Taleggio cheese is a semisoft, washed-rind, smear-ripened Italian cow milk cheese that is named after Val Taleggio. One of the favorite cheese of any talented chef. It has a thin crust and a strong aroma, but its flavour is comparatively mild with a sweet fruity tang.

We top that with our home made confit onions cooked as slow as possible, to make it as melty as possible.

The rainy season is on, so we thought about mushrooms. A duxelles of button mushrooms and morels, gently sauteed with butter. Our freshly ground beef patty, cognac bun, truffles on the spread, provolone cheese and some chopped green onions !
