Nuts and Murukku
Ingredients:
For the Cake:
1 cup (200g) all-purpose flour
3/4 cup (150g) unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (113g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup (240ml) buttermilk
For the Toasted Hazelnuts:
1 cup (150g) raw hazelnuts
For the Chocolate Ganache:
8 ounces (226g) semisweet chocolate, chopped
1/2 cup (120ml) heavy cream
1 tablespoon unsalted butter
Instructions:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
Toast hazelnuts: Spread hazelnuts on a baking sheet and toast in the preheated oven for 8-10 minutes, stirring occasionally, until lightly browned and fragrant. Let cool slightly, then roughly chop. Reserve ½ cup for decoration, and grind the remaining ½ cup to a fine flour using a food processor or coffee grinder.
Whisk dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
Cream butter and sugar: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
Combine wet and dry ingredients: Alternately add the dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined, do not overmix.
Fold in hazelnuts: Fold in the ground hazelnuts gently.
Divide batter and bake: Divide batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool cakes: Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Make ganache: While cakes cool, prepare the ganache. In a medium saucepan, heat heavy cream and butter until simmering. Remove from heat and add chocolate. Let sit for 5 minutes, then stir until smooth and glossy.
Assemble and decorate: Once cakes are cool, place one cake layer on a serving platter. Spread half of the ganache over the top. Top with the second cake layer and spread the remaining ganache on top and sides of the cake. Decorate with reserved chopped hazelnuts.

Pongal Recipe 🌾🍯🌿
Ingredients:
1 cup raw rice
1/2 cup yellow moong dal (split and skinned)
1 cup jaggery (grated)
4 cups milk
1/2 cup cashews (split)
4-5 cardamom pods (crushed)
Instructions:
Wash and Soak: Rinse the raw rice and moong dal together under cold water. Soak them in water for about 30 minutes.
Cook Rice and Dal: In a large pot, add the soaked rice and dal along with 4 cups of milk. Cook on medium heat until the rice and dal are soft and mushy. Stir occasionally to prevent sticking.
Jaggery Magic: While the rice and dal are cooking, melt the grated jaggery in a pan with a little water to make a syrup. Strain to remove any impurities.
Sweet Addition: Once the rice and dal are cooked, pour in the jaggery syrup and mix well. Allow it to simmer for a few more minutes until the Pongal thickens.
Aroma Booster: Add crushed cardamom pods to the mixture, giving it a delightful aroma and flavor.
Cashew Crunch: In a separate pan, fry the cashews in a bit of ghee until golden brown. Add the roasted cashews to the Pongal mixture.
Final Touch: Continue to cook the Pongal for a few more minutes until it reaches a creamy consistency. Adjust the sweetness according to your taste.
Serve Warm: Your delicious Pongal is ready! Serve it warm and enjoy this comforting sweet dish with your loved ones. 🍚🌼
