My letter to a young bartender.

My guess is that I would have listened to none of it, and just done my own thing. I wasn't great at taking advice as a teenager...

Congratulations. Today you will clock in as a bartender for the time. You’ve worked your way here by breaking down endless amounts of boxes, washing dishes, bussing tables, and barbacking your ass off. You’ve kept your eyes and ears open all the way, you’ve observed good and bad habits, and soaked in all of the knowledge you could over the past few years. I know your shift begins in about 10 minutes, but you have at least 30 years behind bars - the drinking kind, not the prison kind -ahead of you, so have a seat, let’s talk.

Let me start by telling you that you are not near as cool as you think you are. Right now you think that once you step back behind that bar it will be all about you and your show. It’s not, and it never will be. To be a great bartender you need to be selfless. Because, being a Bartender is and always will be about your guests. You have a great responsibility, a responsibility that only a small percentage of people in hospitality even consider…You have the ability to make or ruin someone’s day in a matter of moments. Which bartender do you want to be? People come to bars for many different reasons, celebrations, stress relief, mourning, loneliness, to be a part of a community, and of course, to get laid. The onus is on you to make your guest’s day better than it was before they sat at your bar. Make eye contact, shake hands, make them feel as if you are welcoming them into your home. There is a lot of pressure, one slip in service, one missed acknowledgement, could cause your guest to leave in a worse place than when they arrived. Some guests will walk into your bar prepared to be upset, on edge. They may make take their bad day out on you. Never, ever take it personally. It’s not about you. Remember that everyone you meet is fighting a battle you know nothing about. It is our job to absorb negative energy and radiate positive energy.

Learn from the more experienced bartenders. Observe. I’ve learned as much from the worst people I’ve worked with as I have learned from the best. Emulate their best practices and avoid the bad ones. Don’t be afraid to make mistakes, just learn from them, it’s how you will grow. Good judgment comes with experience; good experience derives from bad judgment.

Bartending is rooted in hospitality. That should be your number one concern whenever you step behind the bar. Entertain. Smile. Make your guests smile. Learn their names. Honor the history of our craft. Bars were around long before Facebook, Twitter and Instagram. They are the original “Social Network.” There was a time that Bartenders settled bets, not Google. My father read three newspapers a day before he started a shift… so that he could be a great and informed conversationalist. Know about current events, sports, etc. Be a key to your city or neighborhood. Recommend other local bars, restaurants and attractions.

Hospitality must also extend to your peers, coworkers and employees They deserve the same respect as your guests. Be a team member, and a great coworker. Bad chemistry between bartenders will show no matter how well you think you are hiding it.

To be a great bartender you have to be in it for the right reasons. You have to yearn to make people happy. It’s not about the money. Tips are a result of great hospitality, not the goal. If you are in it only for the money, it will eventually show through. If you think about how much a guest will spend, then you will end up serving a wallet, not a person and you will lose your connection with that guest.

Practice at being fast and efficient. Work at 100mph, but look like you are cruising at 25mph. Keep your eyes up. It is amazing how eye contact and a nod of acknowledgment comforts someone who is waiting anxiously. Pour a great drink with fresh and quality ingredients, but don’t boast about it. That’s like patting yourself on the back for waking up in the morning. It’s what we are supposed to do. Remember, we serve people not drinks. Practice mixology, but be a Bartender…

Having a beard, growing a curly mustache, sporting suspenders, a fancy bowtie and newsboy cap or any of the other affectations of modern bartending won’t make you a better bartender. Donning a vest will not make you a great bartender; it’s the heart and soul behind the vest that will define you. Reading cocktail books (though it doesn’t hurt) will not make you a great bartender, reading people will.

At some point in your bartending career you may get some media attention, win awards and competitions. Remember two things

1. Never believe your own press.
2. No award is going to jump off the shelf and take care of your guests.

Eventually, you will own your own bar. When you do, don’t just hire a staff, build a family. Give them the tools they need to succeed. Treat them with respect. Hold them accountable. Teach. And most importantly, trust. I have gained far more benefit over the years by trusting than I have had losses due to theft or betrayal. Lead by example. Be the hardest working person in the building. Realize that you will never make every employee happy, no matter how hard you try. And know this...owning a bar is not a fast-track to wealth, but it can be a fast-track to fulfillment.

To dedicate your life to serving people successfully, you must take care of yourself. Think about longevity. Be good to your body and mind. Find a proper work / life balance. Love with all that you have. Be kind to others. Take vacations and regular days off. When you are away from work, be away from work. (I am still a work-in-progress when it comes to this)

I’ve been asked many times over the past 30 years “When are you going to get a real job” My response is, this. “I don’t just have a job, I have a career. I am lucky enough to have what is in my opinion one of the greatest jobs in the world. I have the ability everyday to improve other people’s lives.” The nobility in our profession derives from the fact that we take great pride in serving people for a living. So, do it well. Honor our craft.
