Chef Spotlight Episode 1

For those of you who are curious what MadHatter has been cooking while we are awaiting the opening of our new outlet, THIS IS IT! Here are some pics of the BTS of the dishes!

We are teaming up together with from Penang & long term collaborator to bring you a feast for the senses and also highlighting a truly exotic cuisine.

is an establishment known for a cuisine know as Jawi Peranakan. This version of Peranakan finds its roots in Malay, Northen Indian and also Arab cuisine. is the Head Chef of and he will be coming down to KL to bring you several of his popular dishes that got him a coveted spot in the Michelin Guide Penang. The 3 chefs (Nuril, Sarah, Marcus) will also come up with all brand new dishes within the cuisine of Jawi Peranakan.

Chef Sarah and I will be curating a Chef Spotlight Series where we feature a chef and get creative collaborating in different cuisines to bring a new experience for the curious minded.

We will be conducting this Chef Spotlight at which is a privately run space to meet others and have conversation over food, art and activities.

A week ago team MH was given a truly magical task to create several canapés fit for a King! Specifically King Triton himself! We got to work immediately as it was really a lifetime experience creating a meal that would fit the theme and to welcome the remake of a beloved animation movie for Disney!

This was what we came up with and it’s truly something the team as a whole was really excited working with something we hold near and dear to our hearts! We really believe that the creation we made was a true reflection of Disney and definitely ‘Part of That World” from The Little Mermaid

MadHatter Uptown is officially calling it a day after 6 years here! Yes that is true. It pains me to say this but multiple factors are contributing to this decision and our tenure here will official come to and end on the 26th of Feb at Damansara Utama!

Mad Hatter Desserts will now be embarking on a new kitchen concept with a greater emphasis on local produce, contemporary techniques, baked loaves and savoury meals too. It will eventually be a multiple discipline food establishment starting at a new space at Medan Putra and more places eventually.

In the mean time while we build a new kitchen we can call a home, we will still be doing events, pop-ups and be operating thru a Cloud Kitchen so you can place orders thru WhatsApp. (+60123704327)

𝘽𝙪𝙖𝙝 𝙎𝙪𝙠𝙪𝙣 𝙂𝙣𝙤𝙘𝙘𝙝𝙞

In our 5 years of operation, MH has conducted only a handful of degustation menu.

Throughout these projects, this is one of the dish of which we are very satisfied with and feel that more people should be able to have a taste of.

The dish features what is known as Buah Sukun or Bread Fruit made into a dumpling pasta. We are also able to include a wild mushroom known as Anthill Mushroom as a seasonal produce with this dish.

So, this Mother’s Day we are featuring this dish on a special 3 course menu (pre-book) that you can enjoy!

Towards the month end of Feb, we were doing multiple collaborative efforts with many talented Malaysians.

I truly enjoyed every single moment of each project especially this collab as I was involved in making savoury food and allowed to use some world class chocolate ingredients.

One of my fav dish was the Teo Chew Style Duck Breast cooked with a Cocoa Miso Glaze on a bed of Potato Purée and 5 spice Duck Crumble.

The thought of using Cocoa Miso was a technique that was taught to me by Ning and his team and we truly learned a lot about Cacao and it’s usage all in this one month of us working together.

It is an honour working with and looking forward to more collabs with them and many other talented Malaysian in future!
