, chilli flakes, oregano, black pepper, very little chaat masala and make a not too liquidy paste ( so that it can coat sweet corn well).
4. Coat all the sweet corn with the above paste and keep it in freezer for around 15-20 min ( you can skip this, this is to make it more crispy).
5. Fry sweet corn in hot oil, cover the lid. If you are not covering the vessel then make sure to stay away from the flame as sweet corn might pop out. Fry till its crispy.
6. In a pan heat little oil, add ginger and garlic cloves, when you can smell the flavor, add onion and green chillies and saute for 2 min, now add capsicum and again saute for 2 min.
7. Now add tomatoes and 1 tsp of oregano, chilli flakes and back pepper according to your preference of keeping it spicy.
8. Add 1 tbsp tomato ketchup and let it cook for another 2 min (Green chilli sauce and red chilli sauce are optional).
9. Add fried corn and saute on low flame for 1-2 min.
10. Garnish with chopped spring onions.
NOTE: Ignore the Diping and you have a vegan dish as well 😌

𝐂𝐡𝐢𝐜𝐤𝐩𝐞𝐚, 𝐪𝐮𝐢𝐧𝐨𝐚 𝐚𝐧𝐝 𝐯𝐞𝐠𝐞𝐭𝐚𝐛𝐥𝐞 𝐤𝐞𝐛𝐚𝐛 ( 𝐈𝐧𝐝𝐢𝐚𝐧 𝐬𝐭𝐲𝐥𝐞)😋
I have mentioned that I am quiet new to vegan food and learning same whenever I get time 😇
So this weekend I tried these tasty kebabs 😋
Recipe 👇🏻👇🏻👇🏻
1. Soak 1 cup chickpea for 7-8 hours and boil it.
2. Wash and boil 1/4 cup of quinoa.
3. Boil green peas and sweetcorn (both 1/4 cup).
4. Grate 1 medium size carrot, half capsicum, 1 medium size onion.
5. In a mixer, grind chickpea, quinoa, green peas and sweetcorn.
6. In a mixing bowl add all the vegetables and mix from grinder.
7. Add salt according to your taste, 2 finely chopped green chillies, black salt, cumin powder, chaat masala, garam masala ( half tsp), 1 tsp corn/rice flour.
8. Make kebab shape and heat pan.
9. Keep it on pan on medium flame and cover the lid, when it gets roasted on one side, flip it firmly and roast on other side. Add little oil on its surface.
The kebabs are ready to be served ☺️

Homemade Cheese Garlic bread 😋
Make super tasty garlic bread by following below steps(Swipe to see) 👇🏻👇🏻
1. Take butter, crushed garlic and coriander in a bowl.
2. Add salt, black pepper powder, oregano, chilli flakes according to your preference and mix firmly.
3. Take bread slices, apply the mixture on outer edges of bread ( which gets toasted) and stuff inside with cheese, sweetcorn (optional).
4. Toast it on medium flame on a pan and let it get crispy 😋
5. Cut into pieces and serve hot.

I have been keeping very busy since last few weeks, I really want office to resume 😣, been doing more work than before, so thought of keeping this weekend all to myself and cooking something really good so make this 𝐏𝐚𝐧𝐞𝐞𝐫 𝐏𝐚𝐬𝐚𝐧𝐝 𝐰𝐢𝐭𝐡 𝐁𝐮𝐭𝐭𝐞𝐫 𝐍𝐚𝐚𝐧 and yes it was worth it 😋

Panner -
Boil half litre milk ( any type) and keep on adding lemon juice at little intervals and stirring at the same time.
Once you see water ( greenish) separating from the paneer it's ready!.
Strain water (can be used to knead dough as it serves whey purpose) and hold paneer in a muslin cloth and keep a heavy vessel on top of it.
Gravy for pasanda -
Roughly chop two onions, two tomato, 4-5 garlic cloves, little ginger, 7-8 cashews.
In a pan heat butter with mustard/vegetable oil, add cumin seeds, a pinch of asafetida, after cumin seeds start to splutter, add garlic, onion and ginger, saute till onion turns translucent, add tomatoes and sautéed till tomatoes turn mushy.
After the mixture cools down, make the puree in a mixer.
Heat 1 tbsp butter and add half tsp coriander powder, half tsp turmeric powder, 1 tsp kashmiri red chilli powder.
After around 5-7 sec add puree and keep on stirring occasionally till oil separates from gravy.
Add kasturi methi and 1-2 tbsp cream.
Mix paneer cubes and it's ready to be served

Finally after standing in a que for 20 minutes I was able to find some fruits, definitely a treasure 🤭

My routine is literally disturbed, compared to the time when Saturday was the day to cook something special, it has totally changed with Saturday being the relaxing day to cook something easy so that I can relax and think of what to cook for dinner 😜

By the wayto my surprise I am trying to learn more about vegan dishes and yes it is one of them😋
Recipe ⏬⏬
1. Pour some oil in a cooker/vessel you use to cook rice, add 1-2 bay leaves, 2 cloves, salt, let it cook and rest for sometime such that each rice strand separates itself.
2. Chop a medium size onion, one medium size capsicum, (half red and yellow bell peppers), two medium size tomatoes, 2 green chillies, wash half a bowl of green peas.
3. Pour 1-2 tbsp oil(olive/rice bran oil for healthier version), once it heats up add 1 tsp cumin seeds,a pinch of asafetida, add onions, green chillies, 1 tsp ginger garlic paste and let it cook for 2-3 minutes, now add capsicum, let it cook for 2 minutes, add tomatoes and salt according to taste and cook till tomatoes turn little mushy.
3. Now add 2 tsp pav Bhaji masala and let it absorb the flavour, add little water and green peas and let it cook for 2 min, add half tsp garam masala, half tsp cumin powder, half tsp black pepper powder and let it cook for 1 min
4. Now add the rice, mix generously and let it cook for around 2 min.
5. Turn down the flame, garnish with coriander and serve hot.
