Please be informed that somebody is trying to raise a false alarm by spreading a dangerous rumour that I have stopped eating chicken, turkey and goat meat.

I therefore wish to state categorically that at no time did I ever attempt to stop eating chicken, turkey and goat meat nor did I ever contemplate such a dangerous idea - let alone dream about it.

These are lies fabricated by my enemies who want to tarnish my hard-earned “protein-friendly” reputation by preventing family and friends like you from offering me chicken, turkey and goat during this festive period.

I beg you all to stay calm and be vigilant and ignore the rumour. Shame these miscreants by sending me the chicken, turkey and goat you intended to send.

Please don't forget to add a bag of rice and soup ingredients.
I am investigating the source of this BLACKMAIL.

I will keep you all updated on my investigation as we approach Dec. 25.

Glad to be back on this blue street. I took a compulsory long break. Thank God who saw me through.

So I resumed with this grilled peppered chicken.

Ingredients
Chicken- 2 whole chicken
Shombe- 1 cup(blended)
Fresh Pepper-1/2 cup(blended) or as desired
Onions--4big balls
Ginger- 2 spoons (blended)
Garlic -2 spoons (blended)
Vegetable oil-1/2 cup
Palm oil-1/2 cup
Seasoning cubes-2
Rosemary-2 spoons

Procedure
1. Season and steam the chicken until soft. Remove from stock and keep the stock aside

2.fry or grill. I grilled mine till dry

3. Add equal half cup of Palm oil and heat a little. Do not bleach. Then add 1/2 cup of vegetable oil. When hot, add some onions,stir until translucent,then add your coarsely pounded or blender pepper mix. Allow to cook till dry. Stir occasionally.

4. Add your seasoning cubes, salt,blended ginger and garlic and all other spices. Add some little quantity of the stock. Taste and correct seasoning.

5. Pour in the grilled meat and stir to combine very well with the sauce. Cover to cook for about 5mins and your grilled peppered chicken is ready.
Garnish with fresh onions and serve

What will you have with this?
I had mine with red wine.

BE CAREFUL OUT THERE

So on Monday, as I was coming back from church in the evening, I saw something that made me have a rethink.

A boy of about 9-10 years old was coming towards me and and another boy of about 8 was walking beside me. I heard a very loud slap and turned to see what was going on.

It happened that the older boy was eating an egg along the road o and mistakenly, the younger boy hit his hand and the egg fell down.
When I rushed to them, he was already holding the small boy's neck so tightly and shouting "MY HUNDRED NAIRA"

Boy what is the problem? I asked. Aunty my #100 naira.He was sobbing uncontrollably and still holding the boy's neck. The small boy was standing still, confused 😕 and sorry at the same time. He could not utter any word.

When I and some few women also passing finally got the boy to narrate exactly what happened, he just pointed at an half eaten egg on the ground and shouted" he pushed it out of my hand, my #100!

Ewoo, we couldn't help laughing out because we were all initially as confused as the small boy. It was even at this point that the little boy actually uttered "sorry".

Ok, each of us gave him #100, making #300 yet my guy was still looking at the egg on the ground and sighing.

After the incident, when I got home, I began to reflect on so many things especially the economic condition of the nation. Things are now so bad that even children actually appreciate the value of money. If a child could act that way because of the value of money he thought he had lost, imagine what an adult who actually worked for that money would do.

People are really angry and aggressive these days. You need to be careful as you go about your day's activities. You don't know who is who. Don't go and be claiming right o.The little boy went with the pain of the slap he received. It could have been more.

This is bringing to your notice that there is a difference between best before date and expiry date.

Expiry date tells you the last day a product is safe for consumption


WHILE

Best before date tells you that the food is no longer in its perfect shape from that date.

It may just lose its freshness, taste, aroma or nutrients.

It does not necessarily mean that the food is no longer safe to be consumed.

How do you clean your used oil and bring back good smell and flavour 😊🍋

The latter smell is even better than the former😁

Get a whole lemon, cut into four and remove the seeds.

