Cast iron pans DON'T heat evenly
The Theory: Searing steaks and frying potatoes requires high, even heat. Cast iron is great at searing steaks, so it must be great at heating evenly, right?
The Reality: Actually, cast iron is terrible at heating evenly. The thermal conductivity—the measure of a material's ability to transfer heat from one part to another—is around a third to a quarter that of a material like aluminum. What does this mean? Throw a cast iron skillet on a burner and you end up forming very clear hot spots right on top of where the flames are, while the rest of the pan remains relatively cool.
The main advantage of cast iron is that it has very high volumetric heat capacity, which means that once it's hot, it stays hot. This is vitally important when searing meat. To really heat cast iron evenly, place it over a burner and let it preheat for at least 10 minutes or so, rotating it every once in a while. Alternatively, heat it up in a hot oven for 20 to 30 minutes (but remember to use a potholder or dish towel!)
The other advantage is its high emissivity—that is, its tendency to expel a lot of heat energy from its surface in the form of radiation. Stainless steel has an emissivity of around .07. Even when it's extremely hot, you can put your hand close to it and not feel a thing. Only the food directly in contact with it is heating up in any way.
Cast iron, on the other hand, has a whopping .64 emissivity rating, which means that when you're cooking in it, you're not just cooking the surface in contact with the metal, but you're cooking a good deal of food above it as well. This makes it ideal for things like making hash or pan roasting chicken and vegetables.

WHY STAINLESS STEEL IS STILL AMAZING FOR COOKWARE
Stainless steel is a very versatile material when it comes to cookware. It has some inconveniences, of course, but if you are able to get the best quality grade then you can cook amazing dishes. Stainless still does not readily work on induction cooktops unless you get a magnetic grade stainless steel or one that has been made induction ready by adding a copper core to the base or other inductive material.
Always be certain you are getting an 18/10 stainless steel. Meaning it is composed of 18% chromium and 10% nickel. This grade of stainless steel has high durability. It does not react with any food and the sufface is not porous for food particles to stick inside. A great chef would know to always preheat the pan before starting to cook, this way you get an almost non-stick experience with the safest cookware there is.
Stainless steel is very popular which means there are a lot of substandard cookware with the label stainless steel on them too. If you choose stainless steel, be careful not to get a raw deal.
YOU SHOULD CARE WHAT TOUCHES YOUR FOOD.
Risks remain when talking about food contact items. Choosing what utensils to use is a very important decision. Being cookware, it is inevitable that such items will be in direct contact with food. Anything that is considered “food contact”, should be subject to stricter safety requirements, especially on the material used to make it. Food touching parts of a cookware product should be completely free of toxins.
Ensure that the coating of the cookware on the side that touches food is safe. Aluminium for example, might lead to aluminium exposure when you use it in high heat setting or when you are cooking acidic foods. This can sometime lead to very serious diseases.
Non-stick pans also become toxic once the coating starts to flake off. Most of the affordable non-stick pans around the world are coated with partly Teflon and then laced with perfluorooctanoic acid. These substances are harmful to the body when they are ingested. wins again.
