Southern King Crab Preorder

We're so surprised at the interest in king crabs. We were only planning to bring in a few as a festive thing, and posted only in an Instagram story, but that's turned into so much interest that we are making a proper post:

We are bringing in limited amounts of King Crab weekly. You can choose approximate weight that you want (within 100g). Preorders close every saturday, and crab arrives every Tuesday. You can pick up anytime you want during the week(delivery available as well, charges may apply). We will bill you for the preorder, and refund any difference in weight after the crabs arrive. This is only for king crabs and sea urchin as they are high value items.

There are two common ways to transport king crab, live or "boiled and frozen". Live crabs are around RM600-700/kg at the moment from Alaska and Toyosu market; while frozen crabs (if done properly, is 95% the quality of live crabs. These are quick boiled on the fishing boat (big ship actually) and then immediately shock frozen. This results in full meat and no loss in quality. This is the best value-for-money we can get for coldwater crabs from far away.

The smaller ones (below 1.2kg) are cheaper, and we're doing a promo of RM168/kg, but the bigger ones around 1.8-2kg are our recommended choice: the meat at the legs are fuller, not just shell, and it's more satisfying. Cost for us is 3usd/kg more, but it's better value. After 2kg there's another big jump in price, so right below 2kg is the sweet spot.

To defrost, leave overnight in fridge, or leave out for 2 hours from freezer. Then either steam for 5 mins over strong fire, or 5-8 mins in hottest setting in oven. As it's already preboiled, basically just want to get it warm. You can also just defrost and serve chilled. Just break the legs or cut with kitchen scissors. The shells are thin but the thorns are extremely sharp so be careful. A ponzu sauce or garlic butter sauce is our recommended accompaniment, although you can also try Thai style sour dip. Very delicate and sweet!

7singpan/coral grouper/sunu: Is redder better?

Huat ah! Yeah everyone's in the mood. It's the week before Chinese New Year, we hope all Malaysians are participating in the enjoyment and merriment, even if you're not actually Chinese (We at Flying Fish DEFINITELY take advantage of everyone's festivals. No Sarawakian/Sabahan colleagues yet, but we REALLY want an excuse to celebrate Gawai).

Anyway.... fish education! Today we're going to talk about.... coral grouper! Juga dikenali sebagai "sunu/sunuh/sono" or similar pronunciation. The Chinese in Malaysia call this "qixingban" or "seven star grouper", a reference to the spots that dot their body.

Like many other seafood misconceptions that we're intent on debunking (the recent one being this cina-community Whatsapp groupchat rubbish about "deep sea fish". If your parents start their "Eh but Whatapps hor they all say hor" conspiracy theories just check with us instead of strangling them outright), a common misconception is that REDDER 7SINGPAN ARE BETTER. THIS IS NOT TRUE.

Ikan sunu and almost every other type of grouper are what's known as "reef fish" as opposed to "pelagic fish". Reef fish actually live among the coral reefs near to shore; pelagic fish swim in the big blue sea (tuna, pomfret, tenggiri, whale sharks etc)

"Close to shore" can mean up to 50m depth. Water molecules absorb wavelengths of light from yellow to orange, and (scuba divers see this firsthand) the deeper you go, the more everything turns into a monotone blue-green underwater as the red part of the colour spectrum gets absorbed. What happens with the coral grouper is that the deeper it lives, the more it needs to express the "red" in it's colouring (simplified explanation, marine biologists don't kill us).

Put even simpler: THE EXACT SAME 7SINGPAN SPECIES WILL BE REDDER THE DEEPER IT LIVES. There are 7 variants of the coral grouper, and a popular one known as the "leopard coral grouper" will be a darker grey if it lives in shallow water (to hide and disguise itself) and more red if it's living deeper. The colour doesn't determine quality in any way.

We choose qixingban firstly by the weight (800-1000g whole), and then by how fat it is. Other people selling this fish will tell you their fish is "red red very auspicious". Not us. Quality is quality. We KNOW for a fact that colour doesn't determine quality.

In order of importance:
1. Where is the fish from? Do you know the person catching the fish?
2. How is it caught? The best way is with underwater traps, the second-best way is by spearfishing, the worst is by using nets and explosives.
3. How was it handled. Was it gutted immediately and put on ice and blast- frozen? was it left out for a while?
4. Was the temperature controlled throughout the journey to your plate?

