Egusi soup
Before you embark on your Egusi Soup adventure, gather these essential ingredients:
2 cups of Egusi (melon) seeds, ground
assorted meats (chicken, beef, or goat meat), cooked and roasted
spinach chopped
1 cup of palm oil
2 medium-sized onion, finely chopped
4 scotch bonnets,
2 chilli peppers
2 long bell peppers/tatshe
Dry Catfish (Optional)
4 cups of stock or water
Spices for Egusi
1 teaspoon of iru (locust beans, optional)
Seasoning cube
Salt
2 tablespoons of ground crayfish
2 teaspoons of Cameroon pepper

HOW TO COOK BEANS LIKE A PRO
1. Soak your beans for 1-2hrs before cooking. This softens the beans and makes it cook within the shortest possible time. Do not waste your gas, kerosene or firewood any more. Another good news? It reduces the effect of the chemicals used to store it so no more stomach pain after eating beans.
2. Do not add any item to soften your beans like Akanwu, nails, coke, etc. Haba, do you want to kill your self by your self?๐ญ๐ญ๐ญ. Let me tell you, these things actually affect the taste and texture of your beans. Just follow step 1 and you are good.
3. Parboil and wash off before the actual cooking. This further reduces chemical content so bye bye to stomach ache.
4. Allow your beans to soften well first before you add any ingredient. You can only add salt after parboiling and washing. Once you're ready to cook finally, add salt. It enhances the taste of the beans.
5. Add enough crayfish, onions and red oil. These are the live wires of beans. They bring out the best in any bean dish. They enhance the flavour, color(presentation) and taste of any bean dish.
6. Compliment your beans with animal protein like fish and meat if available, otherwise, your crayfish has served the purpose( animal na animal abi?) Also compliment your beans with a carbohydrate source to ensure your food is well balanced. You can use plantain, yam,rice, garri , pap or any cereal of choice. Either cooked with them or served with them.
You can also add a dash of veggies like curry leaves or scent leaves to create that unforgettable aroma and taste.

Another way to make stew as tomatoes don cost
Just go to the market and buy cucumbers and use it inplace of tomatoes,believe me it taste very nice, buy cucumber,onions and fresh pepper and your delicious stew is ready
Just blend the cucumber,onions and pepper together,if you want you can also add tatashe or shombo to make it red,just a little bit
So all you need is fry the blended cucumbers,onions and pepper the same way you fry your tomatoes, after that add your meat/fish stock and other spices,allow it to cook for some time and then put the pot down,your delicious stew is ready
Believe me this is delicious and very healthy, a healthy alternative to tin tomatoes,just try it and see how it goes, y0u will really love it.

I have not been pained like this before ๐ญthis one got me broken. After spending 17k for a pot of soup plus time wasted , I woke up 5am to meet it soured๐ญ
At first , I accused my children of pouring the soup in the fridge because at sight , I was provoked seeing a bucket of soup well covered being messed . They told me they never came to the fridge . What made me more confused was that I was the last person that went to that fridge before going to bed .
With a tensed mind , I opened the bucket of soup only to find out it soured ๐ญ
You deprived me gymnastics and even businesses all because I was making sure I gave you a good taste ๐ฅฒ
I turned down going to my children school to get a new pair of their school shoes and uniform for my sons ๐ฅฒ
You relived me of my early morning sleep just to make sure you came out deliciously ๐ฅฒ
If I had known, I wouldnโt have spent that much taking care of you ๐ฅฒ
If I had known , I would have eating dished at least 4-5 pieces of meat to everyone in the house including my dogs ๐
If I had known, I wouldnโt mind eating ๐ฅฃ akpu as a whole 3 square meal yesterday ๐ฅฒ just to make sure I enjoyed you to the brim ๐ญ
If I had known , I would not have told anyone to assist me to dish out the soup in the fridge ๐ฅฒ
If I had known , I wouldnโt have attended that church meeting that took 5hrs from me without yielding any results ๐ญ
If I had known , I wouldโve called my husband to turn on generator if the fridge was not cold enough to sustain the soup ๐ญ
๐ญ๐ญ๐ญhad I know always comes last ๐ญ๐ญ
The worse of it all was that why trying to warm it just to see if anything good will come out of Nazareth, my gas finished ๐ญ๐ญ๐ญ๐ญ

Egusi soup
Ingredients:
4 cups Egusi
3 cooking spoons red palm oil
Beef: best cut and Shaki (cow tripe)
Fish: dry fish and stockfish
2 tablespoons ground crayfish
Pepper and Salt (to taste)
Vegetable: pumpkin leaves, spinach or bitter leaf
3 small stock cubes
1 small ogiri okpei (optional)
Note: You may need more palm oil; You want the quantity of palm oil that will turn every grain of the ground egusi yellow. If you use chicken, please do not use dry fish and stockfish because those two can't co-exist with chicken. If you're using bitterleaf, add it a bit earlier because it is a tough vegetable; perboil your meat, fish or chicken using your favourite egusi soup spices.
Cooking time!
-Pour the red palm oil into a dry pot and set on the stove to heat. As soon as the oil melts, add the ground egusi and start frying.
-Mix the ground egusi with oil till every grain of egusi turns yellow. Stir for about 10 mins.
-Add the meat/fish stock (water from cooking the fish and meat) little by little while still stirring the egusi.
-Add your already washed or cooked stock fish; stir gently and add water if soup is too thick.
-If your choice of vegetable is bitter leaf, add it at this time.
-Cover the pot and cook for 20 mins, stir. Also, top up the water when necessary.
-The egusi is done when you notice that the oil has separated from the mix.
-Once you are happy that it is done, add the ground crayfish and pepper. Stir and add the pumpkin leaves or spinach.
-Stir very well and add the cooked stockfish, shaki and meat.
-Add salt if necessary. If it is too thick, add some water to bring it to a consistency you like.
-Cover and leave to simmer and it is ready
-Serve with your favourite swallow...๐

You can blend it with ginger et garlic
Heat up your oil
Fry the onions for about 5 minutes
Then add your tomatoes base
