The years I spent living in Vienna, Austria, were like a fairytale. It was that exact time in life when you still naively believe that life is just as it appears on the surface. And it’s from this period of my life that the apple strudel I’m baking for you today comes.
As a student I saved up all week just so I could afford the apple strudel from Café Central on Sundays. I used to sit among the well-known figures of European society who loved visiting this restaurant and dream with a childlike innocence. It was an almost absurdly beautiful time in my life.
Never stop dreaming! It’s the most precious gift we, as humans, could ever receive.
Wishing you all a beautiful weekend, my dear ones!
Sonia.
Friends, I’m always delighted when I hear that our baked goods remind you of your childhood or the delicious treats your grandmothers used to make. Your praise is a true pleasure for me. However, I want to emphasize that this isn’t solely due to my efforts. Forty years ago, it was common for people to enjoy high-quality and flavorful foods. This is exactly why I founded Cozumel Orgánico: to revive those cherished traditions. In today’s fast-food era, the longing for authentic and genuine flavors is widespread, and from the beginning, I’ve wanted my home bakery to be a return to those beautiful traditions that continue to resonate within us. Thank you for allowing me to be a part of this wonderful legacy! I truly appreciate it.
Wishing everyone a beautiful Cozumel day!
Sonia

In a small alley of the town of San Miguel on the island of Cozumel, there’s a cozy bakery called Cozumel Orgánico . It’s run by Sonia, a woman from Central Europe who came here seeking a new home. Every day, Sonia lovingly kneads dough and bakes fresh bread and pastries, but deep down, she still misses the taste of true sourdough rye bread from back home.
One early morning, before the sun even rises, a mysterious stranger walks into the bakery. He’s tall, draped in a long coat, and his eyes gleam with a peculiar light. Without a word, he hands Sonia a small cloth bag.
“This is for you,” he says softly. “It’s flour that carries the power to heal. From it, you can create a sourdough starter that will heal those who need it most.”
Sonia looks into the bag and sees a fine, pale rye flour. “Who are you?” she asks, surprised by the stranger’s words.
“Call me the Doctor,” he replies. “I’ll return when the time is right. Meanwhile, bake bread and baguettes with it, and give them to those who need healing.”
With that, the Doctor disappears, fading into the morning mist. Filled with curiosity and respect, Sonia immediately sets to work. She begins making the starter from the mysterious flour, handling it carefully, sensing that what she holds in her hands has extraordinary power.
When the starter finally matures, Sonia uses it to knead dough for bread and baguettes. As the bread bakes, the entire bakery fills with a mesmerizing aroma like none she’s ever known. Sonia knows this bread and these baguettes will be something special.
Word about the magical bread and baguettes spreads quickly through the town. People from San Miguel and neighboring villages come to taste them. But soon, Sonia realizes that her baked goods do more than just taste good. Those suffering from celiac disease and diabetes discover that after eating Sonia’s bread and baguettes, they begin to heal. Their bodies recover, pain fades, and blood sugar levels stabilize.
Every day, Sonia sees more and more happy, healthy faces among her customers. Her bakery becomes a place of miracles, where people find not only delicious baked goods but also healing and hope.
A few weeks later, the Doctor reappears in the bakery. This time, he’s smiling as if he knows his mission is complete. “Thanks to you, Sonia, something extraordinary is happening,” he says. “This flour and starter were just tools. It’s your heart and love for your craft that are working the miracles.”
Sonia smiles back at him, feeling deeply grateful. The Doctor bows one last time and then leaves, this time for good. But Cozumel Orgánico remains, and thanks to Sonia, it has become a place where people find not only delicious baked goods but also health and hope, all brought to them by the magical sourdough rye bread and baguettes.
Hi there, this is what happens when my rye sourdough starter goes completely wild and throws a crazy disco party in the dough for my Savory Scones.

Each morning begins with the little bird Pepe, who always arrives to witness Mrs. Sonia kneading dough made from the purest organic ingredients. Mr. Alejandro, who assists her, knows that every loaf coming out of the oven is more than just bread—it's a story of love for nature and the joy that each bite brings.