At no stage does "colour" come into the equation, and we don't want to propagate the myth that "red" equals good. The last 2 pictures are courtesy of Josh Niland and Ben Collison, two people we hugely respect when it comes to the standards of cooking and catching coral groupers, respectively. These people at the top of their game will tell you the same thing that we do :)

We want to improve the state of seafood in Malaysia. Our seas are rich beyond compare. Why should the Japanese be "the experts", why are we just producing and then exporting this fish to Hong Kong and Japan? We can do better. We can improve the quality of handling, of how much we respect our catch, one grey coral grouper at a time.

You need more than the big main meal for festive season right? 2nd or 3rd day of CNY still need to makan when everywhere tutup right?

This "side project" is more than a year in the making haha! Every once in a while we think "We sell seafood, we make the best fish stock that money can buy. WE of all people should be selling steamboat sets." and then we put it aside because whatever items we wanna put into a bundle just don't seem good enough.

It's good enough now. We have prawns, sliced whole pomfret (for now while prices still reasonable), baby cuttlefish, our famous fish broth, and most importantly, fish paste and fish ball variants that we can be proud of. Real scallop and prawns and squid in the pastes. The first time we knew.

We're doing only 100 sets at this price. The pomfrets honestly already take up 1/3 of the price, but what the hell right? We're just relieved that we finally have it. Once it's done, we'll very likely change the fish option and pray hard that the prawns don't go up too much :)

We curated it very carefully, so you can add on your meat and veg options and have enough for more than 10 people. We only chose the best of what we're good at, and refuse to stuff it with substandard items like watery clams or sauces or dumplings to pad the price. We're fed up with the stingy portions and preserved ingredients of yee sang during CNY dinners. The dodgy raw fish just adds insult to injury, so we decided to make our own! It was a hit when we tested it out with 30 trays. Nothing fancy, just REAL fruits and vegetables and nuts to make your yee sang a dish you'll happily eat as a salad, not just to toss. Vegetarian if you exclude the fish. Not vegan because of the honey.

10 pax portion. Generous mounds of premium fresh fruits and vegetables and a FULL tray of delicious dry-aged ocean trout sashimi.

Ingredients list:

Price Increase? Not Always!
(A transparent look at inflation)

Not everything has to go up in price! We're consumers too. Just like you, every time we go to the supermarket (and especially the fruit section!!) we're going through the same internal monologue of bemusement and muttered unspeakables.

The majority of the fish that we sell have had minimal or no price increase, EVEN WITH CHINESE NEW YEAR. These include popular options like tenggiri, kurau, senangin, grouper, snappers and prawns. Yes, including groupers and prawns. All high quality local fish that are export-quality, and which we've noticed are already not available in many wet markets. We have relationships with our fishermen partners, and a stable logistics network. We paid fair prices for first pick of fish right from the beginning, and respect their craft. This meant that in the beginning, we were priced higher than the competition to ensure quality, but right now, our kurau and groupers could actually be cheaper than elsewhere, and yet be better quality, since we still have first pick.

The exception is pomfrets this January, which is undergoing a shortage for any size larger than 400/500 grams. This means that everyone else does CNY bundles with smaller sized fish, while we decided to stick with something more substantial. Buying the XL pomfret really is exorbitant though, and should be avoided this season.

We've always felt communicating clearly gets us your trust. So we're not shy to let you know if prices spike. At the same time, we automatically reduce prices whenever costs go down, as we have always done.

There are items that have undergone drastic price increases since last year(later on that in a moment), but NOT ALL SEAFOOD. We'll tell you a bit about how seafood retailers obfuscate prices and confuse customers:

1. The lie that "oh inflation so ALL seafood is expensive. It's like that wan-lah."
2. Price stickiness. Once the price of something goes up it never comes down.
3. "Nowadays demand is very high after MCO so prices are high."
4. Selling cheaper alternatives at the same price. e.g positioning tasmanian salmon (cheaper, lower quality) at the same price as Norwegian ocean trout, or selling farmed grouper the same as wild grouper.
5. Oversizing. We've noticed this trend of calling items "XL", or " # # " when they're hilariously small. Especially prevalent this festive season with prawns.

We DO have certain items that spiked in price early last year (2022). These include trout and salmon, scallops, cod, hamachi, lobster and crabmeat. The common theme among these is that they're imported, and so are affected by the US dollar, but MOSTLY from price-gouging from shipping and airfreight. There's no longer a logistics bottleneck, but freight prices are the same as it was during covid, also the foreign suppliers are arch-capitalists who will never reduce prices once it's up, so as hard as it is to swallow (literally), we'd recommend eating more local fish (it's very tasty, healthy and has less of a carbon footprint)

No filter. Chinese pomfrets so fresh that it's almost black.

