Doughnuts recipe :
Ingredients:
* 3 cups cake flour
* 1 or 2 cups warm milk
* 1 egg
* 1 tsp salt
* 1 1/2 tsp yeast
* 65g butter
* 6 tsp sugar
Method:
1) Make a soft dough with all your ingredients.
2) Knead the dough for 10-15 mins and leave in a dish covered with cling film to rise for a couple of hours.
3) Roll out round till a certain thickness and cut out doughnuts with a doughnut cutter or roll out long for cream doughnuts or make small balls for jam doughnuts.
4) Let the doughnuts rise again for about an hour or two.
5) Fry on medium to high heat till golden brown.
6) *Make sure not to fry them on low heat*
Cream doughnuts:
7) Once fried leave them to cool down then cut them in half but not till the bottom and pipe in fresh wiped cream and decorate with a glazed cherry and a sprinkle of icing sugar.
Sugar doughnuts:
Mix sugar & cinnamon powder
Toss in the sugar mix as soon as you remove them from the oil.
Glazed doughnuts:
9) Mix icing sugar and water together & few drops of vanilla essence or food colour.
10) Dip half of the cooled doughnut in glaze and decorate with 100 n 1000s.
Jam doughnuts:
11) Roll in the above sugar mix as soon as you fry them and make a whole at the bottom and fill with jam.
Coffee doughnuts:
12) Mix icing sugar, butter, coffee and chocolate together and dip half of the cooled doughnut and drizzle with white chocolate.
BUTTER COOKIES
Ingredients:
200 grams pomade butter (blend at room temperature)
120 grams of sugar
280 grams of wheat flour
1 teaspoon vanilla essence
Preparation:
1. In a bowl start by mixing the butter with the sugar. Remember that butter must be at room temperature in order to work well with it. We blend in pretty well.
2. Once mixed, add in the teaspoon of vanilla essence.
3. We continue with the sifted flour. We run the flour through a sinker before putting it into the bowl. We blend in pretty well.
4. Now it's time to shape them up. The easiest thing is to make a roll as you see below with the help of paper film and put it in the fridge for 1 hour or so. From there on, we'll be "cutting slices" of more or less 1 cm and baking them.
5. Put them in a cut oven tray and bake them at 180° for about 11-12 minutes. The moment we see the edges starting to gold we take them out. If you see that they are soft don't leave them anymore because I once made that mistake, when they cool they harden. So don't worry if you touch one and see it soft .
Buns
Flour 2cups
Baking powder 1/2tbsp
Nutmeg 1/8 tsp
Milk flavor 1/2 tbspn
Sugar 4-5tbsp
Butter 1tbsp
Egg 1small(optional, ignore if you don't want it soft)
Water 1cup(check your consistency)
Procedures
Step1: pour your flour in a bowl
Step2: add baking powder, nutmeg, milk flavour and sugar. Then mix
Step3: add butter in and coarse with your hand
Step4: Break your egg in another bowl, whisk for a while and pour in your flour mixture
Step5: Add 1cup of water(cold water preferably). If you want it crunchy, knead for a while at this stage and fry
Step 6: (if you want it soft, add little more water and fry
Puff-Puff
Flour - 2 Cups(250g)
Sugar - 1/3cup (75g)
Nutmeg powder - 1 tsp
Milk Powder - 1 & 1/2 tbsp
Salt - 1/8 tsp
Instant Yeast - 1&1/2 tbsp
Lukewarm water - 1 cup( add water gradually to control consistency)
Procedures:
Step 1 :Sieve flour in a dry clean bowl, and add sugar , milk , salt , nutmeg and yeast .
Step 2 : Mix till it’s well combined.
Step 3 : Add water gradually and mix till it’s lumps free .
Step 4 : Cover with a clean kitchen towel or cling film ( cover with anything that won’t allow air into it) .
Step 5 : place it in a warm place to proof for About 45mins - 1 hr
Step 6 : It will double in size after proofing, then deflate it by mixing it again, scoop with your hand and deep fry in a hot oil .

How to make Fish Roll.
Ingredients:
1. Flour - 3cups
2. Butter - 3table spoon.
3. Baking powder - half a tablespoon
4. Milk Flavour - to your taste.
5. Curry / Thyme.
6. Ice fish.
7. Seasoning
8. Onion
9. Water
10. Fresh egg.
11. 2Tbsps of sugar
Preparation:-
* Wash and boil fish with seasoning, onion, curry and thyme.
* Remove the bone from the fish and pieces with your hand then set it aside.
* Place pot on fire, add a little oil or butter, and allow to heat then add your pieced fish and fry.
* Sieve your flour in a bowl, add your baking powder, sugar, milk flavour, nutmeg, and butter then mix with your hands, add water bit by bit till it's thick.
* Place your mixture on a rolling board knead, then roll flat and cut, add your filling(fish) and roll inward to close.
* Place your fish roll in an oven tray then rub with the fresh egg(egg wash) place them in the oven and bake. Or fry them with groundnut oil if there's no oven.
