semi-dried tomato & hommus baked pasta!

RECIPE (serves 1)
Ingredients
โ€ข 100g (raw) chicken breast, diced
โ€ข 60g (raw) Vetta protein pasta
โ€ข 40g Obela Hommus*
โ€ข 100g cherry tomatoes
โ€ข 25g Sandhurst 99% fat free Semi Dried Tomato Strips
โ€ข 10ml olive oil
โ€ข 1-2 garlic cloves
โ€ข Fresh basil
โ€ข Lemon juice
โ€ข Dried oregano
โ€ข Dried rosemary
โ€ข Salt & pepper

Method
1. Preheat oven to 180 degrees. In a baking dish, add the chicken, cherry tomatoes, garlic and olive oil, toss to combine.
2. Make a well in the centre and add the hommus. Top with a sprinkle of oregano and rosemary. Bake for 30-40 mins.
3. In the meantime, cook the pasta and reserve ยผ cup pasta water.
4. Once the tomatoes & chicken are cooked, carefully mash the tomatoes with a fork then mix everything together.
5. Add in the pasta, fresh basil, semi-dried tomatoes, pasta water, a squeeze of lemon juice, salt and pepper. Mix together and enjoy!

While we know Nutella has a strong cult following that is probably going to be hating on us after this post, we wanted to compare it to good ol' fashion natural peanut butter, the latter of which is a much healthier alternative in almost all aspects of nutrition! The peanut butter option has fewer calories, significantly less sugar, more fiber, and double the protein on top of being more nutrient-dense! As a result, especially considering the higher amount of protein and fiber, it is significantly more filling than Nutella, leading you to be fuller for longer!โ €

There are much healthier alternatives than Nutella despite how tasty it is! Perhaps scrapping it for peanut butter for example can be a viable option for a much healthier snack!โ €
