Classic Tiramisù with Elle & Vire Professionnel Mascarpone

INGREDIENTS
• 500g Elle & Vire Mascarpone (40% Fat)
• 500g Excellence Whipping Cream (35% Fat)
• 250g egg yolk
• 145g sugar

THE RECIPE, STEP BY STEP
1 Start
Weigh out your ingredients. The use of pasteurised eggs is preferred.

2 Mix
Using a food mixer, mix together all the ingredients until you get a consistent mixture (10 to 20 minutes).
Chef's Tip 👍
The Elle & Vire Professionnel® Mascarpone, with its semi-thick texture, does not need to be loosened beforehand.

3 Serve
Dress the dish according to your inspiration. 🥰

Tiramisù Pâte à Bombe with
Elle & Vire Professionnel Mascarpone

INGREDIENTS
• 500g Elle & Vire Mascarpone (40% FAT)
• 168g Excellence Whipping Cream (35% FAT)
• 138g egg yolk
• 125g sugar
• 75g water

THE RECIPE - STEP BY STEP
1. Prepare
Pour the mascarpone into a bowl and set aside.
Mixture 1 : make a pâte à bombe. Cook the sugar at 118°C with the water and pour it over the egg yolks whilst whisking.
Mixture 2 : whip the cream.

2. Mix
Combine the two mixtures, and incorporate them directly into the mascarpone. Mix it all together until it reaches.

3. Serve