Did you know: Scales on Chinese pomfrets are a sign of freshness? They start peeling off within an hour of the catch landing, and generally loosen fully within a few hours. That's why most Chinese (and white pomfrets) you see being sold are "clean" and scale-less.

Pomfrets are the only fish that we prefer to leave scales on, to demonstrate how quickly we blast-freeze, and to show how careful we handle it, that the scales don't fall off due to abrasion with other pomfrets of the same catch.

Pictured here is our XL sized fish. Only 50 of the best was saved for us from a 500kg catch, destined for Hong Kong. That's all we're ordering for this season as they're so exorbitant. RM198 each, but a better deal if bought together with our CNY set. Get more savings. Alternatively we recommend taking the "large" size RM95. CNY Sets 2023: Higher total price than last year, but more items in the bundle, and more total savings.

Happy new year everyone. Hope you've been keeping well, working out and had good end-of-the-year holidays with loved ones:)

Every CNY, we only bundle the items that go up in price as the festive season approaches. A confluence of factors have contributed to an unprecedented supply crunch this year: Shortage of processing staff along the supply chain, a weak fishing season, and the rise of the US dollar has resulted in weird inflation for CNY stuff (pomfrets, groupers, and prawns) for the first time since we've been operating.

The same as every year, we still want to provide value Our goal for every year of the CNY set is to "add one thing a year" while keeping the price the same. This included giving extra prawn trays, free upgrades for prawn sizes etc, free delivery etc. One thing every year. We're stubborn about wanting pomfrets and prawns of an adequately large size and quality, as it's Chinese New Year. Apparently what we consider "large" is already sold as " # # " by others, with a corresponding price tag.

Horrifyingly, since December,our wholesale prices are already higher than what you paid retail last year. We realised however, that most of you (70%) wanted to add-on Cod Slices with the CNY set. We struck a deal with our suppliers in Chile to get in a big order of cod, and decided to add-on cod to all sets in order to still give you a steep discount on CNY sets this year. Each set has at least RM248 worth of cod. The grouper set has about RM500 worth of cod.

As always, we're doing only a limited number of Chinese New Year sets yearly to thank everyone for their support. If you've bought last year, we've already contacted you to get priority reservations and delivery slots. If you haven't, do take a look. We're quite sure that CNY or not, you won't get the same deal elsewhere. Since prices are high, we've contracted to get fish only from this weekend, so it's super super fresh. They should be in the blast freezers by now, and arrive at our place by early next week, upon which we'll commence deliveries. This year, we will also hold stock at the same price up to one week before CNY.

p.p.s. Do sonsider the upgrade to the Argentinian Red Prawns if you need more than 1kg. We are subsidising the price of these so that they're the same price as our local meng har! Only thing is they come in 2kg packs so we can't take less. Really amazing stuff that you've got to try.

OMNOMNOMICRON PLANNING

Ugh. How we wish our projections and data models were wrong for once. No one at Flying Fish has gotten Covid so far(touch on wood) as we're ultra-conservative with our SOPs, but I think this round we might not be so lucky. We've predicted every spike and lockdown to within 2 days for the last 2 waves, so we thought we're in a good place to help the level-headed ones do some advance planning for this one.
**This is NOT medical or epidemiological advice. Listen to an expert for that. This is merely our opinion with regards to logistics, based on our internal models**

1. Lockdowns won't happen anymore. Don't be surprised if we first get minor restrictions (2 pax per table) and then Malaysia starts opening up fully by the end of March.
2. Daily case numbers will conservatively reach 70,000 (50,000 in Selangor/KL) by the first week of March.
3. Essential good shortages will happen due to a lack of manpower (both at factories and at retail outlets). Buffer one month's worth of non-perishable staples (oil, rice, grains) and household consumables (toilet paper, face masks, diapers shampoo) first, then stock in as usual. Do not panic when we run out of random stuff like pet food or even white bread. We might have to eat oats or give up your favourite handwash brand for a month but no one's gonna starve.
4. There's a more-than-likely chance that an average Malaysian gets Covid, unless you're 100% isolated (not even going out for grocery shopping). You'll probably be alright, but plan ahead for isolating, especially if you're in a multi-person household and have young children and other dependents. Discuss contingency plans with alternate caretakers, and get backup alternates. We STRONGLY advocate letting the kids in on the contingency planning, and do a dry rehearsal for minimal disruption if it happens.
5. Test constantly. If you're a normal human with empathy, we guarantee that your first worry will be for the people that you've contacted rather than for yourself. Test yourself before every meeting. We won't tell you to get boosted, because if you haven't by now, you're probably not going to care about other precautions either.
6. Start looking at flights and planning holidays for this summer. We'll probably be able to fly by then, and flights are still cheap now. Pay extra for flexi-tickets ;)

