semi-dried tomato & hommus baked pasta!
RECIPE (serves 1)
Ingredients
โข 100g (raw) chicken breast, diced
โข 60g (raw) Vetta protein pasta
โข 40g Obela Hommus*
โข 100g cherry tomatoes
โข 25g Sandhurst 99% fat free Semi Dried Tomato Strips
โข 10ml olive oil
โข 1-2 garlic cloves
โข Fresh basil
โข Lemon juice
โข Dried oregano
โข Dried rosemary
โข Salt & pepper
Method
1. Preheat oven to 180 degrees. In a baking dish, add the chicken, cherry tomatoes, garlic and olive oil, toss to combine.
2. Make a well in the centre and add the hommus. Top with a sprinkle of oregano and rosemary. Bake for 30-40 mins.
3. In the meantime, cook the pasta and reserve ยผ cup pasta water.
4. Once the tomatoes & chicken are cooked, carefully mash the tomatoes with a fork then mix everything together.
5. Add in the pasta, fresh basil, semi-dried tomatoes, pasta water, a squeeze of lemon juice, salt and pepper. Mix together and enjoy!
