𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
2 cups shredded cheddar
1 tbsp. extra-virgin olive oil
1 small onion, chopped
3 cloves garlic, minced
1 lb/ 450g. ground beef
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. paprika
Kosher salt
Freshly ground black pepper
Sour cream, for serving
Diced avocado for serving
Freshly chopped cilantro, for serving
Chopped tomatoes for serving
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
Preheat the oven to 375°F/ 190°C and line a large baking sheet with parchment paper. Spoon about 2 tablespoons cheddar a few inches apart. Bake until bubbly and edges are beginning to turn golden (approx. 6 min). Set aside for 1 min.
Grease the bottom of a muffin tin with cooking spray, then gently pick up melted cheese slices and place them on the bottom of a muffin tin. Use your hands to help mold the cheese around the inverted tin.
In a large skillet over medium heat, heat oil. Add onion and cook, occasionally stirring, until softened, about 5 minutes. Stir in garlic, then add ground beef. Cook until beef is no longer pink (6 min), then drain fat.
Return meat to skillet and season with chili powder, cumin, paprika, salt, and pepper.
Transfer cheese cups to a serving platter. Fill with cooked ground beef and top with sour cream, avocado, cilantro, and chopped tomatoes.

5 mini peppers, sliced in half (I buy these at Trader Joe’s)
1/2 cup tomato basil sauce
1/2 cup mozzarella, shredded
6 slices applegate turkey pepperoni, cut into small circles with a 1/2-inch cookie cutter (or into triangles with a knife)
1. Preheat oven to 400 F.
2. Spoon 1 tablespoon tomato basil sauce into each pepper half and top with 2 tablespoons cheese and 2 mini pepperoni. Bake for ~10 minutes, until hit and bubbly.

INGREDIENTS
For the cookies:
3/4 c. almond flour
1/3 c. black cocoa powder
1/3 c. granulated Swerve/sweetener
2 tbsp. coconut flour
1 tsp. kosher salt
1/2 tsp. (gluten-free) baking powder
1/3 c. vegetable oil
1 large egg
1 tsp. pure vanilla extract
For the filling:
1/2 c. (1 stick) butter, softened
3/4 c. powdered Swerve/sweetener
1 tsp. pure vanilla extract
DIRECTIONS
Make cookies: In a large bowl, mix together almond flour, cocoa powder, Swerve, coconut flour, salt, and baking powder. Add oil, egg, and vanilla and mix until combined. Shape into a disc, then wrap in plastic wrap and refrigerate until firm, 2 hours.
Preheat oven to 350° and line a large sheet tray with parchment paper. Lightly dust a clean surface with cocoa powder and roll out dough ¼" thick. Cut out cookies with a 2" round cookie cutter.
Place cookies on prepared baking sheet. Bake until slightly firm to the touch, about 14 to 16 minutes. Let cool.
Make filling: In a large bowl using a hand mixer, beat butter until smooth. Add Swerve and beat until combined, then mix in vanilla.
Spread filling on one side of cookie and place a second cookie on top. Repeat with remaining cookies..

Whether you’re a matcha lover or coffee addict, it’s great to have a sense of where your caffeine intake is landing. Lastly, herbal teas are a great way to enjoy a delightlful drink without adding extra caffeine to your day. The tea all the way on the right is rooibos which has some small but interesting antioxidant benefits.
Also keep in mind that caffeine levels will vary by amount and brand so double check with your local coffee shop or brand if you’re looking for the exact amount of caffeine in your drink.

Peel and de-tail the shrimp. In a heated pan add some butter and olive oil. Next add your shrimp to the pan and cook through, than transfer to a plate. In the same pan add a little more oil and sauté sliced zucchini. Before the zucchini is done add the shrimp back to the pan, with fresh minced garlic, salt and pepper than sauté together for another minute or two.
