Sticky Rice Cake by Thermomix TM6 🥰
Chinese New Year is coming soon… let’s make some Sticky Rice Cake (aka Nian Gao)!
A traditional dessert that is most popular during the Chinese New Year festive!
Ingredients:
✅1 Banana Leaf, blanched, cut into pieces
✅250g Brown Sugar
✅250g Water
✅250g Glutinous Rice Flour
✅10g Cooking Oil
✅1500g Hot Water
Preparation
1️⃣Line 2 round tins (10 cm) with banana leaf.
Place sugar into mixing bowl, pulverise Turbo/ 2s/ 2 Times.
2️⃣Add water, heat 3 min/ 60°C/ Speed 2.
3️⃣Add glutinous rice flour and cooking oil, mix 30s/ Speed 4.
4️⃣Transfer the mixture into prepared tins. Cover the tins with cling film.
5️⃣Arrange the tins to Varoma dish.
6️⃣Place hot water into a cleaned mixing bowl, set Varoma into position, steam 90 min/ Varoma/ Speed 2.
7️⃣Cool completely (preferable 24hrs) before unmoulding. Serve as desired.

Made & blend my own Nyonya paste using Thermomix guided recipe 🤩 Oooo… mama mia! It’s yummy!!
😍Nyonya Sauce😍
5 fresh red chillies, deseeded
150g tomatoes, cut in wedges
100g shallots (approx 8 shallots)
5garlic cloves
3 stalks fresh lemongrass, white part only
2 stalks torch ginger flowers (bunga kantan), buds only
10 chilly padi
50g cooking oil
20 kesum leaves
3 tbsp tamarind paste
6 tbsp water
1 tbsp cane sugar
1 tsp shrimp paste (belacan), toasted
1 tsp pink salt
3 tbsp lime juice
Cooking:
1. Place red chillies, tomatoes, shallots, garlic cloves, lemongrass, ginger flowers, bird's eye chillies & cooking oil in mixing bowl, blend 20 sec/speed 10. Scrape down sides of mixing bowl with spatula.
2. Add kesum leaves, sauté 8 min/120°C/speed stir spoon. Meanwhile, mix tamarind paste & water in a small bowl. Deseed & set aside.
3. Add tamarind-water mixture, sugar, shrimp paste, salt & lime juice, cook 5 min/100°C/speed 2. Pour sauce on the fish. Ready to serve.

What is the purpose of sifting flour? Sifted flour, which is much lighter than unsifted flour. It’s easier to mix into other ingredients when forming a cake batter or making dough. When flour is sifted with other dry ingredients, such as cocoa powder, this helps to combine them evenly before they are mixed with other ingredients.

Here u go... Happy Thermomix-ing!
🟢 50g shallots, 100g corn oil.
🟢 Place cooking oil & shallot slices into mixing bowl.
🟢 Ensure that they are evenly distributed in mixing bowl.
🟢 Place splash guard on top of mixing bowl lid and start High Temp mode 160”/16mins/reverse spoon.
🟢 Let it cool completely.
🟢 Serve as condiment or transfer to airtight jar & store in refrigerator for up to 4 weeks.

Oil-Free Honey Chicken Wings (applicable for both TM5 & TM6). While I enjoying my warm shower 🛀 German helper cooked for us! 🤩
🟠Marinate for 30 minutes in a cool place or refrigerated.
1kg Beacon chicken wings (approx. 11 chicken wings), halved at joint
20g light soy sauce
10g dark soy sauce
10g oyster sauce
1 tsp salt
10g rock sugar
10g garlic cloves
20g shallots
20g honey
20g Chinese rice wine (Shaoxing Hua Tiao) *optional
Thermomix-ing:
🟢Place rock sugar, shallots & garlic cloves into mixing bowl. Chop Turbo/1 sec/1 time.
🟢Scrape down sides of mixing bowl with spatula.
🟢Add marinated chicken wings. Cook 18mins/Varoma/reverse spoon.
🟢Add honey & Chinese rice wine. Mix 30sec/Varoma/reverse spoon.
Serve hot! 😋

Blanching:
💡To remove the smell from raw meat, before cooking, place 猪肉 and 600g water into mixing bowl.
💡Blanch 30mins/45°C/reverse spoon speed.
💡This will also remove impurities and blood within the meat.

🟠Place ginger, meat, rock sugar, light soy sauce, Chinese rice wine, water, salt, white pepper, mixed spices powder, kayu manis, bunga lawa & star anise into TM mixing bowl.
🟢Cook 45mins/100°C/reverse spoon speed.

500g 猪肉 belly, skinless, cut into pieces (3cmx3cm)
10g fresh ginger root, thinly sliced
50g rock sugar
25g light soy sauce
50g rice wine (Shaoxing Hua Tiao)
✅100g water (My kids like gravy!)
❎25g dark soy sauce (I omitted this. Don’t like!)
1 teaspoon Himalaya Salt
1 dash Sarawak White Pepper
1 teaspoon Mixed Spices Powder
1 Kayu Manis (cinnamon stick)
3 cloves Bunga Lawa
3 Star Anise
**Coriander leaves for garnishing**