When Pepe takes a piece of this bread into the forest, all the animals know they are in for something special. They taste it and feel the joy that lingers throughout the day.
Cozumel Orgánico is more than just a bakery—it’s the heart of the island, where people and animals come together to remind themselves that the true taste of life lies in simple, yet increasingly rare, pleasures in today’s busy world. 🌿🍞
CASA EUGENIA
On the picturesque island of Cozumel, surrounded by the sparkling waves of the Caribbean Sea, stood Eugenio's house. It was no ordinary house. It was a magical haven of peace and happiness, nestled in the heart of the island, where time seemed to stand still. In the courtyard, next to the pool, there was a summer kitchen, and the windows were always open to welcome the sea breezes that carried the scent of salt and tropical flowers from the nearby ocean.
Eugenia's house was known to few. Only those who found it discovered its secret. Tourists who came here didn’t know what to expect, but they immediately felt that this place was different. As soon as they crossed the threshold, they were enveloped by a warmth, as if an old friend had embraced them after years of separation.
The first thing they noticed was a change in how they felt. It was as if the color they had long lost returned to their lives. It was as though they were allowed to be children again. They played on the beach, built sandcastles, splashed in the waves, dove underwater, and laughed as if the world around them didn’t exist. And when they returned to the house after a day spent outdoors, they realized that even the food tasted different. Every bite was like a first kiss—sweet and full of life.
The secret of this house was more than just its perfect location or architecture. It was the food, delivered daily by the bakery Cozumel Orgánico. The bakery was a small family business, run by the beautiful baker Sonia, who poured her soul into every loaf of bread and every cake she made. She had inherited the recipes from her grandmother, who believed that true happiness was born from simple pleasures—the aroma of freshly baked braided bread, the fragrance of warm pastries, and the sweetness of ripe fruit.
The Chalah bread from Cozumel Orgánico was something special. It was soft, tender, and when you tasted it, you felt a kind of warm joy that reached deep into your heart. It wasn’t just food. It was something that awakened the soul, something that reminded you of a forgotten childhood when the world was full of wonders, and life was simple and beautiful.
People who came to Eugenia’s house left transformed. Not because the house offered them material wealth, but because it returned to them something they had long forgotten—the joy of small things, simple pleasures, and the tastes and scents that are the true essence of life.
When you left, you felt a new life coursing through your veins. It was no longer enough just to survive—you wanted to live fully, deeply, with all the colors and flavors that life has to offer. Eugenio's house became a place where people rediscovered the long-forgotten joys of life, their forgotten dreams and desires. And those fortunate enough to spend time in this house became the guardians of its secret, spreading its story so it would never be lost.
And so, Eugenia’s house remained an eternal symbol of the pure joy of simple human happiness and the true values of life. True happiness lies in family, in the simple pleasures that life offers us every day—we just have to know how to see them and cherish them.

On the sunny island of Cozumel, where turquoise waves gently kiss the shore, there’s a small bakery in the heart of town called Cozumel Organico. It’s run by Sonia, a young baker with a deep love for nature and a passion for baking. In addition to crafting her famous focaccia, Sonia is also known for caring for forty land turtles she found abandoned in the garden behind her bakery during the Covid pandemic.
When the world slowed down due to the pandemic, Sonia found herself alone on the island, unable to return home. One day, she discovered a group of tiny turtles in her garden, lost and with nowhere to go. She took them under her wing, built them a small shelter, and cared for them every day. The turtles grew strong, forming a unique bond with Sonia.
But these weren’t just ordinary turtles. Through Sonia’s love and care, they developed a special magical power that allowed them to protect her from any danger. Sonia realized their power one day when they saved her garden from a powerful storm by forming a protective circle that diverted the wind and rain.
When an Italian gypsy named Vittorio arrived on the island, he planned to transform Sonia into a mermaid, separating her forever from her beloved garden and bakery. Vittorio, known for his dark intentions, noticed Sonia’s beauty and innocence and decided he would control her. He began following her discreetly, waiting for the right moment to execute his plan.
