Aside from the excellent Colombian beans that Cofinet are known for, there will be origins from the Ethiopia and Brazil. Notable farmers from the Colombia are Jairo Arcila, Luz Helena, Luis Anibal, Paolo Trujillo, and Sebastian Gomez.

Cupping a cup of Simalem Specialty Coffee is a journey for your taste buds. Since they source single-origin nanolots, each cup is a unique representation of the specific origin and processing method.
Imagine the bright acidity and floral notes of a Lake Toba sun-dried natural lot, bursting with tropical fruit flavors. Or perhaps you prefer the honey processing method, which tames the acidity while allowing the subtle sweetness of the bean to emerge, hinting at honeydew and stone fruit.
Lastly lets also not forget the innovative infusion coffee that are all done naturally without artificial flavouring. With every sip, you’re transported directly to the volcanic soils and pristine waters that nurture these exceptional beans.

You’ll discover how to train your aroma memory to identify the nuanced characteristics hidden within each cup. We’ll then translate this knowledge into practice, guiding you on proper coffee dosing for cupping bowls and setting up a professional tasting table.
The workshop culminates in a cupping flight, where you’ll put your newfound skills to the test and learn to calibrate your evaluations. By the end, you’ll be equipped with the common language of coffee quality and empowered to continue your coffee education, fostering a deeper appreciation for this remarkable beverage. ☕️

A seasoned coffee professional with over a decade of experience in the specialty coffee industry, Johan Kwe (陈光宗) boasts a well-rounded skillset.
Holding a B.A. in Economics from The Ohio State University, Johan Kwe is a licensed CQI/Texas A&M Q Processing Expert, Q Arabica Grader Assistant Instructor, and Q Processing Instructor for both Arabica and Robusta. Additionally, Johan Kwe is a Certified International Coffee Judge.
Currently, Johan Kwe wears several hats. As the Quality Control Manager for Simalem Specialty Coffee, he manages mill operations and production with a focus on quality improvement and portfolio diversification. Notably, spearheaded the launch of key export programs, exporting over 10 tons of specialty coffee in the first year alone. Johan Kwe also championed the “Farmer Direct” project, a program connecting Sumatran coffee producers with international buyers to promote sustainable, ethical sourcing, and fair trade practices.
Beyond quality control, Johan Kwe is a passionate coffee educator, who recently received CQI Educator of the Year award. Johan Kwe has instructed coffee post-harvest processing and quality evaluation courses in numerous countries, including Brazil, Thailand, Russia, Indonesia, and more, for both private and CQI project initiatives. Furthermore, Johan Kwe has collaborated with CQI to pilot new post-harvest processing course designs.
