You might know it as roselle, red sorrel, flor de Jamaica, or wild hibiscus. This particular flower is used in many different ways around the world. In my homeland Malaysia, or in some of the places i visited in Latin America, I savour the refreshing roselle juice. This cocktail is inspired by the classic clover club with a roselle twist.
With its hypnotising ruby red colour, the roselle tea brings a subtle floral note and
a unique tart flavour that pair just fine with the sweet and tangy tropical taste of pineapple juice. The white rum adds a little kick while the sweet and fruity vanilla note of Cucielo bianco elevates the flavour.
Because i believe that nothing is lost, i use the pineapple flesh to make a frozen lollipop and reuse the pineapple head for a green touch to please the eye. A garnish that will refresh your palate between sips and complete the color palette inspired from my travel. This cocktail will transport you from Latin America to South East Asia in one sip.

This cocktail is inspired by "Bubur Cha Cha", a south-east asian dessert that is very popular in Malaysia. Our local version is made with a coconut milk soup infuse with pandan, sago pearl, cube of sweet potato, and taro. This dessert is part of our culture and tradition. Every family gathering has a pot of freshly made bubur cha cha in the kitchen.
The feeling of sweet potato melting in your mouth then flush by the smooth flavours of coconut pandan soup, while little explosions of sweetness pops from the sago pearl. A delicious memory that i will share with you in this negroni twist.
The unique mix between the earthy taste of the sweet potato infused gin with the exotic twist of shredder coconut fat wash Campari, all balanced by the subtle sweetness of pandan syrup. A combination that paired perfectly with the vanilla hint from Cucielo Rosso Vermouth, while its fruity and floral notes add complexity and elegance to the overall flavour. Compliment by a caviar of coconut milk serve on a pandan leaf for a pop of milky flavour.

Buah Pala Margarita
I was born and raised on this beautiful island called Penang. One of the specialities here is nutmeg, another fruit you can find everywhere is coconut. Well, because there is no tropical island without coconut.
In Penang, you can find both of them in many forms: Fresh, dried, pickle, in powder, syrup, or even oil. My favourite one as a kid was dried shredded nutmeg cover with sugar, sour and sweet like a natural candy. I could eat a hole packet and then flush it out with a refreshing coconut water. A delicious childhood memory that i will share in this "Buah Pala Margarita".
Because in Penang we love spicy, we will start with a spicy nutmeg salt rim to wake up your palate, follow by an explosion of flavour from the nutmeg dry sourness, which paired well with the sweet and zesty Cointreau. To finish, a coconut oil wash tequila to blend the flavours together for a fresh and smooth feeling. A cocktail at the image of Penangite, spicy and sour on the outside sweet and smooth from the inside!