One day, while Sonia was working in her garden, Vittorio approached her with a mysterious amulet in hand. This amulet had the power to turn a person into a sea creature, but it needed Sonia’s trust to work. Vittorio spoke to her, pretending to have friendly intentions, but Sonia sensed something was wrong.
At that moment, as Vittorio tried to cast his spell, all forty turtles that Sonia had raised suddenly gathered around her. Each one, now strong and full-grown, moved in unison with the others, creating an unbreakable circle around Sonia. A gentle, protective energy began to radiate from their shells, instantly neutralizing Vittorio’s magic.
Vittorio watched in horror as his amulet weakened and his spells unraveled. He couldn’t believe that his power had been defeated by ordinary turtles. With no way to complete his plan, he turned and fled the island in a panic, never daring to return.
Though shaken, Sonia knew she had protectors by her side whom she could always rely on. With gratitude, she knelt down and gently stroked the turtles’ shells. From that day forward, the turtles became her faithful guardians, roaming her garden freely, always ready to help whenever Sonia might need it.
Cozumel Organico remains a place where Sonia continues to bake her focaccia with love, where locals come not only for the delicious bread but also for the peaceful atmosphere that surrounds the bakery. The turtles move freely through the garden, content and ever watchful, ready to protect Sonia whenever danger might arise.
Hello everyone. My focaccia generated quite a bit of interest online yesterday, so I wanted to share a few more details.
I bake my focaccia using sourdough, making it especially suitable for active athletes.
Nutritional Stability: Sourdough bread, including focaccia, tends to be richer in nutrients compared to bread made with commercial yeast. The fermentation process enhances the availability of vitamins (like B vitamins) and minerals (such as iron and zinc) while reducing antinutrients that can interfere with their absorption.
Digestion: Sourdough bread is easier to digest because the extended fermentation process helps break down complex carbohydrates, like starch. This can lead to better digestion and more stable blood sugar levels.
Energy: Focaccia made with sourdough contains carbohydrates, which are a crucial source of energy for athletes, particularly before a workout. The combination of carbohydrates and fats from olive oil, a common ingredient in focaccia, can provide sustained energy over a longer period.
Hydration and Recovery: My focaccia includes herbs and olive oil, which offer antioxidants and healthy fats that can support recovery after physical activity.
Affordability: The prices of my products are set to reflect the economic capabilities of all the islanders. That’s why Cozumel Orgánico products are much more accessible to the general public.
Have a great day, dear islanders! I look forward to seeing you soon!
¡Estoy deseando verlos!

Un gran descubrimiento? Óóó, gráciáás!
On the sun-drenched island of Cozumel, where the Caribbean Sea meets the tropical jungle, stood a small bakery called Cozumel Orgánico . It was run by Sonia, a young woman with sandy blonde hair and blue eyes that mirrored the color of the ocean. Sonia wasn’t a native of the island, but her bakery quickly became the heart of the community.
In her bakery, Sonia sold more than just bread. She cultivated rare apples that grew on a single tree behind the bakery. These apples were extraordinary, with golden skins and a sweet aroma that drew in anyone who passed by. The people on the island called them "apples of beauty and wisdom," for it was said that whoever ate one would gain extraordinary beauty and wisdom.
Sonia knew the secret of these apples. They weren’t just fruit but a gift from a place where the visible and invisible worlds intertwine. The tree was planted by an old man she had met during her travels. Before he disappeared, he told her, “This tree will be a gift for those who seek more than what they see. Your apples will transform those who are ready.”
One day, a young woman named Lucia came to the bakery. She was beautiful but felt that her life was shallow and empty. She wanted to be more than just admired. She had heard of Sonia’s apples and came searching for them. Sonia looked at her for a long time, as if searching for something in her eyes, and then handed her an apple. “This apple will give you what you seek,” she said.
Lucia ate the apple and felt her mind clear. Suddenly, she understood things she had never grasped before and saw beauty in the simplicity she had once overlooked. Her inner beauty began to radiate outward, but now it was much deeper. People noticed the change and began seeking her out not for her looks, but for the wisdom she now possessed.
