Cake mixing is not a contemporary practice but rather an old one which started back in the 17th century. Back in the 17th century cake mixing was done to mark the arrival of harvest season. People back then even used to save up the mix for the coming year in the belief that it would bring another abundant year.

The tradition of cake mixing actually began in Europe where it was an intimate family affair. The family members would gather after the harvest season to celebrate and share the happiness of the upcoming Christmas and the New Year seasons.

Year after year, our teams relive this age old tradition by celebrating the momentous ceremony of cake mixing with our extended family of guests and sharing smiles.

Roselle plant can be best defined as nature's all-inclusive gift packed in one package. From its fleshy calyces, flavourful leaves, and nutrition-dense and colour-imbuing flowers to its seeds capsule, roselle has extensive culinary use.

In India, people often know it as Lal Ambari. Robust, refreshing and restorative, the roselle flower is gaining popularity for its health benefits as we understand more of its great . The roselle plant, or hibiscus sabdariffa, is a shrub that was probably native to the region from West Africa to Sudan, but is now grown in many tropical countries.

Its leaves, seeds and roots are cooked in traditional dishes across Asia and Africa, while its calyces are used to make red food colouring, james, juices and craft beverages. When dried, the roselle flower can be eaten as a fruit or used to make tea. Roselle leaves are a source of fiber to regulate the digestive tract and have been used in India in Ayurveda as a natural remedy for digestive issues. Roselle leaves have a tart, vegetal, and sour flavor well suited for fresh and cooked preparations. The leaves can be consumed raw and are often added to salads as a bright flavoring.

As a special experience, guests can book a popular 'Farm Dinner Meal', under the star-studded night sky, set in a village-like set up next to the sprawling organic garden. The mini-village concept highlights the menu, which is primarily local, cooked using earthenware black clay pots in a tandoor and an open hearth with firebricks to create a chulha over it.

Being in jungles come with its own set of restrictions, where sourcing bare essentials sometimes becomes a herculean task. The best way we have discovered to combat such situations is to become self sufficient and extensively utilize our in-house produce across our lodges.

Passion for wildlife is addictive and easily rubs on to every one.

Our team across lodges couldn't escape this addiction either, and we have witnessed our team members getting good at it with each passing day, be it chefs from our kitchen or members of our house keeping teams.