Heat your used oil and throw in the cut lemon pieces.

Leave them in until golden.

Scope out the floating things on top.

Sift the oil through clean muslin cloth 😜😝

Instead of watching your yam spoil in the kitchen because you're not ready to eat it that moment, here's a better way to prevent your yam from spoiling.

Peel it and cut into sizes of your choice.

Put the quantity you know you will be able to consume in each ziplock and store them in your freezer.

It can last for months in your freezer and the taste will still remain the same.

The moment you bring it out from the freezer just put it straight into your pot and put on fire. Don't allow it to defrost first.

Do it and thank me later.

HOW TO COOK MOI MOI

Ingredients
Beans- 3cups
Red bell pepper
Scotch bonnet
Onions
Crayfish
Seasoning cubes
Smoked fish or ice fish(optional)
Eggs or brisket bones
Groundnut oil
Nutmeg
Ginger(optional)
Moi moi leaves or aluminum foil

PROCEDURE
1. To peel the beans, soak it in water for about 5mins then squeeze to wash out the chaff. Continue sieving until clean. Alternatively
Use your blender to crush it after soaking. Then pour into a bowl, pour in some water and loosen with your hands. Sieve off the chaff. Continue this process until clean.
2. Pour into the blender with some onions and blend till smooth or take to the mill
3. Blend all your peppers, onions and crayfish together.
4. Put your oil in a frying pan to heat up, pour in the blended pepper mix and fry till dry. Add your seasoning cubes,salt, nutmeg, cooked fish and stock.
5. Cover to simmer for about 5mins.
6. Pour in the fried pepper mix into the blended beans in a bowl, add some chopped onions, mix till everything is well combined. Add some more water if its too thick. Correct your seasoning if necessary.
6. Portion into your moi moi pouch, leaves, stainless plates with cover or aluminum foil( your choice)
7. Break an egg and add to each before covering or sealing.
8. Arrange in a pot with boiling water and cook for 45mins to 1hr
10. Serve with pap, oats, garri or any cereal or drink of your choice. Enjoy!!!!!

OFE UKAZI NA ACHARA

This is from my Abia brethren to you.
Your event is not complete without this. Who cares about your party jollof rice?

Ingredients
Ukazi
Achara
Egusi
Osu
Crayfish
Pepper
Seasoning cubes
Beef, goat( any of choice)
Isi Okporoko( stock fish head)
Dry fish
Ofo( achi or ukpo will also do as thickner)
Palm oil

Preparations
1. Remove the hard layers of the achara till you get to the soft part, then using your hand, cut into pieces of about 2-3 cm till you reach the hard part then discard. Wash and parboil with salt and onions.
2. Grind your egusi with the osu. Divide into two depending on the portion you want to mold. Then pour the portion you want to mold into your mortar, add some onions, seasoning cubes, salt and a little hot water. Use your pestle to mix them together thoroughly until it begins to produce oil. Now use your hands to squeeze out the oil. Collect little of the mixture, roll it into a small ball, then flatten it with your palms and keep. Continue till you finish all. Then put into a pot, add some water and cook with salt, onion and seasoning cubes till it is well cooked. When you break it, there are no brown parts, all has turned white.
3. Slice your ukazi into tiny shreds.

PROCEDURE
1. Wash your meat, season and steam. When it has cooked enough, add your washed stockfish and dry fish. Allow to cook till they have softened and have produced enough stock.
2. Add the remaining grounded egusi, crayfish and pepper, when it has boiled for sometime, dissolve your ofo in the palm oil and add. Cover to boil till all the ofo dissolves and the soup thickens.
3. Now add your boiled achara and cooked egusi. After 2mins, add the washed and sliced ukazi. Cover to cook for about 7 mins more and your soup is ready.
Note: The typical ukazi soup should not be too thick like your normal egusi soup.

P:S: Abeg who knows the English name of Achara? My teacher refused to teach me this one.
