Invented in 1949 by George Lerner of Brooklyn New York and originally as parts to stick in real potatoes & changed to the plastic body in 1964

Why am I telling you about Mr (Hasbro removed the honorific in 2021) Potato head ?

Well, potatoes aren't all that interesting to most people so it's an introduction to me telling you about the potatoes I use to make my ever popular signature skin on triple cooked chips and an excuse to use an eye catching photo.

They come from Mondulkiri province in the north east of Cambodia that borders Vietnam & the variety I use costs approximately double other varieties available but are consistently the best quality for making my chips with.

They are washed, chopped, soaked, drained, dried, blanched, drained, dried, fried, drained, dried, fried, drained & finally they get tossed in Himalayan pink rock salt before serving.

There is absolutely nothing put on the chips before, during or after cooking except the salt.

No batter, no flour, no cornstarch, no potato starch & no dextrose (McDonald's) added.

An enormous amount of work but hearing your feedback how much you like them means a lot.

They are intended to have the subtle flavour of the skin, be much darker in colour than frozen French fries and retain a soft texture both inside and out. They have the gentlest crisp more noticeable dine in when they get air than via delivery. Even packaged in paper bags as we do rather than boxes they will obviously soften in 10-20 minutes from kitchen to plate.

Times are still very tough for tourism related businesses like tuk-tuks, hotels, restaurants & bars in Siem Reap as recent closures show.

Khéma didn't open it's doors in 2024 😳😬🫣

Whilst tourist numbers are up based on Angkor Wat ticket sales & standing at double 2022 they're still only 1/2 of what they were in 2019

4-months into my 5th year & 7th month at my new much bigger/better location I want to reassure all my lovely loyal customers like you that Joe's isn't for sale or going anywhere 💪

My 5 plans for 2024 are very simple :

Continue the same consistency, quality & value on all my food without reducing any portions.

Employ one more member of staff after KNY. (hope my 15-year old niece from the village)

Add some great new dishes to the menu.

Continue to slowly improve the garden and decor to make it even more enjoyable to see.

Extend the bar hours Friday, Saturday & Sunday nights because I've a huge bar area, big TV & great music system plus regular customers keep hassling me to get out of the kitchen & socialize more...........we shall see 🫣😄 🍷🍺

Thank you to everyone who orders it's been an amazing year for me with my new location, new staff & joining Foodpanda but especially to my loyal customers via Nham24 who have left a whopping 1400 reviews with a rating of 4.9/5.0

You've enabled me to employ some amazing staff who are both fun & hard working.

Pac is my 2nd in command (sous chef), he's 19 years old from Kulen area and he came to me via an NGO called friends international who sponsored his residential training with them for 3-months before coming to me 8-months ago

Chani is my cousins daughter from my home village near Sangkor in Kampon Thom province and is 17 years old. She is responsible for most of the prep work, cleaning, packaging & taking orders to the delivery drivers (commis chef) & has been with me since I moved to the new place in May as she originally came to assist her dad doing construction work and fell in love with both Siem Reap and kitchen work.

Both live in and get all expenses paid ensuite rooms each, all their meals, very competitive salaries plus equal share of tips.
(As the owner I don't take any tips)

Last but by no means least is Houern who meets you, greets you, seats you, takes your order & sorts your drinks when you visit. He's local to Siem Reap living in Cheav village where he is a rice farmer when not at Joe's. He's also been with me since I moved to the new place in May and funnily enough he worked here for several years when it was the previous tenants Georges Rhumerie on site.

Hopefully in the new year my 16 year old niece (my sister's oldest daughter) will come from my home village to live with me for much better schooling (she's just finished year 10) and work part time evenings & weekends.
