Renowned for his culinary ingenuity, Guest Chef Lee Kook Siong will be delighting patrons to a specially curated menu highlighting his celebrated signature dishes.

One of the three main dishes served during this course include the Steamed Red Star Grouper Fillet with Jin Hua Ham and Mushrooms (麒麟金华扎红鱼). A staple of expensive banquets in the 70s and 80s, the 麒麟 (qi lin) cooking method always features precious and expensive fishes. The smokiness of the ham heightens the subtle sweetness of the fish and when combined with the mushrooms, provides one a burst of flavours that explodes to tasty goodness in just one bite.
