Good Sourdough Bread Takes Time⏱

It's always easier to damage your body than maintaining a good health. 🌿That’s why healthy food requires longer preparation time as they are usually natural, handmade or homemade.

Do you know sourdough is considered one of the healthiest food in the world because of its fermentation process? 🍞Without adding commercial yeast in the bread process, we have to feed our own wild yeast, our mother dough to make bread.

The long fermentation process takes around 24 - 30 hours. But that's what makes it special & different from our everyday bread. 🦠With lactic acid bacteria present in sourdough's long fermentation process, they're able to strengthen our digestive system and also make our body easier to absorb nutrients.

We are truly grateful for your support along the years, some love our sourdough because of its health benefits, some because of the texture and flavor, and some because it helped with their digestion and bloating. 👍🏼

Most people set higher goals for their new year. But this year, we decided to scale down a little instead. As manpower plays an important role in our homemade, handmade products such as sourdough, sauce and cakes, we made some changes to our business hours and menu items in order to overcome the challenge we've been facing for the past months - manpower.

2021 may not have been a good year for us and many out there, but we believe 2022 is a fresh start where we can bring things back to normal.

We'll be making changes, improvements and coming up with ideas and solutions one step at a time, and hope to serve everyone better.

We're still accepting orders for this week, and will be back by 10th January 2022. (We might be back earlier than expected if possible. Stay tuned to our page for updates! )

December means another year is coming to an end, many have realized that recently things aren't exactly smooth sailing for us. During the maintenance, we also hope to slow down our pace for once and let our body and mind recover. From MCO to manpower issue, and the workload and problems which continue to grow, this year wasn't easy, but it has taught us so much. Team members playing multiple roles, never ending meticulous work and overtime, and to maintain the quality and natural process, the process of our products and sauce are still very time consuming.
After so long, we know that our team is exhausted covering many stations and departments. Thank you team Joies

汉语里，忙，这个字很有意思，左面是心，右面是亡。🆘太忙了，心就死了。

⚠【 文长慎入 】⚠

近期，由于我们面对严重的人手短缺，堂食只能在周末才可以 walk in, 平日都需要 reservation.

这个调整呢，让我们损失了不少，除了营业额的下滑，蛮多顾客也因为我们的这个决定而不高兴了。虽然我们已经尽力的去服务好每一位顾客，尽力的去解决现在的每一个挑战，也尽力的用影片来理清顾客对我们的种种误解，让大家都可以了解我们的调整只是暂时的，并没有因为任何因素而影响了我们的创业初心，经营理念，和灵魂。

尽管如此，还是很遗憾的，不理解我们的，始终会因为“比较”，而把情绪都发泄在我们身上。这或多或少，都打击了我们的身心灵，也让我们不断地质疑，我们一路以来所坚持的经营理念，是否就此放弃。

不过为了生存，这样的念头很快就烟消云散了。

庆幸的是，由于在这种人手不够的情况下，我们平日能接的顾客非常有限，反而创造了一个很不错的机缘，让我们有了新发现，重新振作起来。

怎么说呢？

平日的顾客虽然比较少，我们的 serving 也比平常慢，不过我们的顾客却异常的 chill & flexible. 顾客竟然会非常主动的 self service, 还会帮我们和其他顾客解释我们现在的情况，有些甚至看到我们柜台空空的，大家都在厨房忙着，他们就把自己要点的食物写在一张纸夹在柜台，这些举动都温暖了我们的心，也让我们在一种精神没有这样紧绷的情况下，更专注的去把每一份食物和饮料用心做好。

这种营业模式，也让我们在忙完了以后，还有一些空闲时间和顾客聊聊天。在聊天的过程当中，我们发现到，很多顾客其实自己本身也是企业家，老板，freelancer 之类的，而他们也因为这个疫情，面对了种种的难题，所以他们非常能够理解我们现在的处境。

可是，就因为这样子的一个聊天，反而，让我们不知不觉的感到非常惭愧。

因为最近，有观看我们的 video, live 或 帖子的朋友，应该都看得出我们过得不是很好，每天起床，等待着我们的永远是赶不完的工，和消化不完的挑战，这也导致我们开始厌倦了这个世界，这种生活，所有的热诚，热血都逐渐地被消磨殆尽。

不过，顾客的 chill & flexible, 却慢慢地唤回了我们的热诚，让我们回想起我们是为了什么而开始，更提醒了我们的创业初心，这才让我们发现到，我们离目标已经越来越远，越走越偏了。一开始的我们，除了在推广健康食品之外，我们更希望的是在一个城市里，大家可以摆脱对物质疯狂的迷恋，重过简单的生活，并减少压力，加班，和可能伴随的心里代价，适当的放慢生活节奏，从慢吃到慢疗，让精神和身心都得到放松，慢生活，慢运动，并达到充电与身心灵的平衡，最重要的还是快乐。

这才让我们决定回到原始，用最传统，最纯朴的方式，尽可能的天然手作所有的食品，以让大家感受真正的食物力。但，随着环境的改变，问题的增加，我们竟然也被这个世界改变了，每天过得像行尸走肉一样，带着四到五个小时的睡眠，以最低的能量来输出高能量的产出。天天，除了赶还是赶，忙东忙西的，最终我们整个团队都失去了自我。

所以，塞翁失马焉知非福，我们非常感恩这一次的机遇，让我们从顾客身上学到了，生活，这么慢却可以那么美。我们一直都花太多时间在未来，却没有真正活在当下，找回最从容的自己。

我们不知道大家是因为什么样的一个缘分认识我们，到支持我们的食品。🍞🍔🍝有些人可能是因为健康，有些人是因为好吃，等等。