Lucia returned to the bakery to thank Sonia. “Your apple gave me more than I could have imagined,” she said. Sonia smiled. “Beauty and wisdom are connected. True beauty comes from within, from the wisdom hidden in our hearts.”
Word of Sonia’s apples spread quickly across the island. People came from far and wide, hoping to taste the miraculous fruit and find the beauty and wisdom they longed for. But Sonia offered the apples only to those who were ready to receive their gift—those who sought more than just superficial beauty or easy answers.
Cozumel Orgánico became a place where ordinary bread and pastries turned into treasures, and where lives were transformed by the secrets hidden in golden apples. Sonia, with her mysterious smile and quiet wisdom, remained a guide for those who searched for the true values in life.
Dear friends,
I sincerely apologize to those of you I had to turn away today and couldn't satisfy. The pastries that were available today sold out within half an hour of being posted on Facebook. I'm sorry you missed out on them, but bagels, Prague rolls, and pretzels are in high demand. It's probably a good idea to place an order next time to ensure you get your goodies.
Do you have a nice weekend !

Today's Prague rolls ...
Sonia, the princess of the Cozumel Orgánico bakery, gazed at the island of Cozumel with eyes full of anticipation. Her dream of a fairytale carnival called "From Fairytale to Fairytale" was slowly becoming a reality. She envisioned colorful parades where children would walk in costumes of their favorite fairytale characters. Fairies with wings made of butterfly wings, princes on white horses, dragons breathing smoke, and witches with long, colorful cloaks. And that's not all! She heard a whisper from the Phoenix that even the fairytale characters themselves would come to the carnival. Harry Potter with his loyal friends, Princess Fantaghiro with her mysterious world, and many others.
'From Fairytale to Fairytale' wouldn't be just any ordinary carnival. It would be a meeting of two worlds – ours and the fairytale world. Children would be able to meet their heroes, get autographs, and experience unforgettable adventures. Imagine seeing Harry Potter perform a few spells or hearing Princess Fantaghiro tell a story about her distant land.
Sonia already knew how she would do it. Fairytales would unfold everywhere. She had contacted several actors and costume designers who would ensure that the fairytale characters were as authentic as possible. Restaurants would offer fairytale menus, and bakeries would bake magical gingerbread cookies from which the Cozumeleños would build a gingerbread house. Over the island, colorful pretzel-shaped kites will be flying, and in the waters of the Caribbean Sea along the coast, mermaids will be swimming. And to make it even more magical, she decided that there would be a special "time gate" at the carnival, through which fairytale characters could travel between our world and theirs.
Imagine the excitement of children when they see Harry Potter walking the streets of Cozumel with Hagrid, or when they meet Princess Fantaghiro in her fairytale castle. It would be an unforgettable experience for everyone.
And so, Sonia, with even greater enthusiasm, continued with the preparations. She knew that the "From Fairytale to Fairytale" carnival would be something extraordinary. It would be a celebration of princesses and fantasy, childhood and unity. And most importantly, it would be a story that would be told long after the carnival ended.
It's Sunday evening, and I finally have a moment to reflect on the week that's just ending, which, by the way, has been incredibly busy.
I've been working a lot and meeting many new people along the way. Orders are coming in more frequently, including from more upscale residential neighborhoods like Las Ventanas, which undoubtedly indicates that the product range I've chosen for Cozumel Orgánico is well-tuned. I'm also receiving new and very positive feedback from the public, whether through reviews on my website or public posts in groups. I want all of you to know how much I appreciate this. Without you, the island's gastronomy wouldn't have reached a higher level.
All of you who are the focus of my words are making Cozumel a better place on earth. I want you to know that you are important to the expatriate community! Your positive thinking is immensely humane. Please, maintain your humanity for as long as you can. Not just in relation to me. I am just a tiny grain of sand on the island... Keep your positivity for yourself, your family, and your close circle of friends. Being a good person on Cozumel is simply worth it. And again, it's your merit.
I wish all the expats living on the island much success!
