Do you know why your cakes sinks at the middle?
WHY CAKE SINKS IN THE MIDDLE
Baking is love made visible, but sometimes issues arise that makes you angry.
Here are some of the REASONS your cake sinks:
• Opening the oven door too early
• Closing the oven door too sharply
• Preheating
• Incorrect oven temperature
• Wrong measurement of ingredients
• Too much baking powder or baking soda
• Expired or non active baking powder
• Incorrect moisture levels
• Overbeating the batter in the last stage
• Batter sitting too long before baking
• Under baking the cake
• Incorrect pan size
SOLUTIONS TO THE PROBLEMS ABOVE
• Avoid opening the oven door until the cake is 85% done
• Be gentle when you close the oven door.
• Check your oven with a heat-proof oven thermometer.
• Bake with the correct oven temperature.
• Measure your ingredients carefully with a scale.
• Do not use excess baking powder uor baking soda, so that it will not rise at a point and sink
• Make sure your baking powder is still active and has not expired
• Make to use accurate wet ingredients for a particular recipe.
• When it’s time to combine the wet and dry ingredients, fold the batter until it’s just mixed, don’t over beat it.
• If your oven it small and cant contain your cakes, bake batch by batch, don’t allow batter to sit.
• Be sure your cake is baked by using a skewer or toothpick to check if it’s ready, if the skewer comes out neat then your cake is done.

SAMOSA
INGREDIENTS:
For the filling:
- 2 tablespoon Vegetable Oil
- 300 g Ground Chicken, minced
- 2 Green Chilies Slit
- 1 ½ teaspoon Ginger Garlic Paste
- ¼ teaspoon Black Salt
- ½ teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Coriander Powder
- ½ teaspoon Garam Masala [or Chicken Masala]
- Salt to Taste
- 1 Medium Onion,finely Chopped
- 1 Bunch Fresh Cilantro, washed and Finely Chopped
Others:
- Samosa Patti [12 sheets] or homemade samosa dough
- Flour and Water to create a slurry to seal the patties
- Oil to Fry
INSTRUCTIONS:
Prepare the filling:
- In a large bowl, add the ground or chopped chicken, ginger garlic paste, green chilies, and all the spices [black salt, turmeric powder, red chili powder, coriander powder, and garam masala or chicken masala].
- Mix well until you obtain a uniform mixture.
- In a frying pan, add oil, and heat up on medium heat.
- Once warm, add the spiced chicken mince and, breaking it down with a plastic or wooden ladle, cook it until it is done.
- Once the chicken is cooked and the spices separate from the oil, remove the pan from the heat and allow the delicious mixture to cool down.
- Once the chicken filling has cooled down a bit, add onion and thinly chopped cilantro [fresh coriander], and mix well.
- Add salt to taste and the filling is ready.

Sponge vanilla cake
Ingredients
1 cup cake flour
3 eggs
1/2 cup white sugar
2 Tablespoons milk
2 Tablespoons vegetable oil
1/2 tsp baking powder
1/2 tsp white vinegar
3 tsp vanilla essence
* Milk and eggs should be at room temperature. Don’t use while cold .
Instructions
1. Separate the egg whites from the egg yolks .
Add the egg whites in a large bowl, then add vinegar.
2. Beat for 2 minutes then gradually add sugar . Don’t add all the sugar at once . Add it into 4 divisions. Beat until you get a white stiff consistency. ( It takes 10-12 minutes using an electric mixer).
3. When the egg whites have formed a stiff consistency. Mix in one egg yolk at a time .Then add vanilla, oil and milk and mix .
4. Sift in flour and baking powder. Then gently fold . Use a silicone spatula or hand whisk . Don’t use an electric mixer for this stage .
5. Pour the batter (mixture) in a prepared baking pan . I used 8-inch pan but I recommend 6-inch pan.
6. Bake in a preheated oven at 160 Degrees Celsius for 35 minutes.
*Do not open the oven while the cake is not fully baked otherwise it will collapse in the middle.
No need to continue to look for what to do to make money.

Ingredients.
For about 25 balls of Puff Puff, the size in the photo above, you will need:
2 cups (250g) of Plain Flour
2 teaspoons of yeast (the one used in baking bread)
½ teaspoon ground nutmeg
½ cup granulated sugar (or to your taste)
3 pinches of salt
Lukewarm water (for mixing)
Vegetable Oil (for frying)
Directions:
-Mix salt, sugar, water, nutmeg and yeast. Set aside for 5 minutes.
-Add flour and mix.
-Let the mixture rise for approximately 1- 2 hours
-In a large, sauce pan, pour vegetable oil into a pot, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls) and place on low heat.
-Test to make sure the oil is hot enough by putting a ‘drop’ of batter into the oil. If it is not hot enough, the batter will stay at the bottom of the pot rather than rising to the top.
-Using your hands grab a little bit of mixture at time and drop in the oil.
-When the oil is hot enough, use a spoon to dish up the batter and another spoon or spatula to drop it in the oil, sort of in the shape of a ball.
-Fry for a few minutes until the bottom side is golden brown.
-Turn the ball over and fry for a few more minutes until the other side is golden brown.
-Use a large spoon or something like that to take it out of the oil. I usually place them on napkins right away to soak up some of the excess oil.
-If desired, you can roll the finished product in table sugar or powdered sugar to make it sweeter.

HOMEMADE MAYONNAISE
Ingredients
1 cup of veg.oil
Lemon 1whole
Vinegar 1/2 tablespoon
Pinch of salt for taste.
Vanilla flavour 1 spoon
½ cup of milk optional
2 raw eggs
PROCEDURE
Break and pour the egg into a bowl
Add vinegar
Add the juice from the lemon
Add salt
Add the milk(while I put milk is because it gives me more taste
Pour in the vegetable oil
Then whisk all together until it turns thick like mayonnaise
Then your mayonnaise us ready.

Recipe for a soft and rich doughnut
5cups of flour
Half cup of sugar
2tsp of vegetable oil
Hand full of fruits (soak the dried fruit in half glass of alcohol a day before the day of production)
A pinch of salt
Nutmeg
Milk or milk flavors a tsp
Yeast
Warm Water
Oil for frying.
Mix all the dry ingredients into flour
Add the oil and mix
Add warm water until you get a very soft and non stickies dough.
Mix very well, cover and allow to seat for 1hr.
After one hour, mold and fry with a low heat.

Moist Chocolate Cupcakes
Ingredients:
* 3/4 c + 2tbsp All-Purpose Flour
* 3/4 tsp Baking Powder
* 3/4 tsp Baking Soda
* 1/4 c + 2 tbsp Cocoa Powder
* 1/2 c Sugar
* Pinch of Salt
*1 pc Egg
* 1/2 c Evaporated Milk
* 1/4 c Oil
* 1/2 tsp Vanilla Extract
* 1/2 c Hot Water
Procedure:
1. Mix all the sifted dry ingredients. Set aside.
2. In another mixing bowl, combine all the wet ingredients except the hot water.
3. Make a well at the center. Add the wet mixture unto the dry ingredients gradually.
4. Mix until smooth or no lumps visible.
5. Add the hot water and mix until well blended. Do not over-mix.
6. Put the batter on the prepared cup liners.
7. Bake at pre-heated oven for 15-20 minutes (140-160 C).
8. It's done when the inserted toothpick comes out clean.
