Sunday calls for Danish Sourdough Rye Bread (Rugbrรธd).
This is a delicious and nutritious wholegrain bread. It is lower in gluten, has more fibre and keeps you fuller for longer.
It is by far the easiest sourdough loaf to make. No kneading, stretching or folding required.
It is just perfect for open sandwiches.
This loaf is incredible. The smell, the flavour, the diversity...using a blend of ancient sicilian stoneground flour from Mulino La Timpa โค๏ธ

Simple Saturday ๐ค
Basic sourdough boule with freshly milled whole wheat from 10-minute sourdough.
Sourdough kumquat and banana bread ๐๐
Ingredients:
1 cup kumquat
1 ripe banana
113g unsalted butter
142g brown sugar
1 teaspoon vanilla extract
2 teaspoons cake spices (cinnamon, nutmeg)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
120g sourdough starter discard
250g All-purpose flour
100g chopped walnuts/pecan nuts
Method:
Wash the kumquat, cut them in half and slice them. Place the sliced kumquat in a saucepan. Bring to a boil, then lower the heat and cook until the kumquat become transparent and the syrup thick. Remove from the heat and set aside to cool.
Preheat the oven to 160ยฐC and lightly grease a loaf pan.
In a bowl, combine the butter, sugar, vanilla, spices, baking soda, baking powder, and salt, beating until smooth.
Add the mashed bananas, kumquat and sourdough starter, again beating until smooth.
Add the flour then the nuts, stirring just until smooth.
Transfer the batter to the loaf pan. Let it rest for 10 minutes.
Bake the bread for 45 minutes, then lay a piece of aluminum foil across and bake for an additional 10 minutes.
Allow the bread to cool for 10 minutes in the pan. Remove it from the pan and cool completely on a rack.
