If you're having a long day at work and don't want to eat out (because you don't know if the veggies are cleaned and sanitized enough or food is prepared with lots of fat!!), here are 2 easy recipes that you can prepare ahead of time and that will keep you well nourished and full of energy during the day.

🥗 Recipe of the quinoa salad (1 serving):
1/2 cup cooked quinoa
2 cups shredded lettuce
1/2 cup cherry tomatoes
1 cup grilled cauliflower
2 tbsp pumpkin seeds
100g goat halloumi
For the dressing:
1 tsp olive oil
2 tsp lemon juice
2 tsp balsamic vinegar
1 tsp mustard

Nutrition facts: 492 kcal, 29g fat, 35.4 g proteins, 57.3g carbs & 12.5 g Dietary fibers

🥤Recipe of the smoothie (1 serving):
100g coconut milk
1/2 cup mixed berries (or strawberries)
2 tbsp crushed oat flakes
1 tbsp chia seeds
1 tbsp roasted almonds
1/2 banana
1 tsp cinnamon

Method:
Use a blender to mix the coconut milk and berries.
Add the mixture to a jar and add the chia seeds and leave in the fridge overnight.
Add the rest of the ingredients just before consuming.

Nutrition facts (per serving): 412 kcal, 34g fat, 9 g proteins, 44 g carbs & 11 g Dietary fibers.
