-‘Pappa al Pomodoro’ (typical tuscan recipe ‘made with tomatoes sauce, bread and basil ) with fresh Burrata cheese from Puglia and crunchy Carasau bread from Sardinia
-Homemade Tonnarelli ‘Cacio e Pepe’ with fresh black truffle from Umbria
-Homemade Pistacchio Semifreddo with extra Virgin oil
🍷🍷Outstanding wine tasting lunch yesterday lighted up by the prestigious ‘Nebbiolo of the Alps’ from Valtellina ( locally called ‘Chiavennasca’ ).

Pinot Noir in purity aged in the solera method and refermented with indigenous yeasts. 36 months in the bottle, disgorged with no dosage. Golden yellow color, it smells of ripe yellow fruit, butter and honey, with the beautiful oxidative notes typical of wines aged in the solera method. This is the 9.19 edition, consisting of the vintages from 2009 to 2019, and disgorged September 2022

When you think of Xinomavro, Naoussa comes to mind almost automatically, and the next thought is Apostolos Thymiopoulos. He radically altered the Xinomavro winemaking profile and style, creating the so-called "modern" school where fruit and finesse dominate. Naoussa Alta 2021 walks along the same path and teaches lessons of finesse and balance. While it has a medium to light body, it has incredible fruit condensation and juicy, silky tannins.

Andrea and Carlo Franchetti are 2 of Italy’s most fascinating winemakers, bringing their intuitive and poetic worldview to the way they make tgeir wines.
🔹Andrea Franchetti worked with two very different vineyard projects. Franchetti created his first estate Tenuta di Trinoro from scratch, on rough farm and woodland in the far-flung reaches of southwest Tuscany. Though a significant challenge, this was equaled by his endeavor on the slopes of Mt. Etna, which involved the renaissance of reclaimed formerly abandoned terraces of vines upon Sicily’s live volcano.
Both sites are extraordinary, complex, and poles apart in terms of terroir. From both his Tuscan and Sicilian estates, Franchetti has produced a portfolio of wines that is rich and diverse. Each wine expresses the characteristics of the vintage, the particulars of the locations, and the fullest potential of the varieties.
🔹High up in the hills above the town of San Casciano dei Bagni, at 650m of altitude, Carlo Franchetti found a small vineyard of pinot noir and from there began ‘the Sancaba project’ , a wine making project that expresses the elegance of the varietal together with the character of his terroir
