Stir-fried lobster curry. We substituted the Pulau Ketam flower crabs and prawns with lobster to make this dish. If you’re feeling a little fancy this weekend, it’s available while stocks last.

This is our take on the phat phet neua (stir-fried red curry with beef). In our version, we omitted the green peppercorns traditionally used in the dish, and replaced them with little cubes of seared pineapples. This adds a little sweetness and crunch to a fiery curry. This "dry" curry packs a punch and is best eaten with a bowl of Thai Jasmine rice!

Sour, spicy, salty, sweet and savoury.
The som dtam is arguably one of Thai cuisine's most famous dishes (along with the green curry). The green papaya used in this salad is firm and almost crunchy. With a neutral taste, the tanginess of this dish comes from the addition of lime juice, and not the young papaya. Its firmness also allows the fruit to be lightly pounded with a pestle and mortar when preparing the salad. Adding in chilli, fish sauce, palm sugar, dried shrimps and peanuts, the result is a mouth-watering salad.

We have regrouped and reassessed. And decided to resume delivery/takeaway operations for 4 days a week - that is, Thursdays - Sundays. We reached this compromise as business levels have dropped significantly which does not justify opening 7 days a week. But at the same time, the team was getting bored at home!

Gung ob woonsen - loosely translated as glass noodles with prawns baked in a claypot. Cooking this over charcoal gives it a smoky flavour.
