Biasanya kalau dapat cuts yang tebal, kami akan suggest reverse sear - masuk oven dulu bagi pemanasan sekata, then baru sear atas pan untuk dapatkan crust yang menawan.

Kalau terus atas pan, takut haba tak sampai ke tengah daging. So akan jadi luar dah garing bak hang tapi tengah merah merah lagi.. kalau campak semula atas api ada tendency dia keras/liat sebab moisture juice dia semua dah ‘bocor’
