1-Use Airtight Containers: Always store your coffee in non-transparent, airtight containers like glass, ceramic, or stainless steel. This helps prevent exposure to air and light, which can degrade the coffee's quality.
2-Avoid Moisture: Keep your coffee dry by storing it in a dry cabinet, away from water sources. Moisture can lead to mold and spoil the coffee.
3-Store in a Cool Place: Place your coffee in a cool, stable temperature environment like a cupboard or pantry. Avoid warm spots to maintain the coffee's aroma and flavor.
4-Purchase in Small Quantities: Buying coffee in small quantities ensures you use it while it's still fresh. Large amounts can go stale before you finish them.

Technique:
1. Use a very fine grind size, similar to table salt.
2. Fill the portafilter with the coffee grounds and tamp them down evenly.
3. Attach the portafilter to the espresso machine.
4. Start the machine and extract the coffee for 25-30 seconds.
5. Enjoy a rich, concentrated shot of single-origin espresso.
AeroPress:
Grind Size: Fine
Technique:
1. Rinse the filter paper and preheat the AeroPress.
2. Use a fine grind size, slightly coarser than espresso.
3. Add the coffee grounds to the AeroPress (1:16 coffee to water ratio).
4. Pour hot water over the grounds and stir gently.
5. Let it steep for 1 minute and 30 seconds, then press slowly.
6. Relish a smooth and well-balanced cup of single-origin coffee.
Drip Filter:
Grind Size: Medium
Technique:
1. Prepare your drip filter and rinse the paper filter with hot water.
2. Use a medium grind size, similar to granulated sugar.
3. Add the coffee grounds to the filter (1:15 coffee to water ratio).
4. Pour a small amount of hot water to bloom the coffee for 30 seconds.
5. Slowly pour the remaining water in a circular motion until the brewing is complete.
6. Enjoy a clean, complex cup of single-origin coffee.
Moka Pot:
Grind Size: Medium-Fine
Technique:
1. Fill the bottom chamber of the Moka pot with hot water up to the safety valve.
2. Use a medium-fine grind size, slightly coarser than espresso.
3. Fill the filter basket with coffee grounds and level it off without tamping.
4. Assemble the Moka pot and place it on medium heat.
5. When the coffee starts to flow, reduce the heat and let it finish brewing.

French Press:

DELA is situated in the Sidamo region, approximately 450 km from Ethiopia’s capital, Addis Ababa.Varieties 74158 and 74112, designated by the Jimma Agriculture Research Center, are well balanced coffees with smooth bodies. This lot comprises beans from various coffee farmers in the region.
The coffee was sun-dried on raised beds, each 1.20 cm in height, with a plastic net thickness of 3-5 cm.
This design allows the coffee beans to dry evenly over a period of 10-14 days until they reach the ideal moisture level.

With nearly 700,000 coffee producers, Kenya stands out as a coffee-producing gem in East Africa. About 70% of them are smallholders. In the Murang’a County, nestled along the Aberdare Range's slopes, you'll find the Kayu Factory, where 1,931 smallholders from the New Kiriti Farmers Co-operative Society contribute their cherries.
At an elevation of 1,650 meters, this region boasts nutrient-rich, red soils and ideal temperatures for slow cherry maturation. Smallholders pick their cherries during two harvests—March to May and October to December. After reaching the factory, cherries are pulped and fermented, promoting their flavor development. The coffee dries on raised tables under the sun.
Sustainability matters here. Wastewater from processing returns to the soil via soak pits, avoiding environmental harm. The Kayu Factory thrives on Ruiru 11 cherries, developed to combat coffee diseases.
Kenya's grading system reflects screen size, not cup quality. The AA grade equates to screen size 17 or 18. This distinction, while affecting auction prices, doesn't necessarily determine cup quality.
The Kayu Factory epitomizes smallholders' dedication and the distinctive coffee landscape in Kenya—a country where coffee shines in its own East African brilliance.
Coffee made its Mexican debut with Spanish settlers in the 18th century. Post-independence, coffee cultivation gradually spread in the southern states amid border disputes and indigenous displacement. The Mexican Revolution led to Agrarian Reforms and the establishment of the National Coffee Institute of Mexico (INMECAFE).
The institute’s dismantling in 1989, following the International Coffee Crisis, led to challenges for producers. Cooperatives emerged, offering crucial support and international market access. Veracruz, nestled by the Gulf of Mexico, emerged as a coffee haven.
The Martinez family, spanning five generations, tends to their Veracruz farms. Alejandro and Juan José Martínez Anaya, the current custodians, drive innovation with resilient coffee varietals and ecological diversity. Their H16 varietal, a high-yield hybrid, undergoes meticulous processing. The family prioritizes sustainability, planting native species and using agroforestry techniques. Cherries are handpicked, sorted, and processed with precision.
