RECIPE ALERT!
Decadent Chocolate banana cake.
In a mug, mash up 1 Big ripe banana.
Add 3tsp of peanut butter and mix in.
Add one egg and mix in.
Add 2tbsp of sugar
3tbsp of unsweetened cocoa powder.
Pop into microwave for about 1:30 seconds on high.
Enjoy.
RECIPE ALERT:
Matoke.
1/2 kg nduma/arrow roots peeled and cubed into big chunks
1Kg potatoes
2/3 matoke bananas peeled
2 tomatoes diced
1 big onion diced
1 tbsp tomato paste
1 tbsp curry powder
1/2 tsp turmeric powder
Directions:
Fry your onions lightly, add curry powder and stir to cook on a low heat for 30 seconds.
Add your tomato paste and cook for a minute.
Add your tomatoes and cook until well done. Cover pan for this process. Add your turmeric then add your potatoes, arrow roots and bananas. Add water until it covers them. Add salt to taste then cover and cook on high heat for 15 minutes then reduce heat and cook for 5-10 minutes or until arrow roots are soft. Turn down heat and let it cool before serving.

Banana and chocolate pancakes.
Ingredients
1 and a 1/2 cups of flour
3 tablespoons of sugar
3 tablespoons drinking chocolate powder.
1 tablespoon of baking powder
1/4 teaspoon ginger powder
1/4 teaspoon cinnamon powder
1 cup milk
1 cup water
2 bananas sliced.
Mix your dry ingredients in a bowl.
Add your wet ingredients, mix thoroughly until there are no flour lumps.
Then add your bananas and mix gently in.
Fry on a hot pan until well done.
Serve hot and enjoy all the yum.

NJAAnuary is here.
That month where we all make resolutions because we over spent in December and now we are broke. Every day of the moth feels like a Monday and money is not enough.
But don't worry, I've got you. I've got some great, delicious easy and really cheap recipes that you can make and pack up for lunch to help you get by.
So, don't forget to join me tomorrow as I show you some easy, delicious lunch ideas.

Tips on how to make perfect choma.
1. DON'T split your meat into small bits. Roast it whole.
2. Let your coal burn through until it has the white ash coating.
3. Extinguish flare ups (when you see a flame on the grill) to prevent burning and charing.
4. Make a good marinade. You can make a simple marinade by mixing 5 tbsps os oil, 1/2 cup of water, 1 tablespoon of ginger and garlic paste, 1 tsp of soy sauce, 1/2 tsp of turmeric, 1 tsp of cumin powder .
5. Let your meat rest for about 10 minutes before slicing. This ensures that all the juices are re absorbed and the meat doesn't dry out.

Spicy eggs, chapati wrap.
Ingredients:
2 chapatis.
2 eggs
1 grated carrot
1 onion
1 diced tomato
1 green bell pepper (Pilipili hoho)
Half an egg plant
1/4 tsp black pepper
1/4 tsp chilli (adjust to preference)
Salt to taste
1 tbsp oil
Method:
Dice onions and egg plant and fry in a pan until soft.
Add your diced tomato and cook in.
Add your chilli, black pepper and salt.
Add your sliced bell pepper and stir in.
In a bowl, mix your grated carrot and eggs.
Add to the pan and stir in. Cook for 2 minutes on a low heat.
Spoon on a warm chapati and roll.
Enjoy with your favourite breakfast beverage.
Difficulty level: Easy
Delicious, easy breakfast. Perfect for slow, lazy mornings.
*RECIPE ALERT*
SPICY BARBECUE CHICKEN.
Ingredients:
10 chicken thighs and wings.
1 tbsp mixture of minced garlic and ginger paste.
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1 tbsp black pepper
1 tsp turmeric powder
Pinch of chilli powder
2 tbsp soy sauce
4 tbsp olive/vegetable oil
2 cups water
Method
Mix all the ingredients in a bowl making sure there are no lumps of dry spices.
Place your chicken pieces in a bowl and pour in your marinade mix.
Let your chicken sit in the marinade for 3 minutes or preferably overnight (in a refrigerator.)
Make sure your chicken has come back to room temperature before grilling.
Place your chicken pieces on a hot grill and grill as you baste with the marinade solution and turn.
Be careful to avoid charring and burning.
Serve with your favourite hang out drink.
NB: This recipe can be used to grill a whole chicken.

*RECIPE ALERT*
SWEET AND SOUR PINEAPPLE CHICKEN.
For the chicken:
1 whole chicken diced into bite sized pieces.
1 cup plain wheat flour (not self raising)
1tsp salt
1 tsp ground black pepper
2 cups of vegetable oil.
Β½ tsp chilli powder.
Directions:
Mix all your dry ingredients in a bowl and water while mixing until you have a thick batter.
Pour your batter into the chicken and mix well making sure you cover all the pieces.
Heat your oil in a pan until hot. Drop your chicken pieces and drop. Fry in batches until golden brown.
Remove and set aside.
For the sauce:
1 small juicy ripe pineapple diced into chunks.
500 ml of pineapple juicy (Blend 1 cup of pineapple and 1 cup of water).
5 tablespoons dark soy sauce.
1 tbsp sugar
1 tbsp honey (Optional)
1 big red bell pepper cut into strips.
1 big green bell pepper diced.
1 tsp chilli powder.
1 tbsp Minced Garlic and ginger paste.
4 tbsp ketchup.
Salt to taste.
Directions:
Drain out excess oil from your pan and leave about 3 tbsp.
Heat the oil, add your your ginger and garlic paste. Cook for 2 minutes.
Add your honey, sugar, salt, ketchup and chilli. Cook on a low heat for 2 minutes stirring.
Add your bell peppers and cook for a minute until slightly soft.
Pour in your pineapple juice, pineapple chunks and soy sauce. Turn heat to high and bring the sauce to boil.
Once the sauce starts bubbling, reduce your heat to a low flame, add your fried chicken pieces and stir in for a minute making sure all the pieces are coated.
Turn of heat and let it stand for about 2 minutes for the chicken to absorb the sauce.
Serve hot with a plate of rice.
