2018 - 2023.

Alleylab 3.0 version is showcase roastery & coffee in a hub.
Beside roast & serve high quality coffee .
Coffee workshop is part of the highlight in this module.

It was a roller coaster ride in this journey, we have went to the highest spirit n lowest low during pandemic.

But it doesn’t stop our passionate coffee drive till today.

5 years down to the road , we have so many information / photo
So we tune into collapse photo mode.

Beside that,
we still have one new item coming up at online store/shopee by mid of July stay tune.

Now let’s us go into time tunnel one last time.

reopen 2021 (due to pandemic)
We shut for 3 month

2. Artist sketch our interior design , abstract art work shop by ,
rum barrel process coffee sharing.

3.our choco latte art with so many kids before

4.teenagers coffee sharing & workshop, a lady from Jeju learning latte art

5. Poem book lunching by sabiana Paoli , we create a cold brew lable for her as well, our young back to 2018.

6. So many different nation learning basic espresso work shop & purchase coffee bean
(Korea , Japan ,UK ,Sg etc)

7. Tv 3 interview ,Celebrity & royalist visit our coffee shop
(All are vip person ,but they are kind & friendly)

8. Once again ,
Do our regular post since 1.0 version, our first barista Ashely visit us after 8 years long.
Andreas a PE teacher from international sc always call himself Jesus come over for coffee😂

9. Chinese medical professionals coffee workshop , sibling coffee workshop to work in aus, our customer ham from coffee lover into barista.

Alleylab 2.0

It was a different interior concept located in tmn molek back to 2017 -early 2018.

Art gallery is part of the inspiration for this set up.

Period is around 1 years before moving to 3.0

This is a cafe is mainly focus on coffee & light meal such as sandwich/toast.

Cosmetic field without any f&B exprience.

Alleylab by 27th will be officially last operation date in sunway citrine hub.

This is the workshop design to a coffee professional/lover,

who interested forcupping scoring , Coffee competitionjudging exprience

from our judges

Beside the judging exprience , benneth is a coffee roaster which have 8 years exprience in Giesen coffee roasting machine.

In this workshop,
We will cover the acidity identification with fruits / chemical compound.

Cupping scoring,

Brewing method with
different coffee processing
(Natural , washed ,Anaerobic etc)

Practical and more.

Total pax for this workshop is
5pax per session.

Estimated time is 5hrs.

this coffee bean is source through the auction lot in singapore coffee association in 2022 oct

this is a unique processing method which involve fresh papaya pulp and fermented in a close bag by observing the PH rate. once it reach a desire fermented hours it will be go sundry on a raise bed .

in order to preserve the papaya processing flavor note , we roasted in a medium light roast for all the coffee lover and drinker have a closer approach for this processing taste note.

dry fruit/yeast fruit fermentation is upcoming influencing coffee process for the coffee industry

While the CNY still warm.

We selected a warm ingredient to carry on the festive.

Ginger 姜 is a popular ingredient in most of the Chinese cuisine,it come with strong aromatic with a bit of warm palate.

We try out the Kenya Kiajibi for this combination.

Surprisingly the sweet & soft acidity goes well with the ginger floral aromatic to become a harmonise latte.