CNY Price Gouging. Is it real? (boring business story)

Yes. it's real. We hate it and refuse to do it! So we thought this would be a great time to share some ugly truths about the industry. Go get your tong of pineapple tarts before reading because it's gonna get dramatic (We know la. All you Cina fellers tell you about money all sure fascinated wan eheheheheh).

*Things to know if you wanna skip the business insights below:
1. For seafood, no matter where you buy from, actual cost increase during CNY only affects larger chinese pomfret (500g and above, and not white or black pomfret), groupers (not every year) and prawns. That's why our CNY sets only have these items. Everything else you can buy separately.
2. Our prawn supply is consistent, that means we don't increase prices for CNY.
3. We don't raise prices for CNY for other seafood too. Snappers, senangin, tenggiri, squid.... NONE OF THESE SHOULD BE MORE EXPENSIVE. Let your parents know if they're still the sort that insists on buying from the wet market. Retail prices go up, but when we source, there isn't any shortage 😏.
4. The picture shows wild-caught XL tiger prawns. We're stocking these for the first time after verifying quality, Rm62 a tray :)

Juicy (or boring) Business Insights
Our product list is seasonal, sourced very thoughtfully and handled extremely well. All things that require a ton of research and auditing work before it reaches your table.

For CNY, everyone buys seafood. We were shocked at the increase in volume the first year it happened. The idea of people actually seeking us out to buy pomfret and prawns was preposterous (Just the month earlier, we were trying to convince people to buy fish online when Lazada didn't even exist yet)! We were prepared the next year, and made a small profit off proper planning, selling 30 CNY sets :)

We've continued that tradition ever since. Every year, to thank our regulars, we do a relatively limited run. We've stuck with the same basic items (pomfret, prawns and scallops) AT THE SAME PRICE SINCE 8 YEARS AGO, and every few years we add more value to the set (better prawns, more prawns, rebates on yee sang sashimi etc). We increase the number of available sets by 50% yearly to account for word of mouth, and every year, we sell out.

Now the interesting part. How do these seafood resellers (cheap "Norwegian" salmon, patin fillets, tilapia fillets, vannamei shrimp, "dragon tiger grouper". Sound familiar?) gouge you during CNY?

Step One: Raise prices of all seafood two weeks before CNY, then warn you that the prices will go up EVEN HIGHER if you don't buy now.

Step Two: Do CNY bundles that don't really provide value by giving undersized festive items or substitutes, i.e. Chinese pomfrets below 500g, farmed "dragon tiger groupers" instead of wild groupers, farmed vannamei or tiger prawns instead of ming har.

Step Three: Include filler items to disguise the price spike. These items usually don't increase in price for CNY. Canned abalone, unprocessed fish maw, frozen lala, sliced fish for steamboat, various sauces and paste. All stuff that you can buy separately without an increase in price.

And there we go: The idea that all seafood increases in price during CNY :) It happens, but sometimes not because of the reasons you imagine. Happy CNY shopping and share your experiences with us below :)

Subang Jaya store is reopening for walk-ins. Cases have dropped below our safety threshold(1.5k daily Selangor cases), and we're doing 3 different specials. One for every week to celebrate, as promised.

This weekend, it's Giant Chinese Pomfret (Bawal Tambak 斗鲳) at 40% off. 1kg sizes. Very rare. Fresh enough that the scales are still on (normally they fall off within the hour of capture) Enough for a dinner for 8-10 people. Normal price RM165. For this weekend it's RM98 each. First 100 only.

Order one day ahead and get RM5 off you order of RM200 and above. Just call us when you arrive with car model and car plate (lalamove also applicable). This is everyday that we're open. Not just Merdeka :)

We won't be opening in-store browsing until the average cases in Selangor drop below 800 a day. Before that happens, we'll still be offering free deliveries and rebates for pickups. Most of you love that we have higher hygiene and safety protocols than needed, butttttttttt.....
..we have gotten our share of honestly mad people who are offended when we don't allow loose masks in store (AT ALL. WE DONT CARE IF YOU GIVE US 1 STAR ON GOOGLE. DON'T COME BACK).
