From the exquisite seasonal pickled tasting featuring Japanese gourd, yam, myoga, ginger, radish, gobo root, seaweed, bok choy, kimchi, pink radish, to the tantalizing cornetto filled with flying fish tartare and a hint of harissa.
Delight in seasonal carpaccios, one adorned with mozuku and aged ponzu, the other featuring turnip and seaweed powder in a captivating capsicum-tomato broth.

We had the privilege of having wine maker jean baptiste gracing us with his presence and presenting this remarkable P2 champagne.

P2 2004 was Disgorged in November 2021, After close to 17 years of slow transformation in the cellars, Dom Pérignon expands its energy and rises to an apex of essential, radiant vitality, in its state of Plénitude. Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity and freshness.
On the nose-citrusy notes of red grape fruit peel, and blood orange, gently cede to figs. The additional time on the lees elevates minerality.

One of the oldest and continuous barolo houses Since 1761.
Famous for its Liste, cannubi and cannubi san lorenzo varieties. This barolo style wine is made with long maceration times and minimal intervention, the wines are renowned for their traditional style and long-term aging potential, a favorite of Italian wine professionals and collectors.
Representing this domaine would be M.Giovanni Oliva From ethica wines, official distributor and importer for borgogno.
Key highlights of this wine-pairing dinner would be the seasonal black truffle with fresh pasta, a pairing that unmistakably in perfect marriage.

Joly is regarded as one of the worlds leading biodynamic wine growers.
Based in the Loire valley, his winery practices biodynamic viniculture and
uses more of a pragmatic approach in keeping “the soil alive” by using natural resources to cultivate his vines.
His showcase- Clos de la Coulée de Serrant, Produces exceptional white wines that could last for decades.
According to M.Joly, “the expression of his wine continue to improve even after several days they are opened”.