Sonia
Today's fresh baked goods—Bohemia rolls—are waiting just for you...
“I can see that my pretzels are a hit with the people of Cozumel! It’s great to see they’re enjoying them.”

Hi everyone, it’s me again, Sonia. I have to complain a bit... I’ve started receiving orders from abroad, even from several continents!
My page is clearly working well, thanks mainly to all of you who support me and spread the word about my work on social media. Relatives of expat families living on the island, who come from all over the world, are buying sweets from me and sending them to their children, or conversely, children are sending sweets to their parents here on the island. Just yesterday, for example, I had an order from Japan, and USA ...
And why am I complaining? Imagine, my husband is teasing me about having a "global bakery" - the first one in the world! He finds it so amusing that I’m tempted to do something about it... I’m not sure how to get back at him. It’s awful!
On the picturesque island of Cozumel, where the turquoise Caribbean waters meet the white sand, lies a charming bakery named Cozumel Orgánico. This is a place where the scent of fresh bread and sweet pastries fills the air, blending Central European traditions with the exotic charm of a Mexican island.
Baker Sonia has brought not only her skills but also her love for baking to the island. Her baked goods, made from high-quality, often organic ingredients, have quickly become popular among locals and tourists alike.
Recently, something remarkable has happened. Orders for baked goods have started arriving from all corners of the globe. Just yesterday, orders came in from the USA, Poland, and Japan. Relatives of families living on the island wanted to send a piece of home to their loved ones thousands of miles away – something truly special from Sonia’s bakery.
For instance, the wonderful Lisa from the USA ordered a Viennese apple strudel for her parents, which transported them back to their childhood. And that’s not all. Many other customers are ordering traditional German pretzels, cherry cakes, Prague rolls, or fresh Bohemia Pastries that remind them of their homes in Europe.
Sonia is immensely happy about this public interest. “It’s amazing to see how my baked goods bring people together across continents. It’s a great honor and motivation for me,” she says with a smile.
What makes Cozumel Orgánico’s baked goods so special? It’s the combination of traditional recipes, fresh ingredients, and the love Sonia puts into every product. But it’s also the island of Cozumel itself that adds a unique touch to the pastries. Thanks to the fresh fruits and herbs that grow right on the island, the breads, pretzels, cakes, and pastries acquire an unmistakable flavor.
Another interesting aspect is that Sonia has decided to support local fruit farmers and uses as many island-sourced ingredients as possible in her baking. This promotes the island’s food self-sufficiency, which is incredibly important. As a result, Cozumel Orgánico’s pastries have become not only a delicacy but also a story of sustainability and community support.
So, if you’re in the mood to taste a bit of Central Europe in the middle of the Caribbean, don’t hesitate to visit Cozumel Orgánico. Or simply order your favorite pastries online and let yourself be transported to a world of flavors and aromas.
Who knows, maybe your pastry will become the next bridge connecting people on different ends of the world.
Friends, we should start the day with the best that the island has to offer. Today, I'm once again bringing fresh Challah bread to Señor And The Queen, where they turn my bread into the best French toast on the island. It's a clean and pleasantly fragrant restaurant, one of the few like it on the island. I usually avoid restaurants (mold on the walls isn't my thing), but Señor And The Queen is an exception. Overall, Malecón is a place that draws me in.
Wishing everyone a wonderful awakening on the island!
The best brunch at Señor and the Queen ✨
Friends, today I came across something on the internet that I simply cannot ignore. It’s one of those moments in life that brings tears to your eyes. I’m not sure if it’s the emotion or the sadness that overwhelms me, because this wonderful woman and her family are leaving the island to return home to the United States.
Eugenia Lazarov embodies the type of woman and mother I deeply respect. She doesn’t seek verbal praise; you only need to silently observe her beautiful family and well-mannered children, raised alongside her husband. In today’s world, which isn’t always exemplary, they stand out like a revelation—a miracle from heaven—because of the positive energy and warmth they naturally radiate as a family. They’ve enriched the island in every way.
To Eugenia and her family: We love you! Come back soon! You’re cherished here."
